Handle the smoker ox with care. The cover ecomes extremely hot

in the vicinity of this or any other appliance.
2. Do not store any propane/ utane (G31-G30) cylinder
(that is not connected for use) in the vicinity of this or any other
appliance.

TO PROTECT AGAINST ELECTRIC SHOCK

• Your unit should be properly installed and onne ted to the gas for
whi h it was designed. Do not use har oal, wood hips, or other
material in your grill. The smoker tray is the only area designed to
hold wood hips or other smoke flavor enhan ers.
• Have the te hni ian show you the lo ation of the gas shut-off valve
so you an shut off the gas supply in an emergen y. If you smell
gas, the onne tions are not properly sealed or you may have a
hole in the gas supply pipe or hose. Determining where the gas
leak is should be left to a qualified te hni ian. Warranty servi e
must be performed by an authorized servi e agen y.
• Children should not be left alone or unattended in an area where
the gas grill is being used. Never allow hildren to sit, stand or play
on or around the grill at any time. Do not store items of interest to
hildren around the grill. Never allow hildren to rawl inside the
art or masonry en losure.
• Use a overed hand when opening the hood and do so slowly to
allow heat and steam to es ape. To avoid burns when ooking, use
long handled BBQ tools. Never lean over an open grill.
• Use sturdy, properly insulated gloves or potholders. Dish towels or
other substitutes an be ome entangled, ausing burns. Use dry
potholders; wet potholders reate steam and ause burns. Keep
potholders away from open flames when lifting or moving utensils.
Do not tou h portions of the grill ra k or burner grate with
potholders until the hot surfa es have ooled.
• Only ertain types of glass, heat-proof glass erami , earthenware,
or other glazed utensils are suitable for grill use. These types of
materials may break with sudden temperature hanges. Use only on
low or medium heat settings.
• Sele t the orre t pan size for the burner. Be sure the pan is large
enough to avoid boilovers or spillovers. This will save leaning, and
prevent a umulations of food, heavy splattering, or spillovers that
an at h fire.
•NEVER leave the grill unattended. High flames and fatty meats will
promote flare ups.

• Spiders and inse ts an nest in the burners of the grill and blo k the
gas and air flow to the burner ports. This may ause a fire from
behind the manifold over. Inspe t and lean the burners
periodi ally.
• Keep the ventilation openings at the rear of the art and ylinder
en losure free and lear to allow proper flow of air. Do not obstru t
the flow of ombustion and ventilation air.
• Clothing fires are potential hazards. Do not wear long flowing
sleeves around the grill. They are easily aught on pan handles or
ignited by burners and are generally in the way. Highly flammable
lothing—espe ially syntheti fabri s—should not be worn while
ooking.
•DO NOT heat any unopened glass or metal ontainers on the grill.
Pressure may build up and ause the ontainer to burst, resulting in
serious personal harm or damage to the grill.
•DO NOT move the applian e during use.
• Be sure all ontrols are turned off and the grill is ool before using
any type of aerosol leaner on or around the grill. The hemi al that
produ es the spraying a tion ould, in the presen e of heat, ignite
or ause metal parts to orrode.
•DO NOT remove the plasti over on the rotisserie motor swit h
due to safety onsiderations.
• If the following instru tions are not followed exa tly, a fire ausing
death or serious injury may o ur.
o Do not store a spare gas ylinder under or near this applian e.
o Never fill the ylinder beyond 80 per ent full.

• When using the grill, do not tou h the grill grates, open burner
grates, or immediate surrounding areas. These surfa es be ome
extremely hot and ould ause burns. Be sure all ontrols are turned
off and the unit has ooled before tou hing or leaning any
surfa es.
•DO NOT use aluminum foil to line drip pans or grill ra ks. This an
upset ombustion air flow or trap ex essive heat in the ontrol area,
resulting in melted knobs.
• The handle of your ooking utensil should be positioned so that it
does not extend over adja ent surfa e burners or interfere with
losing the anopy. This will minimize burns, ignition of flammable
materials, and possible spillage. Let hot pans ool in a safe pla e
out of hildren’s rea h.
•NEVER grill without the drip tray in pla e. Make sure it is pushed all
the way to the ba k—in proper position—to at h the drippings.
Let the grease ool before attempting to remove for leaning or
disposal. Do not allow large amounts of grease to a umulate in the
drip tray as it an at h on fire.
• Before storing, make sure the gas grill is ool. The gas must be
turned off at the supply tank, removed, and stored outside in a
well-ventilated area out of the rea h of hildren.
• Keep all ele tri ords away from heated areas of the grill.
• When ooking in windy onditions, provide a wind break. Lo ate
the unit with proper learan e from ombustible surfa es.

Prior to turning on the gas, inspe t the gas supply tubing or hose. Look
for eviden e of abrasion, uts, wear and tear, or other damage whi h
ould require repla ement prior to use. Make sure all burner ontrol knobs
are off. Do not attempt to light the burners if the smell of gas is present.
Che k the onne tion with a soap and water solution after atta hing the
hose. Make sure there is gas in the tank and the tank is upright.

Using Grill with Outdoor Approved Hoods
• Outdoor approved hood models should be installed in a overed yet nonen losed
(well ventilated) area. Outdoor hoods aid greatly in smoke and odor removal, but
should not be expe ted to eliminate entirely. They should also be prote ted from
natural elements (su h as rain) as mu h as possible.
• ALWAYS turn the outdoor hood to the “HIGH” position before lighting the grill.
• Keep the grill anopy losed as mu h as possible when ooking so smoke is
exhausted out the ba k of the grill. This allows optimum performan e of the hood.
• During breezy onditions, the performan e of the outdoor hood may be
ompromised.

CAUTION
Wait at least five minutes efore relighting a hot grill to allow any
accumulated gas to dissipate. Keep a spray ottle of soapy water near the
gas supply valve and check the connections for gas leaks efore each use.

Lighting Grill Burners with Flash Tubes
Pla e the lit mat h through the grid next to the flash tube of the
burner being lit. Keep your fa e as far away from the grill as possible.
Make sure the mat h is adja ent to the flash tube. Push and turn the
ontrol knob until the “HIGH” position on the knob aligns with the
indi ator line on the ontrol panel. Make sure you are turning the
ontrol knob that orresponds with the burner being lit. I the burner
does not light in 4 seconds, turn the knob to “OFF,” wait ive
minutes, and try again. If the burner will not light after several
attempts, see the Troubleshooting se tion.
Lighting TruSear™ In rared Burner (I Applicable)
Before lighting the burner, remove the stainless steel over. Push in
and turn the TruSear™ infrared ontrol knob until the “HIGH” position
on the knob aligns with the indi ator line on the ontrol panel. On e
lit, turn the ontrol knob to the desired setting. If the burner does not
light within 4 se onds, release and turn the ontrol knob to “OFF.”
Wait 5 minutes for any a umulated gas to dissipate and try again.
After several failed attempts, the burner may be lit by turning the
ontrol knob to “HIGH” and dropping a mat h on the fa e of the
burner. If the burner does not immediately ignite, turn the knob to
“OFF”, wait 5 minutes and try again.
Lighting the Grill Burners (300 and 500 Series Models)
Make sure the unit is plugged into a properly grounded re epta le.
Turn the appropriate ontrol knob ounter lo kwise to any position.
This ontrol is both a gas valve and an ele tri swit h. Burners will
ignite at any “ON” position with the automati re-ignition system. If
the flame goes out for any reason, the burners will automati ally
re-ignite if the gas is still flowing. When gas is permitted to flow to the
burners, the ele tri igniters start sparking. On all surfa e igniters you
should hear a li king sound. If you do not, turn off the ontrol and
he k that the unit is plugged in and that the fuse or ir uit breaker is
not blown or tripped.
Within a few moments, enough gas will have traveled to the burner to
be able to light. When the burner lights, turn the burner ontrol to any
position to adjust the flame size. I the burner does not light in our
seconds, turn the knob to “OFF” and wait 5 minutes be ore trying
again. This will allow a umulated gas to dissipate. After several failed
attempts the burner an be lit with a paper book mat h using the flash
tubes.

100 Series Models
When lighting a burner, always pay close attention to what you are
doing. Be certain you are pressing the battery ignition button
corresponding to the burner you are lighting.

Open the hood or remove overs. Push and turn the ontrol knob until
the “HIGH” position on the knob aligns with the indi ator line on the
ontrol panel. Press the electronic ignition button corresponding to
the burner being lit. You will hear a li king sound. Turn the ontrol
knob to the desired setting. I the burner does not light in 4
seconds, turn the knob to “OFF” and wait 5 minutes be ore trying
again. This will allow a umulated gas to dissipate. After several failed
attempts the burner an be lit with a paper book mat h using the flash
tubes. If you have just attempted to light the burner with the ignitor,
allow 5 minutes for any a umulated gas to dissipate.

Be ore You Begin
• The first time you use the grill, turn the ontrol knob to “HIGH” and
preheat ra ks for an additional 15–20 minutes. This allows the
por elain grates to be “seasoned.”
• Before ea h use, turn the ontrol knob to “HIGH” and preheat for
5 –7 minutes.
• Che k to be ertain the drip tray is in pla e.
• Light the grill burners using the lighting instru tions.
• Pla e the food on the grill and ook to the desired doneness.
Adjust heat setting, if ne essary. The ontrol knob may be set to
any position between “HIGH” and “LOW.”
• Allow grill to ool before leaning. (Drip tray should be leaned
after ea h use.)

Your outdoor grill is equipped with a thermometer on the anopy. The
thermometer is designed to aide in the preheating of the grill and
losed anopy grilling. The estimated ooking temperatures with the
anopy losed are:

If you have just attempted to light the burner with the ignitor, allow

adja ent to the flash tube. Push and turn the ontrol knob until the
“HIGH” position on the knob aligns with the indi ator line on the
ontrol panel. Make sure you are turning the ontrol knob that
orresponds with the burner being lit. I the burner does not light in
our seconds, turn the knob to “OFF,” wait 5 minutes, and try
again. If the burner will not light after several attempts, see the
Troubleshooting se tion.
Lighting In rared Rotisserie Burner
The lo ation of the infrared burner makes it more sus eptible to strong
wind onditions—more so than the prote ted grill burners. For this
reason you should avoid using it during windy onditions.
Open the anopy. Push in and turn the rotisserie ontrol knob until the
“HIGH” position on the knob aligns with the indi ator line on the
ontrol panel and ontinue to hold in the knob. Press the ele troni
ignition button whi h orresponds to the rotisserie ontrol knob. You
will hear a li king sound. After the burner lights, hold the rotisserie
ontrol knob in about 5 se onds longer or until the burner remains lit.
On e lit, turn the ontrol knob to the desired setting. If the burner
does not light within 4 se onds, release and turn the ontrol knob to
“OFF”. Wait 5 minutes or any accumulated gas to dissipate. If the
burner does not light after several attempts, then the burner an be lit
by holding a lit mat h to the burner (with the ontrol knob pushed in
at the light position). Push and turn the ontrol knob until the “HIGH”
position on the knob aligns with the indi ator line on the ontrol panel.
Make sure you are turning the ontrol knob that orresponds with the
burner being lit. If relighting a hot burner, wait 5 minutes. Never leave
the rotisserie ontrol knob at “ON” if rotisserie is not in use.

Grilling an be either an open or losed anopy pro ess. Open anopy
grilling is ex ellent for foods requiring qui k searing like steaks,
burgers, hops, and hot dogs. Closed anopy grilling is similar to
roasting in an oven. Food is ooked by heat refle tion from the over
as well as heat from the burners below.
• When grilling hi ken, roasts, well-done steaks or hops, and thi k
pie es of meat, sear on “HIGH.” Then redu e the heat setting to
prevent ex essive flareup. This will allow the food to ook through
without burning on the outside.
• When grilling large pie es of meat, use a meat thermometer to
ensure that meats are either rare, medium or well ooked.
• After steaks, hops, or hamburgers have been allowed to sear for
approximately 1 minute, you might want to slide a spatula under
the meat and turn it approximately 90° so that a waffle pattern will
be seared onto the food.
• Use a metal spatula or tongs instead of a fork to turn the meat. A
fork will pun ture the meat, allowing jui es to es ape.
• Turn the meat over only on e. Jui es are lost when steaks, hops, or
hamburgers are turned several times. The best time to turn the
meat is after the jui es have begun to bubble to the surfa e.
• To test for doneness, make a small slash in the enter of the meat,
not a ross the edge. This will prevent loss of jui es.
• O asionally there may be flare-ups or flames above the grill due to
drops of fat falling onto the erami briquette trays. It is normal to
have some flare-up during grilling. If ne essary, use a long spatula
to move food to another area until the flames subside.

TruSear™ In rared Grilling Tips
Infrared grilling produ es intense heat whi h qui kly sears the meat.
Searing lo ks in flavor and jui es while allowing the outer surfa e to
absorb smoke and food aroma that is produ ed as grease and
drippings are vaporized by the burner. The result is a risp, flavorful
outside with a tender, jui y inside. As a general rule, foods will ook in
about half the time they would take on an ordinary grill.
• Preheat the grill.
• Ensure that meat is fully thawed and that all ex ess fat is trimmed
away prior to grilling.
• Leave the burner set on “HIGH” when pla ing food on the grill to
sear.
• For thi ker uts of meats, adjust burner to a lower setting and
ontinue ooking until desired doneness is rea hed.

covered with the provided tainle teel cover for protection from

The rotisserie burner is an infrared burner whi h provides intense
searing radiant heat. Preferred by professional hefs over other
methods, this intense heat is great for searing in the natural jui es and
nutrients found in quality uts of meat. On e lit, the rotisserie burner
will rea h ooking temperatures in about 1 minute. The red glow will
even out in about 5 minutes.
To install the rotisserie motor, align the drive shaft on the motor with
the gear box on the side of the grill. Tighten the thumb s rews on the
motor into the mounting bra kets on the grill frame. The skewer for
the rotisserie is assembled into the gear box assembly by pla ing the
pointed end into the gear box and resting the rounded end on the
wheels on the left side of the grill.

Wood Chip Use in Smoker Box
There are many wood hips available and sele tion is based
on personal taste. The most ommon hips used are mesquite
or hi kory. Always soak the hips in water prior to putting
them into the box. Use the “HIGH” position to start the hips
smoking, then redu e the heat to a lower level to prevent
them from drying out and flaming. If the wood hips do flame
up, add a small amount of water to extinguish the flame. Use
aution when adding water to a hot box to avoid steam
burns. This tray may also be filled with water to produ e
steam. Whether smoking or steaming, the grill should remain
losed as mu h as possible to maximize the effe t.
During extended roasting periods, it is normal to add fresh
wood hips and water to the box several times. Limit the
amount of times the anopy is opened—ea h peek adds
about 15 minutes to the ooking time.

Any pie e of equipment works better and lasts longer when maintained
properly and kept lean. Grilling equipment is no ex eption. Your grill
must be kept lean and maintained properly. Viking highly re ommends
leaning the grill after ea h use. A Viking grill over (sold separately)
should also be strongly onsidered in order to prote t your grill from the
elements.
Stainless Steel Maintenance in Outdoor Environments
Viking outdoor grills are made of the finest grades of stainless steel.
However, the stainless steel must be maintained properly over the life of
the unit to preserve its elegant appearan e and optimal performan e.
Below are some helpful tips:
• Wipe down any exterior grease spatters after ea h use of the grill.
• Regularly wipe down the exterior of the grill with a mi ro-fiber loth.
• Use a designated stainless steel leaner to lean and polish exterior
surfa es. Some household leaners are not suitable for stainless steel.
• Never pla e a over on a damp grill. Make sure the grill is ompletely
dry before overing.
• Under ertain onditions, su h as salty environments near a oastline,
or around pools with high hlorine ontent, small amounts of surfa e
rust may a umulate on stainless steel parts. Small amounts of surfa e
rust an easily be removed by applying Soft S rub® Gel to a damp
sponge and wiping with the stainless steel grain. When dealing with
hard to remove stains, use a non-metalli abrasive pad (A S ot h Brite
pad for example) along with your stainless steel leaner, and s rub in
the grain dire tion of the stainless. It is important to wipe with the
grain for the most effi ient removal of staining.
• In extreme ases, it may be benefi ial to apply a rust inhibitor
oating to the exterior of the grill. Consult your lo al ontra tor
before applying.
IMPORTANT: These tips will help you a hieve the maximum life span of
your grill. It is important to understand that stainless steel generally has a
higher resistan e to the effe ts of environmental exposure, but it will still
be affe ted by the elements. Stainless steel has the potential to degrade
just like all other ar hite tural metals. The Limited Lifetime Warranty
(page 33) overs rust through of stainless steel parts. It does not over
o asional surfa e rust and staining. It is important to follow the steps
detailed above to guard against these natural o urren es and address
them promptly should they arise.

To load the skewer, slide one of the rotisserie forks (prongs fa ing away
from the end) onto the skewer. Push the skewer through the enter of the
food, then slide the se ond rotisserie fork (prongs toward the food) onto
the skewer. Center the produ t to be ooked on the skewer then push
the forks firmly toward the food. Tighten the wing nuts with pliers. It may
also be ne essary to wrap the food with but her’s string to se ure loose
portions. Never use nylon or plasti string. On e the food is se ure, insert
the skewer into the motor. To turn on rotisserie motor, flip the ON/OFF
swit h lo ated on the rotisserie motor assembly.
If needed, remove the grill grates. Pla e the basting pan beneath the
food. Keep anopy losed while using the rotisserie. Ea h peek adds
about 15 minutes to the ooking time. A meat thermometer should be
used when ooking large pie es of meat to ensure that the meats are
rare, medium, and well ooked.

Porcelain Grates
The por elain grill grates are easily leaned immediately after ooking is
omplete and before turning off the flame. Wearing a barbe ue mitt to
prote t your hand from heat, use a stainless or brass bristle barbe ue
brush to s rub the por elain burner grid. Dip the brush frequently in a
bowl of water. Steam is reated as the water onta ts the hot grate. The
steam assists the leaning pro ess by softening the food parti les.
For thorough leaning of the grates allow to ool, then soak 15 to 30
minutes in a hot water and detergent solution. After soaking, s rub with a
teflon s ouring pad. DO NOT use a steel wool pad or abrasive leaners.
They ould damage the por elain finish.
Briquette Trays
IMPORTANT:It is critical that the briquette trays not be allowed to
develop excess build-up o debris over an extended period.
Otherwise lare-up may occur.
Flare-ups o ur when meat is barbe ued, and its fat and jui es fall upon
the hot surfa es. To ontrol flare-ups, it is ABSOLUTELY ESSENTIAL to
trim away ex ess fat from meat and poultry before grilling. Use ooking
sau es and marinades sparingly, and try to avoid very heap uts of meat
or meat produ ts as these tend to have a high fat and water ontent.
Also, the HI setting should primarily be used when lighting the grill and
pre-heating it for grilling.
The briquettes normally burn lean during use, but it may be ne essary
to lean the briquette trays more thoroughly from time to time. After
allowing the grill to ool, remove the grill grates, and then remove the
briquette trays by lifting the front edge and pulling toward you. Set the
trays upside-down on their mounting points, and operate the grill burners
on high for 20-30 minutes. This will allow the trays to burn lean. If it
be omes ne essary to repla e any or all the briquettes, repla ements are
available from your dealer.

Replacing Briquettes
The erami briquettes are se ured to the trays with a stainless steel
over shield whi h is s rewed in pla e. To insert a briquette into the tray,
it is ne essary to remove the shield from the top of the tray. This is done
by removing the four retaining s rews for the shield lo ated on top. On e
removed, the briquettes will easily slide in and out. On e the new
briquettes are set in pla e, repla e the shield and its s rews.
Cleaning Your Grill Burners
Before removing the grates and burners, make sure the gas
supply is off and the knobs are in the “OFF” position. To
disassemble the grill for thorough leaning, remove parts after
they have ooled in the following order.

On e the burners are removed, lean the exterior with a wire brush.
Clear out any logged ports with a straightened paper lip. NEVER
use a toothpi k or similar items as they may break off and log the
port. Shake out any debris through the air shutter. Use a flashlight to
inspe t the burner inlet to en-sure it is not blo ked. If obstru tions an
be seen, use a metal wire oat hanger that has been straightened
out to lean. You also may use an air hose to blow out any debris that
may remain.

and allow the burner to burn for 5 minutes. This helps eliminate any
drippings or debris that would otherwise remain on the burner,

minute burn-off time, turn the grill “OFF” and allow to ool ompletely
before attempting to lean or move. Wipe ex ess grease and food
from grill surfa es.

ONE YEAR FULL WARRANTY
Outdoor gas grills and all of their omponent parts, ex ept as detailed below*, are warranted to be free from
defe tive materials or workmanship in normal household use for a period of twelve (12) months from the date of
original retail pur hase. Viking Range Corporation, warrantor, agrees to repair or repla e, at its option, any part
whi h fails or is found to be defe tive during the warranty period.
*Painted and de orative items (in luding erami briquettes) are warranted to be free from defe tive materials or
workmanship for a period of ninety (90) days from the date of original retail pur hase. ANY DEFECTS MUST BE
REPORTED TO THE SELLING DEALER WITHIN NINETY (90) DAYS FROM DATE OF ORIGINAL RETAIL
PURCHASE. Viking Range Corporation uses the most up-to-date pro esses and best materials available to
produ e all olor finishes. However, slight olor variation may be noti ed be ause of the inherent differen es in

LIFETIME LIMITED WARRANTY

normal household use during the fifth through the useful lifetime of the grill from the date of original retail
pur hase will be repaired or repla ed, free of harge for the part itself, with the owner paying all other osts,
in luding labor.
NINETY (90) DAY RESIDENTIAL PLUS WARRANTY. This warranty applies to appli ations where use of the
produ t extends beyond normal residential use. Examples are, but not limited to, bed and breakfasts, fire
stations, private lubs, hur hes, et . This warranty ex ludes all ommer ial lo ations su h as restaurants, food
servi e lo ations and institutional food servi e lo ations.
This warranty extends to the original pur haser of the produ t warranted hereunder and to ea h transferee owner
of the produ t during the term of the warranty.
This warranty shall apply to produ ts pur hased and lo ated in the United States and Canada. Produ ts must be
pur hased in the ountry where servi e is requested. Warranty labor shall be performed by an authorized Viking
Range Corporation servi e agen y or representative. Warranty shall not apply to damage resulting from abuse,
a ident, natural disaster, loss of ele tri al power to the produ t for any reason, alteration, improper installation,
improper operation, or repair or servi e of the produ t by anyone other than an authorized Viking Range
Corporation servi e agen y or representative. This warranty does not apply to ommer ial usage. Warrantor is
not responsible for onsequential or in idental damage whether arising out of brea h of warranty, brea h of
ontra t, or otherwise. Some jurisdi tions do not allow the ex lusion or limitation of in idental or onsequential
damages, so the above limitation or ex lusion may not apply to you.
Owner shall be responsible for proper installation, providing normal are and maintenan e, providing proof of
pur hase upon request, and making the applian e reasonably a essible for servi e. If the produ t or one of its
omponent parts ontains a defe t or malfun tion during the warranty period, after a reasonable number of
attempts by the warrantor to remedy the defe ts or malfun tions, the owner is entitled to either a refund or
