with a three-prong grounding plug. It is imperative that this plug be connected into a
properly grounded three-prong receptacle. If the receptacle is not the proper
grounding type, contact an electrician. Do not remove the grounding prong from

GENERAL
INTRODUCTION
Vulcan-Hart Cook and Hold Oven Systems are
produced with quality workmanship and material.
Proper installation, usage and maintenance will result
in many years of satisfactory performance.
Before performing maintenance on the oven,
thoroughly read this manual and carefully follow all
instructions in the order given.
This manual is applicable only to models listed on
the cover page. Procedures in this manual will apply
to all models unless specified. Illustrations can be
of any model unless the illustration needs to be
model-specific.
OVEN INSTALLATION

detailed installation instructions.

SERIAL NUMBER LOCATION
The Serial Number and Model Number for the unit
are located on the Serial Data Plate, which is located
by the electrical connection.

ELECTRICAL REQUIREMENTS
The Vulcan-Hart Models VCV13 and VCV6 are
factory-wired for dual 208/240-V, 1-Ph, 60-Hz, AC
power, but may be supplied by 208/240-V, 3-Ph
50-Hz, AC power. Vulcan-Hart models VCV4 and
VCV5 are factory-wired for 120-V, 1-Ph, 60-Hz,
AC power.

COMPONENT FUNCTION
CONTROL PANEL
The control panel contains the following components,
which are explained on the following pages:
• Power ON/OFF Rocker Switch
• Roasting Temperature Thermostat
• Roasting Temperature Indicator Light (Red)
• Roasting Time Timer
• Holding Temperature Thermostat
• Holding Temperature Indicator Light (Red)
Power ON/OFF Rocker Switch
The Power ON/OFF Rocker Switch is located on the
front of the control panel. It supplies power to the
relay and energizes the Roasting Temperature
Thermostat, the Holding Temperature Thermostat
and the Roasting Time Timer.
Roasting Temperature Thermostat
The Roasting Temperature Thermostat is a manually
operated rheostat temperature selector that supplies
power to the timer and turns on the Roasting
Temperature Indicator Light. A capillary tube-type
temperature probe in the oven compartment maintains
the desired temperature for heating the oven during
the roasting cycle. The temperature range is from
100°F (38°C) to 250°F (121°C).
Roasting Temperature Indicator Light
When illuminated, the Roasting Temperature
Indicator Light indicates that the Roasting Time Timer
is set to a value greater than 0 and that the Power
ON/OFF Rocker Switch is in the ON position.
Roasting Time Timer
The Roasting Time Timer is a manually operated
timer and is used to set the desired roasting time
between 0 and 12 hours. When the timer is set
above 0, it energizes the Roasting Temperature
Indicator Light and de-energizes the Holding
Temperature Thermostat and Holding Temperature
Indicator Light.
Holding Temperature Thermostat
The Holding Temperature Thermostat is a
manually operated thermostat used to set the
desired holding temperature between 100°F (38°C)
and 200°F (93°C). A capillary tube-type
temperature probe in each oven compartment
maintains the desired temperature for heating the
oven during the holding cycle. When the Roasting
Time Timer reaches 0, power is supplied to the
Holding Temperature Thermostat and the Holding
Temperature Indicator Light will illuminate. The
oven will maintain the temperature indicated by the
Holding Temperature Thermostat.
Holding Temperature Indicator Light
During normal operation, as soon as power is
supplied to the oven when the Power ON/OFF Rocker
Switch is ON, the Holding Temperature Indicator Light
will illuminate. When the Roasting Time Timer is
energized, power is removed from the Holding
Temperature Indicator Light.
Cooling Fan(s)
When the oven temperature reaches approximately
120°F (49°C), the Cooling Fan Temperature Sensor
will close the circuit. The Cooling Fan(s) will run as
long as necessary to provide adequate cooling for
the electrical controls in the Control Power Module.
CONTROL POWER MODULE
Relay Contactor
The Relay Contactor is connected to the terminal
block and is energized by the Power ON/OFF Rocker
Switch. The relay contactor energizes the Heating
Element, the Roasting Temperature Thermostat, the
Holding Temperature Thermostat and the Roasting
Time Timer.
Terminal Block
The Terminal Block connects the external power
source to the internal oven components.
Blower Motor
The Blower Motor is energized by the Power ON/OFF
Rocker Switch and distributes low-pressure airflow to
the oven to evenly circulate heat.
Cooling Fan Temperature Sensor
The Cooling Fan Temperature Sensor is energized
by the Power ON/OFF Rocker Switch and monitors
the interior temperature of the Control Power
Module. When the oven temperature reaches
approximately 120°F (49°C), the sensor will close.
The Cooling Fan(s) will run as long as necessary to
protect the Control Power Module electrical
components from excessive heat. The sensor will
automatically open once the temperature is below
120ºF (49ºC).

High-Limit Temperature Sensor
The High-Limit Temperature Sensor is connected to
the Terminal block. The High-Limit Temperature
Sensor monitors the output temperature of the
Heating Element. If the output temperature of the
Heating Element exceeds 375°F (191°C), the
High-Limit Temperature Sensor will open and
de-energize the Heating Element. The High-Limit
Sensor must be manually reset before the oven can
be operated.
Heating Element Access Panel
Models VCV4/VCV5
This access panel allows access to the Heating
Element’s two (2) lead wire connections and two (2)
hex nuts.
Heating Element
The Heating Elements (one in each compartment)
supply heat to the oven(s). They are connected to
the rear of the Control Power Module. Each Heating
Element is energized by the Roasting Time Timer,
the Roasting Time Thermostat and the Relay
Contactor.
OVEN COMPARTMENT
Temperature Probe Holder
Two (2) Temperature Probe Holders support the
Roasting and Holding Temperature Thermostat
capillary tube probes of each oven compartment.
The Temperature Probe Holders are insulated to
reduce temperature fluctuations and protect the
probe from vibration.
Roasting Temperature Thermostat Probe
The Roasting Temperature Thermostat Probe is a
capillary tube probe that is permanently attached to
the Roasting Temperature Thermostat. It is located
on the underside of the Control Power Module in the
oven compartment. The Roasting Temperature
Thermostat probe monitors the oven temperature to
maintain the desired roasting temperature between
100°F (38°C) and 250°F (121°C).
Holding Temperature Thermostat Probe(s)
The Holding Temperature Thermostat Probe for each
oven compartment is a capillary tube probe that is
permanently attached to the Holding Temperature
Thermostat. The probe(s) are located on the
underside of each Control Power Module in the oven
compartment. The Holding Temperature Thermostat
probe(s) monitor the oven temperature to maintain
the desired holding temperature between 100°F
(38°C) and 200°F (93°C).
Oven Door
Each oven compartment door is secured by a
magnetic-action, key-lock door latch. During cooking
operation, the closed door is magnetically held in
place. A rubber door gasket seals and insulates the
oven compartment.
Oven Door Gasket
Model VCV13/VCV6
The oven door is sealed with a replaceable rubber
gasket which is sold by the foot. The gasket contains
a bulbed end that is pressed into the ‘J’ channel
groove in the oven door. The corners are sealed with
a Vulcan-Hart and NSF-approved sealant to close
the voids.
Models VCV4/VCV5
The oven door is sealed with a replaceable gasket.
The gasket fits between a stainless steel plate and
the oven door and is held in place with pop rivets.
Air Tunnel
The Air Tunnel is mounted to the backside of the
Control Power Module. It is held in place by two (2)
shoulder bolts, which are attached to the interior
oven rear panel. It provides protection for the
Heating Element and allows heat to circulate within
the oven compartment.

Disconnect the
electrical power to the machine
and follow LOCKOUT/TAGOUT
PROCEDURES.
1. Perform the Lockout/Tagout Procedure.
2. Remove the four (2) screws securing the
Control Power Module to the oven base.
3. Pull the Control Power Module about half way out.
4. Tag and disconnect the three (3) power cord
electrical leads from the terminal block.

Control Power Module Removal
REMOVAL AND REPLACEMENT
Disconnect the
electrical power to the machine
and follow LOCKOUT/TAGOUT
PROCEDURES.
LOCKOUT/TAGOUT
PROCEDURES
Lockout/Tagout is used to protect personnel working
on an electrical appliance. Before performing any type
of maintenance or service on an electrically operated
appliance, follow these steps:
1. In electrical box, place unit’s circuit breaker into
OFF position.
2. Place a lock or other device on electrical box
cover to prevent someone from placing circuit
breaker ON.
3. Place a tag on electrical box cover to indicate
that unit has been disconnected for service and
power should not be restored until tag is removed
by maintenance personnel.
4. Disconnect unit power cord from electrical outlet.
5. Place a tag on cord to indicate that oven has
been disconnected for service and power should
not be restored until tag is removed by
maintenance personnel.
COVERS AND PANELS
Top Cover Panel Removal – Models VCV4/VCV5
The oven base Top Cover Panel must be removed to
access the Control Power Module.
Disconnect the
electrical power to the machine
and follow LOCKOUT/TAGOUT
PROCEDURES.
1. Perform the Lockout/Tagout Procedure.
2. Locate and remove the two (2) screws from the
oven left hand side panel.
3. Locate and remove the two (2) screws from the
oven right hand side panel.
4. Locate and remove the two (2) screws from the
oven rear panel.
5. To install, reverse the above steps.

5. Remove the Control Power Module from the oven.
6. To install the new Control Power Module, reverse
the above steps.
7. Check the oven to ensure it is operating properly.
Models VCV4/VCV5
Disconnect the
electrical power to the machine
and follow LOCKOUT/TAGOUT
PROCEDURES.
1. Perform the Lockout/Tagout Procedure.
2.
Perform the Top Cover Panel Removal Procedure.
3. Tag and disconnect the three (3) power cord
electrical leads from the terminal block.
Lift the Control Power Module straight up
to prevent damage to the Heating Element.

Control Power Module Removal
4. Lift the Control Power Module from the cabinet
base shelf straight up until the Heating Element
has cleared the cabinet base.
5. To install the new Control Power Module,
reverse the above steps.
6. Check the oven for proper operation.
Power ON/OFF Rocker Switch
Disconnect the
electrical power to the machine
and follow LOCKOUT/TAGOUT
PROCEDURES.
1. Perform the Lockout/Tagout Procedure.
2. Perform the Top Cover Panel Removal
Procedure (Models VCV4/VCV5 Only).
3. Perform the Power Control Module Removal
Procedure. (Models VCV13/VCV6 Only).
4. Tag and disconnect the four (4) wire terminals
from the Power ON/OFF Rocker Switch.
5. Using a flat-tip screwdriver, gently pry the tabs
that hold the Power ON/OFF Rocker Switch.
6. Remove the Power ON/OFF Rocker Switch.
7. To install the new Power ON/OFF Rocker Switch,
reverse the above steps.
8. Check the oven to ensure the Power ON/OFF
Rocker Switch is operating properly.

Roasting Time Timer
Disconnect the
electrical power to the machine
and follow LOCKOUT/TAGOUT
PROCEDURES.
1. Perform the Lockout/Tagout Procedure.
2. Perform the Top Cover Panel Removal
Procedure (Models VCV4/VCV5 Only).
3. Perform the Power Control Module Removal
Procedure (Models VCV13/VCV6 Only).
4. Tag and disconnect the four (4) wires from the
Timer.

5. Loosen the knob set screw and remove the timer
knob.
6. Loosen the two (2) screws on the timer
faceplate holding the Timer to the timer housing.
7. Carefully remove the Timer by pulling it straight
out from the timer housing.
8. To install the new Roasting Time Timer, reverse
the above steps.
9. Check the oven to ensure the Roasting Time
Timer is operating properly.

Disconnect the
electrical power to the machine
and follow LOCKOUT/TAGOUT
PROCEDURES.
1. Perform the Lockout/Tagout Procedure.
2. Perform the Top Cover Panel Removal
Procedure (Models VCV4/VCV5 Only).
3. Perform Control Power Module Removal
Procedure (Models VCV13/VCV6 Only).
4. Tag and disconnect the two (2) wire terminals
from the Roasting/Holding Temperature or the
Holding Temperature Thermostat.
NOTE: Prior to loosening the setscrew, turn the
Temperature Thermostat knob counterclockwise until
the knob stops.
5. Remove the Thermostat knob by loosening the
knob set screw.
6. Remove the two (2) screws securing the
Thermostat to the Control Power Module front plate.

7. Loosen the probe holder screw and remove the
capillary tube.
8. Remove sealant covering the probe access hole.
9. Re-route the probe and sensing line back through
the access hole.

10. Pull Probe free from the Control Power Module.
11. Remove the Temperature Thermostat.
NOTE: Take care to not bend or damage the new
Temperature Thermostat copper probe sensing line.
NOTE: Use only Vulcan-Hart and NSF-approved sealant.
12. To install the new Temperature Thermostat,
reverse the above steps.
13. When Temperature Thermostat knob has been
installed, turn it counterclockwise until shaft stops.
14. Loosen the set screw and reposition the white

Oven Door

Oven Door Gasket
Models VCV13/VCV6
Each oven door has replaceable door gaskets.
These gaskets are installed by inserting the gasket
end into the ‘J’ channel of the oven door(s). The
gasket material is sold by the foot. To replace the
door gaskets, proceed as follows:
1. Before removing the old oven door gaskets,
verify the replacement gaskets are of the correct
size and length.
2. Remove the old gaskets by pulling them from
the oven door ‘J’ channel. Make sure all the old
gasket material has been thoroughly removed
before installing the new door gaskets.
NOTE: A flat end screwdriver may be required to
seat the new gasket. Take care to not puncture or
damage the new gasket.
3. Install the new gaskets by starting at one end and
pressing gaskets into the oven door ‘J’ channel.
4. Repeat steps 2 and 3 until all defective gaskets
have been replaced.
NOTE: Use only Vulcan-Hart and NSF-approved sealant.
5. Seal the four corners of the door gaskets to
remove space between the gaskets.
6. Wipe away any excess sealant.
NOTE: Allow sealant to cure for at least 30 minutes
before putting the oven back in service.

Door Gasket Installation
7. When the sealant has cured, close the oven door
and check the door gaskets for leaks.
8. Turn oven on and check the door seals for leaks.
9. If leaks are detected, repeat steps 5 and 6 until
heat no longer escapes from the oven while the
oven door is closed.
Models VCV4/VCV5
The oven door has a replaceable door gasket that
is held in place with pop rivets. The gasket is
inserted between an inner stainless steel panel
and the oven door. To replace the oven door
gasket, proceed as follows:
1. Before removing the old oven door gaskets, verify
the replacement gasket is of the correct size.
2. Lift up the seal to expose the pop rivets.
3. Carefully remove the pop rivets holding the
gasket in place. Make sure all the old gasket
material has been thoroughly removed before
installing the new oven door gasket.
4. Install the new gasket by inserting the flat end
between the inner stainless steel panel and the
oven door.

5. Once the entire door seal is in place, insert a
1/8" drill bit through the existing holes and
drill a hole through the new gasket.
6. Using a pop rivet gun, install the new seal to the
oven door with pop rivets.
Electrical Fuse – Models VCV13/VCV6 Only
1. Remove the applicable fuse holder cap from
Control Panel.

SERVICE PROCEDURES AND ADJUSTMENTS
When troubleshooting, always reference the schematic
and wiring diagrams to assist in isolating the problem.
ROASTING TEMPERATURE
THERMOSTAT – ALL MODELS
Calibration Check
To determine if the Roasting Temperature
Thermostat knob has slipped on the thermostat
stem, check as follows:
1. Turn the Roasting Temperature Thermostat knob
clockwise until it stops.
2. The white arrow on the thermostat knob should
indicate 250°F (121°C).
3. If the white arrow is properly aligned, skip to
step 4. If the white arrow is not properly aligned,
perform the following steps to adjust the knob:
a) Loosen the knob set screw.
b) Rotate the knob until the white arrow
indicates 250°F (121°C).
c) Tighten the knob set screw without moving
the thermostat stem.
4. Install an accurate thermometer as close as
possible to the oven blower motor fan guard.
5. Turn the oven Power ON/OFF Rocker Switch to
ON and set the Roasting Temperature thermostat
dial to 100°F (38°C).
6. Rotate the Roasting Time Timer dial to 1 hour.
7. Allow about 20 minutes for the oven to preheat or
until the thermostat begins to cycle.
8. Compare the Roasting Temperature Thermostat
to the thermometer reading.
9. Slowly move the timer dial to the left and right to
determine if it is cycling at the same setting as
the Roasting Temperature Thermostat.
10. Compare the Roasting Temperature Thermostat
temperature to the thermometer reading.
11. If the thermostat is cycling at a temperature
different from the temperature reading on the
thermometer, recalibrate the Thermostat.
12. Refer to Calibration Procedure, below, to
calibrate the thermostat.
Calibration Procedure
1. Check calibration as described in SERVICE
PROCEDURES AND ADJUSTMENTS –
CHECK CALIBRATION OF THE ROASTING
TEMPERATURE THERMOSTAT.
2. If calibration is required, proceed as follows:
a. Loosen the thermostat knob set screw.
b. Slide the knob off the thermostat stem.
c. Determine how much difference there is
between the thermostat setting and the
thermometer reading.
NOTE: Do not allow the Roasting Temperature
Thermostat stem to move during this procedure.
NOTE: A one-quarter turn will increase or decrease
temperature by approximately 25°F (4°C).
The maximum turn of the calibration
screw is one and a half times.
d. Use a small screwdriver to turn the screw in
the center of the thermostat stem either
clockwise to increase temperature or
counterclockwise to decrease temperature.

3. After calibration has been made, allow the oven
to operate until the temperature has stabilized.
4. Recheck the temperature to determine that the
problem has been corrected.
5. If the adjustment has not altered the temperature,
the thermostat is defective and should be
replaced. If the adjustment has corrected the
problem, install the knob as follows:
a. Install the knob on the thermostat stem.
b. Rotate the knob until the white arrow
indicates 250°F (121°C).
c. Tighten the knob set screw without moving
the thermostat stem.

indicates 200°F (93°C).
c. Tighten the knob set screw without moving
the thermostat stem.
4. Place an accurate thermometer as close as
possible to the oven blower motor fan guard and
close the oven door.
5. Turn the oven Power ON/OFF Rocker Switch ON
and set the Holding Time Timer dial to 100°F
(38°C).
6. Allow about 20 minutes for the oven to preheat
