COMPONENT FUNCTION
CONTROL PANEL
The control panel contains the following components,
which are explained on the following pages:
• Power ON/OFF Rocker Switch
• Roasting Temperature Thermostat
• Roasting Temperature Indicator Light (Red)
• Roasting Time Timer
• Holding Temperature Thermostat
• Holding Temperature Indicator Light (Red)
Power ON/OFF Rocker Switch
The Power ON/OFF Rocker Switch is located on the
front of the control panel. It supplies power to the
relay and energizes the Roasting Temperature
Thermostat, the Holding Temperature Thermostat
and the Roasting Time Timer.
Roasting Temperature Thermostat
The Roasting Temperature Thermostat is a manually
operated rheostat temperature selector that supplies
power to the timer and turns on the Roasting
Temperature Indicator Light. A capillary tube-type
temperature probe in the oven compartment maintains
the desired temperature for heating the oven during
the roasting cycle. The temperature range is from
100°F (38°C) to 250°F (121°C).
Roasting Temperature Indicator Light
When illuminated, the Roasting Temperature
Indicator Light indicates that the Roasting Time Timer
is set to a value greater than 0 and that the Power
ON/OFF Rocker Switch is in the ON position.
Roasting Time Timer
The Roasting Time Timer is a manually operated
timer and is used to set the desired roasting time
between 0 and 12 hours. When the timer is set
above 0, it energizes the Roasting Temperature
Indicator Light and de-energizes the Holding
Temperature Thermostat and Holding Temperature
Indicator Light.
Holding Temperature Thermostat
The Holding Temperature Thermostat is a
manually operated thermostat used to set the
desired holding temperature between 100°F (38°C)
and 200°F (93°C). A capillary tube-type
temperature probe in each oven compartment
maintains the desired temperature for heating the
oven during the holding cycle. When the Roasting
Time Timer reaches 0, power is supplied to the
Holding Temperature Thermostat and the Holding
Temperature Indicator Light will illuminate. The
oven will maintain the temperature indicated by the
Holding Temperature Thermostat.
Holding Temperature Indicator Light
During normal operation, as soon as power is
supplied to the oven when the Power ON/OFF Rocker
Switch is ON, the Holding Temperature Indicator Light
will illuminate. When the Roasting Time Timer is
energized, power is removed from the Holding
Temperature Indicator Light.
Cooling Fan(s)
When the oven temperature reaches approximately
120°F (49°C), the Cooling Fan Temperature Sensor
will close the circuit. The Cooling Fan(s) will run as
long as necessary to provide adequate cooling for
the electrical controls in the Control Power Module.
CONTROL POWER MODULE
Relay Contactor
The Relay Contactor is connected to the terminal
block and is energized by the Power ON/OFF Rocker
Switch. The relay contactor energizes the Heating
Element, the Roasting Temperature Thermostat, the
Holding Temperature Thermostat and the Roasting
Time Timer.
Terminal Block
The Terminal Block connects the external power
source to the internal oven components.
Blower Motor
The Blower Motor is energized by the Power ON/OFF
Rocker Switch and distributes low-pressure airflow to
the oven to evenly circulate heat.
Cooling Fan Temperature Sensor
The Cooling Fan Temperature Sensor is energized
by the Power ON/OFF Rocker Switch and monitors
the interior temperature of the Control Power
Module. When the oven temperature reaches
approximately 120°F (49°C), the sensor will close.
The Cooling Fan(s) will run as long as necessary to
protect the Control Power Module electrical
components from excessive heat. The sensor will
automatically open once the temperature is below
120ºF (49ºC).
