GENERAL INFORMATION ABOUT DEEP FRYING
Oils and fats for the deep fryer
Only use “non-foaming” oils or fats, which are suitable
for deep frying. Never mix any oil or fat varieties. Exces-
sive foaming may occur.
Frying oil or liquid frying fat is recommended for use in this
deep fryer.
You may also use solid frying fat, but it must be melted in a
saucepan on the stove or melted in a water bath in an appro-
priate container before filling it onto the frying tank.
Oils and fats after use
For hygiene reasons, you should store oils and fats in
the refrigerator after cooling them down. It is best to
use a glass container for this.
Do not leave the used oil or fat in the deep fryer.
1. First of all, let the hot oil or fat cool down in the deep fryer
(do not allow the fat to solidify).
2. Line a strainer with a layer of paper towel and drain the
lukewarm oil or fat through it.
If you are mainly preparing french fries with the deep fryer and
the oil or fat is strained after each use, you can use it 10 to 12
times, but not for longer than six months.
Please always note the instructions on the packaging. Do not
mix fresh and used oil.
Replace the oil or fat if it foams during heating, develops a
strong taste or odor or if its becomes dark and viscous.
To use it again, melt the solidified fat with the glass containerin
a warm water bath before pouring the fat into the deep fryer.
General information about deep frying

17
Low-acrylamide preparation
Acrylamide is suspected of being a carcinogenic sub-
stance, which increases dramatically when heating foods
containing starch to over 347 °F (175 °C).
Therefore, for example, do not fry chips at a temperature of
more than 347 °F (175 °C). Fried food should not be served
brown, only “golden yellow”.
The correct frying temperature
The following table shows examples of which foods are
cooked at which temperature and for which duration.
If the i
n
structions on the packaging of the fried food differ from
this tab
le, please follow the instructions on the packaging.
Dry off wet foods before they are immersed in the hot frying
liquid. This avoids spraying fat while the fried food forms an
even crust and accordingly absorbs less fat.
Deep-frozen foods should always be slightly thawed and
dried off, in ord
er to remove the surface moisture.
Avoid salting and seasoning prior to deep frying: Salt promotes
the migration of water out of the inside of the surface of the
food and the formation of toxic substances.
Prior to immersing breaded foods, e.g. schnitzel, loose crumbs
should be removed from the fried food. Small pieces will other-
wise burn quickly in the frying liquid and therefore accelerate
the spoilage.
With meat or fish that isn’t breaded, no acrylamide is created, a
higher temperature setting (approx. 374 °F (190 °C)) is also ap-
propriate for this.

Every temperature controller has certain tolerances, so
that these values are only approximations.
For the precise examination of the temperature prior to actu-
ally frying, we recommend an appropriate fat/household ther-
mometer.

RESPONSIBLE DISPOSAL
At the end of its working life, do not throw this device out with
your household trash. Electrical and electronic products contain
substances that can have a detrimental effect on the environment
and human health if disposed of inappropriately. Observe any local
regulations regarding the disposal of products and dispose of the
device appropriately for recycling. Contact your local authorities for
advice on disposal/recycling facilities in your area.
Discard old oil
If the oil is clouded or if the oil starts to foam or has a foul odor,
taste, or smell, discard it. DO NOT pour oil down the sink. Oil
will cool with water in the drain and congeal causing backups
in your sink, septic system, or public sewer system. Oil can also
be damaging to the environment. Oil can spread very thinly
across water over a very large area changing the chemistry
and health of the ecosystem. Thus, do not dispose the oil near
lakes, streams, or watersheds.
The safest way to dispose of oil is by pouring it into a sealable
metal container such as a coffee can, or gallon milk jug. Used
cooking oil can also be recycled in some areas. If there is a
recycle drop-off point in your area, check it to see if they will
accept your oil so it could become useful again.
