Dear Customer,
Thank you for purchasing this Hendi appliance. Before using the appliance for the first time, please read
this manual carefully, paying particular attention to the safety regulations outlined below.
1. SAFETY WARNINGS
• This appliance is intended for commercial use only and must not be used for
household use.
• The appliance must only be used for the purpose for which it was intended and
designed. The manufacturer is not liable for any damage caused by incorrect
operation and improper use.
• Keep the appliance and electrical plug away from water and any other liquids. In
the event that the appliance should fall into water, immediately remove plug from
the socket and do not use until the appliance has been checked by a certified
technician. Failure to follow these instructions could cause a risk to lives.
• Never attempt to open the casing of the appliance yourself.
• Do not insert any objects in the casing of the appliance.
• Do not touch the plug with wet or damp hands.
• Danger of electric shock! Do not attempt to repair the appliance yourself. In case
of malfunctions, repairs are to be conducted by qualified personnel only.
• Never use a damaged appliance! Disconnect the appliance from the electrical
outlet and contact the retailer if it is damaged.
• Warning! Do not immerse the electrical parts of the appliance in water or other
liquids. Never hold the appliance under running water.
• Regularly check the power plug and cord for any damage. If the power plug or power
cord is damaged, it must be replaced by a service agent or similarly qualified
persons in order to avoid danger or injury.
• Make sure the cord does not come in contact with sharp or hot objects and keep
it away from open fire. To pull the plug out of the socket, always pull on the plug
and not on the cord.
• Ensure that the cord (or extension cord) is positioned so that it will not cause
a trip hazard.
• Always keep an eye on the appliance when in use.
• Warning! As long as the plug is in the socket the appliance is connected to the
power source.
• Turn off the appliance before pulling the plug out of the socket.
• Never carry the appliance by the cord.

• Do not use any extra devices that are not supplied along with the appliance.
• Only connect the appliance to an electrical outlet with the voltage and frequency
mentioned on the appliance label.
• Connect the power plug to an easily accessible electrical outlet so that in case of
emergency the appliance can be unplugged immediately. To completely switch off
the appliance pull the power plug out of the electrical outlet.
• Always turn the appliance off before disconnecting the plug.
• Never use accessories other than those recommended by the manufacturer. Failure
to do so could pose a safety risk to the user and could damage the appliance. Only
use original parts and accessories.
• This appliance is not intended for use by persons (including children) with reduced
physical, sensory or mental capabilities, or lack of experience and knowledge.
• This appliance must not be used by children under any circumstances.
• Keep the appliance and its cord out of reach of children.
• Always disconnect the appliance from the mains if it is left unattended or is not in
use, and before assembly, disassembly or cleaning.
• Never leave the appliance unattended during use.
1.1 PRECAUTIONS
WHILE OPERATING THE APPLIANCE, MAKE SURE THAT THE FOLLOWING PRE-
CAUTIONS HAVE BEEN TAKEN. FAILURE TO DO SO MAY RESULT IN ACCIDENTS.
• HANDS AND CLOTHING MUST BE KEPT AWAY FROM THE MIXING BOWL AND
OPERATING ACCESSORIES.
• INFLEXIBLE OBJECTS MUST BE KEPT AWAY FROM THE MIXING BOWL AND OPER-
ATING ACCESSORIES.
• TO AVOID THE RISK OF ELECTRIC SHOCK, DO NOT IMMERSE THE APPLIANCE
IN WATER OR OTHER LIQUIDS.
• USE ONLY POWER SUPPLY INDICATED ON THE NAMEPLATE.
• BEFORE ANY MAINTENANCE OPERATIONS, DISCONNECT THE APPLIANCE
FROM POWER SUPPLY.
• DO NOT TURN OFF OR REMOVE SAFETY DEVICES.
• DO NOT LEAVE THE APPLIANCE UNATTENDED WHILE OPERATING.
• FOLLOW THE MAINTENANCE AND SAFETY INSPECTIONS SCHEDULE.

1.2 WARRANTY
Any defect affecting the functionality of the ap-
pliance which becomes apparent within one year
after purchase will be repaired by free repair or re-
placement provided the appliance has been used
and maintained in accordance with the instructions
and has not been abused or misused in any way.
Your statutory rights are not affected. If the appli-
ance is claimed under warranty, state where and
when it was purchased and include proof of pur-
chase (e.g. receipt).
In line with our policy of continuous product devel-
opment we reserve the right to change the product,
packaging and documentation specifications with-
out notice.
1.3 DISCARDING & ENVIRONMENT
At the end of the life of the appliance, please dispose
of the appliance according to the regulations and
guidelines applicable at the time.
Throw packing materials like plastic and boxes in the
appropriate containers.

3. INSTALLATION
BEFORE INSTALLING THE MIXER, CHECK THAT THE POWER SUPPLY IS IN ACCORDANCE WITH THE PARA-
METERS ON THE MIXER NAMEPLATE.
POSITIONING
Place the appliance in its designed location. The
kitchen top should be on a firm, flat surface. There
should be enough space around the mixer to freely
operate the appliance and install and remove the
mixing bowl.

THE POWER CORD SUPPLIED WITH THE APPLI-
ANCE IS EQUIPPED WITH A THREE-PRONG PLUG
WITH GROUNDING. THE APPLIANCE SHOULD BE
CONNECTED TO A PROPERLY GROUNDED OUT-
LET. IF THE OUTLET IS NOT PROPERLY GROUND-
ED, CONTACT AN ELECTRICIAN.

5.1 CONTROL PANEL
All models are equipped with a digital timer and electronic 5-step control.

ON/OFF SWITCH
– turns the appliance on and off.
TIMER
– digitally sets the time between 1 and 30 minutes,
or operating without the timer.
SPEED: Speed 1 is the lowest, 5 is the highest.
Speed 1 - for slow mixing, crushing and kneading
yeast dough.
Speed 2 - for kneading dough for cookies and cakes
Speed 3 - for creaming and whipping at medium
speed
Speed 4 - for whipping thick cream, egg whites and
preparing icing
Speed 5 - for whipping small amounts of thick cream
and egg whites
KNEADING
This section describes how to operate the mixer
and how to install the mixing bowl, mixing tools
and accessories.
MIXING TOOL
To install a mixing tool, you must install and fully
lower the mixing bowl.
Place the mixing tool in the mixing bowl, push it
onto the shaft and turn clockwise to lock.
DOUGH HOOK
Often used for heavy bread dough, preferably at low
speed.
FLAT BEATER
Often used for batter, mashed potatoes, e.g. to pre-
pare the stuffing, preferably at medium speed.
WHISK
Designed for whipping cream and eggs, preferably
at high speed.
MIXING BOWL - CAPACITY OF 6,65 LITRES
PRIOR to use, new mixing bowls and beaters (flat,
whisks and hooks) must be carefully washed in hot
water with mild detergent, rinsed with mild soda
solution or vinegar and then thoroughly rinsed with
cold water. This is also the proper way to clean the
mixing bowl and mixing tools before beating egg
whites or whole eggs.
The mixing bowl must be installed before the mix-
ing tool. To install the mixing bowl, fully lower the
bowl support. Place the mixing bowl and adjust the
strap at the back of the bowl to the retainer so that
the pins at the front of the support match the holes
in the mixing bowl sides.

KNEADING HEAVY DOUGH
To properly choose the right speed, it is necessary
to observe the humidity of the heavy dough. Do not
use speed 2 for kneading heavy dough which has
the Absorption Ratio (AR) of 50% or less. To deter-
mine the absorption ratio of a product, divide the
weight of water by the weight of flour.
Example: Calculate the absorption ratio for the
mixture of 2,23 kg water and 4,5 kg flour.
5 ÷ 10 = 0,50 = 50% = AR

6. MAINTENANCE
WARNING: All MAINTENANCE OPERATIONS MUST BE CARRIED OUT AFTER THE DEVICE IS DISCONNECTED
FROM THE POWER SUPPLY AND GROUNDING.
• Never use metal or hard brushes to clean the
mixer. Never clean the mixer with a jet of water.
• The mixer must be thoroughly cleaned every day.
• Mixing bowls and tools must be removed from
the mixer and cleaned in the sink.
• THE DRIP TRAY or THE POURING SHIELD must
be periodically checked for leaks of condensate
or grease. Remove the tray and wipe with a soft
cloth. To remove the tray, you can use a large flat
screwdriver, after removing the screw.
• The planetary mechanism transmission is lubri-
cated with special grease with several years of
durability.
To replace the grease, you should contact the au-
thorized service.
• The planetary gears are immersed in sufficient
quantity of grease, there is no need to lubricate
again.
