3-5. FILLINGORADDING
SHORTENING
The shortening level must always be above the heating
elements when the fryer is heating and at the frypot level
indicators on the rear of the frypot (Figure 3-3). Failure
to follow these instructions could result in a fire and/or
damage to the fryer.
When using solid shortening, it is recommended to melt
the shortening on an outside heating source before plac-
ing it in the frypots. The burner tubes must be completely
submerged in shortening. Fire or damage to the frypot
could result.
1. Itisrecommendedthatahighqualityfryingshortening
beusedin the openfryer.Somelow grade shorteningshavea
highmoisturecontentandwillcausefoamingandboilingover.
Toavoidsevereburnswhen pouringhotshortening
intofrypot, wear gloves and take care to avoid
splashing.
2. The electric modelrequires100lbs. shortening (45Kg.)The
frypothastwolevelindicatorlinesinscribedonthe rear wall
ofthefrypotwhichshowwhenthe heated shortening is atthe
properlevel.
3. Coldshortening shouldbefilledtolowerindicator.

Thebottomposition is tobeavoided on smallloadsbecause it is
closerto the coldzone. (The oilis cooler at the bottomof the frypot
andhotteratthe top.)With bigger loads, however,thereis generally
enoughturbulenceinthe oil that the bottomrackgetssufficientheat.

3-7. BASIC OPERATION Followtheproceduresbelowonthe initial start-upofthefryer,and
eachtimethefryeris brought from acold,orshutdown condition,
backintooperation. These are basic instructions.
1. Fillshorteningtotheproperlevelin the frypot; to thelower
levelindicator

2. Turnthe COOK/PUMPswitch to theCOOK positionand
pressthe appropriate productbutton to selectthe amountof
producttobe cooked. Unit automaticallygoesinto the
MeltCycle. When temperature reaches 250° F(121° C) the
controlsgoesinto the Heat Cycle,andheats the shorteningto
thesetpointtemperature.
3. Stirtheshorteningasit’sheatingupfroma“cold”start.
Besureto stir downintothe “cold zone”.

Bypassthe melt cycle, if desired, bypressing a product
buttonandholdingitforfiveseconds. Thedisplayshows
“EXIT MELT? 1=YES 2=NO”. Press to exit melt.
Do not bypass the Melt Cycle unless enough shortening
has melted to completely cover all of the heating elemets.
If the Melt Cycle is bypassed before all heating elements
are covered, excessive smoking of shortening, or a fire
could result.
Theheat cycles on and off about 10 degrees beforethe
setpointtemperature,tohelppreventovershootingthe
setpointtemperature.(proportionalcontrol)
Onceout of theMelt Cycle, flashesuntil 5°beforesetpoint
temperatureisreached. Then illuminatesandtheselected
productshowsinthedisplay.
5. Slideracks of breaded product into carrier onthe lid,
startingwiththe bottom rack,toprevent damaged product.
Beforeloading product ontothe racks, lowerthe racks
intothehotshorteningtopreventtheproduct sticking to
theracks.
6. Lower and latchthe lid,andpress .
Adifferentproductcanbeselected during the first minute of
cooking,in casethe wrongproduct buttonwas pressed. To
check the shortening temperature press or to stop a
Cook Cycle, press .
7. At the endofthecycle,an alarm sounds, whilethedisplay
shows“DONE”. Then press .

(Continued) 9. Using the rack handles, remove the racks of product from
the carrier, starting with the top rack, to prevent damaged
product.
10. If a Quality time (hold time) was programmed, the controller
automatically starts the hold timer. The display alternately
shows the product selected and the quality time remaining in
minutes. If a different product is selected during the Hold
Cycle, the display only shows the product selected.
11. At the end of the Hold Mode, a tone sounds, the display
flashes “QUALITY”, and the product it was timing. Press
and release .
In the Cook Mode, when “FILTER SUGGESTED”, shows in
the display, the operator has the option to filter at this time, or
to continue cooking. But, if the operator continues cooking, a
Filter Lockout occurs within the next Cook Cycle, or two.
When “FILTER LOCKOUT” , then “YOU *MUST* FILTER
NOW........” shows in the display, is the only button that
functions, until the unit is filtered. Follow the filtering instructions in
thismanual.
Once filtering is complete and the COOK/PUMP switch is turned
back on, “IS POT FILLED” shows in the display, followed by
“1=YES 2=NO”.
If shortening is at the proper level in the frypot, press and
the controls start a normal heating process.
If shortening is NOT at the proper level, press and “TURN
OFF UNTIL FILLED…” scrolls through the display. Turn the
COOK/PUMP switch to the OFF position, fill frypot to the proper
level, then turn the COOK/PUMP switch back to the COOK
position.
Again, “IS POT FILLED” shows in the display, followed by
“1=YES 2=NO”. This time press and unit resumes
normal heating process.
When the fryer is heating, the shortening level must always
be above the heating elements. Failure to follow these
instructions could result in a fire and/or damage to the
fryer.

SHORTENING

1. Toprotecttheshorteningwhen the fryer is not in immediate
use,the fryer shouldbe put intothe Idle Mode.
2. Frying breaded productsrequiresfilteringtokeepthe
shorteningclean. Theshorteningshouldbefilteredat
leasttwice a day;after lunch rushand atthe end ofthe day.
3. Maintaintheshorteningatthepropercooking level. Add
freshshorteningasneeded.
4. Do not overload the baskets with product, or place product
withextrememoisturecontentinto baskets.
WITHPROLONGEDUSE,THEFLASHPOINT OF
SHORTENING IS REDUCED. DISCARD SHORT-
ENINGIFIT SHOWSSIGNSOFEXCESSIVE
SMOKINGOR FOAMING. SERIOUS BURNS,
PERSONALINJURY,FIRE,AND/OR PROPERTY
DAMAGECOULD RESULT.
3-9. FILTERING TheHenny Pennyelectric 8 headfryer, Model 291,must be
INSTRUCTIONS cleanedandtheshorteningfilteredatleasttwicedaily;after lunch
rushand atthe end of the day.
Drain the shortening at 275° F (135° C) or less. The
higher temperatures cause cracklings to burn on the
steel frypot surfaces after the shortening has drained.

cracklingsandcleaningmayberequiredmore often. Part ofthe
processinvolves removingcracklingsfromthecold zone of the
frypot.
1. Turn COOK/PUMP switch to OFF position.
2. Make sure drainpanisunderfryerandthefilter union
istightenedtothestandpipe, coming out ofthepan.
Thefilter pan mustbeas far backunder fryer as itwill
go, and the cover in place. Be sure the hole in the
coverlines upwith thedrain beforeopening thedrain.
Failureto follow theseinstructionscauses splashing of
shorteningandcouldresultinpersonalinjury.
Surfacesof fryer and racks will be hot. Use care when
filteringtoavoid gettingburned.
3. Remove cooking racksand carrier,andwipebottom of lid.
Tilt lid out of thewaytocleanfrypot.
4. Pull drain handletowardsyoutoopendrainvalve. The
handleshouldpointstraightouttothefrontofthefryer.
UseL-shapedbrushtocleancracklingsfromtheheating
elementsandfromsidesandbottomoffrypotasshortening
drains. Usestraightbrushtopushcracklingsthrough
drainopeninginbottomoffrypotif necessary,and to
cleanbetweentheheatingelementsand the frypot wall.

5. When all oftheshortening has drained, scrapeorbrush the
sidesandbottomofthefrypot,andswing drain valve handle
totheclosedposition.
6. Ifan optional filterrinsehoseisavailableonyourfryer,the
followingcleaning proceduremaybeused,otherwisecontinue
onto step 7.
a. Attachthefilterrinsehose withitsquickdisconnectfitting
tothemale fitting, locatednexttothefiltervalvehandle.
Slidebackthespringringon the female sideofthequick
disconnectfittingandletitsnapintoplaceoverthemale
halfofthefitting.
b. Make sure thehose nozzle is pointeddown into the bottom
ofthefrypotandfiltervalve is in closed position. Movethe
COOK/PUMPswitch tothe PUMPposition. Hold
nozzlecarefullytoavoidexcessivesplashing.
Usecareto prevent burns caused by splashing of hot
shortening.

c. Rinsethefrypot interior. Especiallywork on hard to clean
areas,likethe frypotbottomand burner tubes.
d. Afterthoroughrinsingwithshortening,closethedrain
valve.
e. Turn the COOK/PUMP switchto theOFF position.

7. TurnCOOK/PUMP switchto PUMP.
8. Whenall shortening hasbeenpumpedintofrypotturn
COOK/PUMPswitch off.
3-10. CHANGINGTHEFILTER Thefilterenvelopeshouldbechangedafter10-12filterings,or
ENVELOPE wheneveritbecomescloggedwithcrumbs. Proceed as follows:
1. Move the COOK/PUMP switch to the OFFposition.
2. Remove and emptythecondensationdrainpan.
3. Disconnectthefilterunionandremovethefilterdrain
panfrombeneaththefrypot.
Useprotective cloth or glovewhendisconnecting the
filterunion orsevere burnscouldresult.
Ifthe filter panismoved while full ofshortening, use
careto prevent splashing, or severeburns could result.

7. Removethe crumbcatcherandcleanthoroughlywith
hotwater.
8. Removethe filter clipsanddiscardthefilterenvelope.
9. Clean the topand bottom filterscreen with soapand
water. Rinsethoroughly with hot water.
Besurethatthefilterscreens,crumbcatcher,filter clips,
andthestandpipearethoroughlydry before assembly of
filterenvelopeas water willdissolvethefilterpaper.
10. Assemblethetop filter screen tothebottomfilter screen.
11. Slidethescreensintoacleanfilterenvelope.
12. Foldthecorners inand then doublefold the openend.
13. Clamp theenvelopeinplacewiththetwofilter retainingclips.
14. Replacethecrumb catcher screenon top ofthefilter
paper. Screwonthe standpipeassembly.
15. Place completefilterscreenassemblybackintofilter
drain panand slide panback into placebeneath the fryer.
16. Connect the filterunion by hand. Donotuse awrenchto
tighten.
17. Slide the condensationdrain pan backintoplace. The
fryeris now ready to operate.

3-11. FILTER PUMPMOTOR Thefilterpumpmotorisequippedwitha manual reset button,
PROTECTOR-MANUAL locatedon the rear ofthe motor, in case the motor overheats. If
RESET motorwon’trun,waitabout 5 minutesbeforeattemptingtoreset
thisprotective device toallow motor tocool. Removethe access
panelon the leftside panelof the unitto reset the button. It takes
someeffort to push the reset, and a screwdriver canbe usedto
helpresetthebutton.
Topreventburnscausedbysplashingshortening,turn
theunit’smainpowerswitch tothe OFFpositionbefore
resettingthe filterpumpmotor’smanual resetprotec-
tiondevice.
3-12.CLEANINGTHEFRYPOT Aftertheinitialinstallation ofthefryer,aswellasbeforeevery
changeof shortening,thefrypotshouldbethoroughly
cleanedasfollows:
1. Turnthe COOK/PUMPswitch to OFF,andunplug unit
fromwallreceptacle.
Movingthefryer orfilterdrainpanwhile containing
hotshortening isnot recommended. Hotshorteningcan
splashout and severeburnscould result.
Thefilter drainpan mustbeas farback underfryer
as it will go, and the cover in place. Be sure the hole in
thecover linesupwith the drainbefore opening the
drain.Failure tofollow these instructionscauses
splashingofshorteningand couldresult inpersonal
injury.

3. Close the drainvalveanddiscardtheshortening.
4. Raise lid, removetheracksandcarrierfromlid, and tilt lid
back,sothatthelidwon’tinterferewithcleaning.
5. Fill the frypot to the level indicators with hot water.
Add8 to 10ounces offryer cleaner (Henny Penny part
number12101)tothewaterandmixthoroughly.
Alwayswear chemical splash goggles orfaceshield and

othercontact of the solution withyour eyes or skin.
Severeburns and possiblebindness will result.Care-
fullyreadthe instructions onthecleaner. Ifsolution
comesin contactwith youreyes, rinsethoroughlywith
coolwaterandsee a physicianimmediately.
6. Turnthe COOK/PUMPswitch toCOOK and enter the
Clean-OutMode bypressing andholding until “CLEAN
OUT?”, “1=YES 2=NO” shows in display. Press to
startClean-Out Mode. The fryerdisplays “*CLEAN-OUT
MODE*”and heats upto a preprogrammedtemperature
(195°F(91°Cmax.)thenautomaticallybegins a preset timed
countdown. Use ,if necessary,toadjust the
temperatureandto keep cleaningsolutionfromboilingover.

Watch the cleaning solution constantly to make sure it
does not boil over causing damage to controls.
Do not use steel wool, other abrasive cleaners or cleaners/
sanitizers containing chlorine, bromine, iodine or ammonia
chemicals, as these will deteriorate the stainless steel
material and shorten the life of the unit.
Do not use a water jet (pressure sprayer) to clean the
unit, or component damage could result.
8. Aftercleaning,turnoff the COOK/PUMPswitch. Open
thedrain valveanddrainthecleaningsolution fromthe
frypotintothefilterdrainpananddiscard.
9. Closethe drainvalveandrefillthefrypotwithplainhot
watertoupperlevelindicatorline.
10. Add approximately16ouncesofdistilledvinegarand
enterthe Clean-Out Mode again (see step 6).
12. Usingaclean brush, scrub theinteriorofthefrypot and
lidliner. Thiswillneutralizethealkalineleftbythe
cleaningcompound.
13. Drainthevinegar rinse water and discard.
14. Rinsedownthe frypot, using clean hot water.
15. Thoroughly drythefilterdrainpan,andthefrypotinterior.
Makesuretheinside of the frypot,thedrainvalve
opening,andallpartsthatcome in contact withthe
newshorteningare as dryaspossible.
16. Replace thecleanfilterscreenassemblyinthefilterdrainpan
andinstallunderfryer.
17. Refillthefryerwithfreshshortening
