TheHennyPennypressure fryer usesacombinationof pressure,
heat,and time toproduce aquality product. Theadvantage of this
typefryer isthe pressureallows theproduct tobe cooked with less
heatandlesstimethan the conventionalopen-typefryers.
TheChick-fil-Acontrols for theHennyPenny Models 500(elec-
tric)and 600(gas) havemany featuresto allowthe Operatorto
produceconsistent, qualityproducts. The controls monitornot
onlycookingtimesandtemperatures,butalsopeanut oil condition,
productweights,producttemperatures, andmanyotheroperational
variables. The controlsmayvarythe actual peanutoiltemperature
andcook times, basedon changesofthe operationalvariables.
Thecontrolsalsohaveveryextensiveself-diagnosticfunctions
whichalert theOperator toboth componentand procedure
problems.

TheHennyPennypressurefryer has manysafetyfeaturesincorpo-
rated. However, the onlyway toensure a safeoperation isto fully
understandtheproperinstallation,operation,andmaintenance
procedures,whicharecontainedinthismanual. Whereinformation
isofparticular importanceorsafety related, thewords DANGER,
WARNING,CAUTION, and NOTICE are used.Their usage is
describedbelow.

ThissectionprovidestheinstallationinstructionsfortheHennyPenny
pressurefryer.
Installationofthisunitshouldbeperformedonly
byaqualifiedservicetechnician.
Donot puncturethefryer withanyobjects such
as drillsor screws as electrical shock or com-
ponentdamagecouldresult.
1. Cut thebands from around the carton.
Anyshipping damageshouldbe notedinthe
presence of thedeliveryagent and signedprior
totheirdeparture.
2. Liftthemaincartonoff thefryer.
3. Removetheinsidepackingfromthefryer.
4. Open fryerlid and removethe basketplus all theaccessories.
5. Open frontdoor and removethe condensationdrain pan.
6. Unscrewthefilterunionandremovethefilterdrainpan.

Takecarewhen moving the fryerto preventpersonal
injury.Thefryerweighsapproximately 300 lb (136 kg).
8. Tiltthefryerto one sideso oneside of thefryer frameis raised up
offoftheskid.
9. While onepersonholdstheunit, another personhitsthevertical
woodensupportswithahammerpushingthem under the fryer.
10. Returnthefryertofullyupright.
11. Open frontdoor, removetwovertical supportsanda horizontal
supportand closethe front door.
12. Unlockall4 casters.
13. Liftfryerup so castersare abovethe skid,move thefryer off the
skid,and setthe fryer on the floor.

14. Preparedeadweightvalveassemblyfor operation.

weightvalveassembly andmustbe removedprior to
installationandstartup,or unitwillNOTbuildpressure.

INSTRUCTIONS
Theproperlocationof thefryerisvery important foroperation,
speed,and convenience. Choose alocation whichprovides easy
loadingandunloadingwithoutinterferingwiththefinalassemblyof
foodorders. Operatorshave foundthatfrying from rawto finish, and
holdingtheproductinwarmers,providesfastcontinuousservice.
Landingordumping tablesshouldbe provided nextto, at least,one
sideofthe fryer. Keep in mindthebest efficiencywillbeobtained by
astraightline operation, i.e.,rawin one sideandfinished out theother
side. Orderassemblycan bemoved away withonly a slightloss of
efficiency. Toproperlyservice thefryer, 24 inches(60.96 cm) of
clearanceisneeded onall sides ofthe fryer. Access forservicing can
beattained byremoving aside panel. Also,at least6 inches(15.24
cm)around thebase ofthe gas units is needed for proper air supply
tothecombustionchamber.
To avoid a fire, install the fryer with minimum clearance
from all combustible and noncombustible materials, 6 inches
(15.24 cm) from side and 6 inches (15.24 cm) from back. If
installed properly, the gas fryer is designed for operation on
combustible floors and adjacent to combustible walls.
To avoid fire and ruined supplies, the area under the fryer
should not be used to store supplies.

Topreventsevereburnsfromsplashinghot shortening,
positionandinstallfryer topreventtippingormovement.
Restrainingties may be used forstabilization.
Forproper operation, the fryer shouldbe levelfrom sideto side
andfront toback. Place a level on theflat areas around the frypot
collar,thenadjustthelevelingboltsorcastersuntiltheunitislevel.
FAILURETOFOLLOWTHESELEVELINGINSTRUC-
TIONSCAN RESULTINSHORTENINGOVERFLOW-
INGTHE FRYPOTWHICH COULDCAUSE SERIOUS
BURNS,PERSONALINJURY,FIRE,AND/OR PROP-
ERTYDAMAGE.
Thefryermustbelocatedwithprovisionforventinginto adequate
exhausthoodorventilationsystem. Thisisessentialtopermitefficient
removaloftheflue gasesandfrying odors. Takespecialprecautions
indesigninganexhaustcanopyto avoid interference withtheopera-
tionofthefryer. Werecommend youconsultalocal ventilationor
heatingcompanytohelpindesigninganadequatesystem.
Ventilationmustconformtolocal,state,and national codes.
Consultyourlocalfiredepartmentorbuildingauthorities.
When installing the gas fryer do not attach an extension to
the gas flue exhaust stack. This may impair proper opera-
tion of the burner, causing malfunctions and possible nega-
tive backdraft.

Thegasfryeris factoryavailableforeither natural orpropanegas.
Checkthe data plate behind the front doorof thefryer todetermine
thepropergassupply requirements.
Do not attempt to use any gas other than that specified
on the data plate. Conversion kits can be installed by
yourdistributorifrequired. Incorrectgassupplycould
causeanexplosionorfireresultinginsevereinjuries
and/orpropertydamage.
Pleaserefer belowfortherecommended hookupofthefryer to main
gaslinesupply.
Toavoidpossible serious personalinjury:
•InstallationmustconformwithAmericanNationalStandard
Z223.1-(thelatestedition)NationalFuel Gas Code and
thelocalmunicipalbuildingcodes. InCanada, installation
mustbe inaccordance withStandardCSABl49-&2,
InstallationCodes GasBurningAppliances,andlocal
codes.
• Thefryerand its individualshut-offvalve must bediscon-
nectedfrom thegassupply piping systemduringany
pressure testing of that system at test pressures in excess
of1/2 PSIG(3.45KPA)(34.47mbar).
• Thefryer must be isolatedfromthe gas supply piping
systemby closing itsindividualmanual shut-offvalve
duringany pressure testing of the gas supply pipingsystem
at test pressures equal to or less than 1/2 PSIG(3.45 KPA)
(34.47mbar).
• Astandard 3/4 inch,blacksteel pipe andmalleablefittings
should be used for gas service connections.
• Do not use cast iron fittings.
• Although3/4inchsizepipeisrecommended,piping should
be of adequate size and installed to provide a supply of gas
sufficienttomeetthemaximumdemand withoutundue loss
of pressure between the meter and the fryer.The pressure
lossin the piping system should not exceed0.3 inch water
column(0.747mbar).

Provisionsshouldbemadeformovingthefryerforcleaningand
servicing.Thismaybeaccomplishedby:
1. Installingamanualgasshutoff valveanddisconnectunion,or
2. InstallingaheavydutydesignA.G.A.certifiedconnectorwhich
complieswiththe StandardforConnectors forMoveableGas
Appliances,ANSI Z21.6, or CAN/CSA6.16, with a quick-
disconnectcoupling(Henny Penny Part No.19921),which
complies withANSI standard Z21.41, or CAN 1-6.9. Also
adequatemeansmustbeprovided to limitthemovementof the
fryerwithoutdependingontheconnectorandquickdisconnect
deviceoritsassociatedpipingtolimitthefryermovement.
3. See theillustrationonthe following pagefortheproper connec-
tionsoftheflexiblegaslineandcablerestraint.
Thecablerestraintlimitsthedistancethe fryer can bepulledfrom
thewall. Forcleaningandservicingthe fryer,unsnapthecable
fromtheunit,anddisconnecttheflexiblegasline. Thisallows
betteraccess toall sidesof thefryer. The gasline andcable
restraintmustbereconnectedoncethe cleaning orservicingis
complete.
Priorto turning thegas supplyon,be surethe gas valveknob
onthegas controlvalveis intheOFF position.
Afterthepipingandfittingshavebeen installed, check forgasleaks.A
simplecheckingmethod is toturnon the gasandbrush all connec-
tionswitha soap solution. Ifbubblesoccur,itindicatesescaping gas.
Inthisevent,thepiping connection mustberedone.
To avoid fire or explosion, never use a lighted match or
open flame to test for gas leaks. Ignited gas could result in
severepersonalinjuryand/or propertydamage.

Thegaspressure regulatoronthe automaticgasvalve isfactoryset as
follows:
Natural: 3.5inches water column
Propane:10.0incheswater column
Thegas pressure regulatorhas beenset by HennyPenny and
isnot to be adjusted by the user.
LightingProcedure-SolidStateIgnition
1.Turnmain powerswitchto OFFposition.
2.Move “ON/OFF” selector on gascontrol valve to OFF position.
3.Wait a sufficientlengthoftimetoallowanygaswhichmayhave
accumulatedin the burner compartment toescape (atleast 5
minutes).
4.Move “ON/OFF” selector on gascontrol valve to ON position.
5.Turnmain powerswitchto ONposition.
6.Waitabout45 seconds for the burner to light.
7.Listenforthegasburnerignition.
• Itwillbean audiblesounddueto the gasignitingat the gas
jetswithintheburner.
8.Theburnerlightsandoperatesuntiltheshortening temperature
reachesa preset temperature, and whentempearture light goes
out,set timer for desired length oftime.
Do not leave the thermostat on for more than 10 seconds
without shortening in the frypot or damage to the frypot may
result.
9.Thefrypot shouldbecleaned pertheinstructions inSection3.
10.Thefrypotmustbe filled totheproperlevelwith shortening.

1.Move “ON/OFF” selector on gascontrol valve to OFF position.

LightingProcedure-Standard(Manual)Ignition
1. The gas valve knob has a dual function.
a. Complete control of gas to the pilot and main burner.
b. When in the pilot position, it is the reset mechanism for the
automaticpilot.
2. Partially press and turn the gas valve knob to the OFF
position.
3. Wait at least 5 minutes to allow any gas to escape that may
have accumulated in the burner compartment.
4. Turn the COOK/PUMP switch to OFF.
5. Turn the gas valve knob to the PILOT position.
6. Press and hold the gas valve knob while lighting the pilot.Allow
the pilot to burn about 30 seconds before releasing the knob.
If the pilot does not stay lit, repeat steps 5 and 6, allowing a
longer period of time before releasing the gas valve knob.
7. Turn the gas valve knob to the ON position.
8. Turn the COOK/PUMP switch to COOK.
9. With the lid open, select a product on control panel, and listen
for the gas burner ignition (no longer than 10 seconds) and
then turn COOK/PUMP switch OFF.
Do not leave unit on, without peanut oil, for more than 10
seconds or damage to the frypot could result.
10. Clean the frypot per the instructions in the Cleaning the Frypot
Section.
11. Fill the frypot with peanut oil to the proper level.
12. The fryer is now ready for operation.
The pilot flame is preset at the factory. If adjustment is neces-
sary, contact your local independent Henny Penny distributor.
Shutdown Procedure
1. Turn main power switch to OFF.
2. Depress the gas control valve knob lightly and turn to the OFF
position.

Thegas regulator is preset atthe factoryat 3.5inch watercolumn (0.87
kPa)for naturalgas (10.0inch (2.49kPa) for propane). If adjustment is
necessary,contactyourlocalindependentHennyPenny distributor.
Thegas fryer requires120 single phase, 60Hertz, 10 or 5 amp, 2 wire
+groundservice. The gasfryer is factoryequipped with agrounded
cordandplug foryourprotection against shockand should beplugged
intoa3 prong groundedreceptacle. Awiringdiagramis locatedbehind
thefrontdoor.
Do not disconnect the ground (earth) plug. This fryer must be
adequately and safely grounded (earthed) or electrical shock
could result. Refer to local electrical codes for correct
grounding (earthing) procedures or in absence of local codes,
with The National Electrical Code, ANSI/NFPA No. 70-(the
current edition). In Canada, all electrical connections are to
be made in accordance with CSA C22.1, Canadian Electrical
Code Part 1, and/or local codes.
To avoid electrical shock, this appliance must be equipped
with an external circuit breaker which will disconnect all
ungrounded (unearthed) conductors. The main power switch
on this appliance does not disconnect all line conductors.

Theelectric fryerrequires 208 or 240 volt,three phase,50/60
Hertzservice. The power cord may be already attached tothe
fryerorprovided atinstallation. Check the dataplate behind the
frontdoor to determine the correct power supply.
Thisfryer must beadequatelyand safely grounded(earthed)
or electrical shock could result. Refer to local electrical
codesforcorrectgrounding(earthing)procedures orin
absenceoflocalcodes, with The National Electrical Code,
ANSI/NFPANo.70-(the currentedition). In Canada, all
electricalconnections are tobemade in accordance withCSA
C22.1,Canadian Electrical CodePart1, and/or localcodes.
Toavoidelectrical shock, this appliance mustbeequipped
withan external circuitbreakerwhich will disconnectall

Aseparate disconnect switchwith propercapacity fuses orbreakers
mustbeinstalledat a convenientlocationbetweenthe fryer andthe

600 volts and 90o C. Forruns longer than 50feet (15.24 m), use the
nextlargerwiresize.
