1. INTRODUCTION
This manual has been carefully prepared and reviewed in order to provide reliable and
helpful information for correct installation, use and maintenance that will ensure proper
operation and prolong the life of the oven. This manual is divided into 3 parts, the first part
dedicated to the installation of the equipment at the working point, the second to its use
and the third focused on cleaning and maintaining the oven.
Before carrying out any intervention or use of the equipment, it is necessary
to carefully and completely read this manual.
The manufacturer declines all implicit or explicit responsibility regarding possible errors or
omissions that it may contain.
- The oven cannot be used by personnel who have not received some type of training,
and do not have the skills or experience necessary for the correct operation of the
equipment. Do not let children use or play with the equipment.
- The owner of the equipment has the obligation to have this manual read by the
personnel in charge of its use and maintenance, as well as to keep this manual in a
safe place so that it can be used by all users of the equipment and for future
reference. If the equipment is sold to other people, they must be given this manual.
- This oven must only be used for its intended purpose, that is: cooking, heating,
regenerating or dehydrating food. Any other use may be dangerous and may cause
personal injury and property damage.
- The equipment is shipped from the factory once calibrated and has passed rigorous
quality and safety tests that ensure its correct functioning.
The manufacturer will decline any responsibility for problems caused by
improper installation, modification, use or maintenance.

3. GENERAL RULES ON SAFETY AND ACCIDENT PREVENTION
3.1. Personnel in charge of using the equipment
The use of the equipment is reserved for trained personnel.
The personnel who carry out any action on the oven, whether use, cleaning,
installation, manipulation, etc. You must be aware of the safety regulations
and instructions for use.
Do not allow unauthorized personnel to use, handle or clean the
equipment.
3.2. Electrical hazard
Work on the electrical power supply and access to live parts is only permitted by qualified
personnel and under their responsibility. In any case, said access must be carried out with
the equipment disconnected from the electrical network.
If the appliance is placed on a cart or on tables that have some mobility, do not allow it to
move while it is connected to the electrical current to avoid possible damage to the wiring,
drain or water inlet pipes. If you want to move or change the position of the equipment, the
cables and drain and water inlet pipes will be disconnected.
3.3. Thermal hazard
When the equipment is in operation, the door must be opened slowly and carefully to avoid
possible burns due to steam or hot air that may come out of the cooking chamber.
Keep ventilation openings free of obstacles. Do not install the equipment
near flammable products. Avoid placing the oven near heat sources such as
stoves, griddles, fryers, etc.
Check the safety distances in the chapterSite.
DANGER OF ACCIDENT! Be careful when using food containers in the oven
when the top tray is 160 cm or higher in height. There is a risk of injury from
the hot contents of the trays.
While the oven is in operation, avoid touching metal parts and the door
glass as they can exceed 60°C. Only touch the handle and the control panel.
3.4. Danger of corrosion
When using cleaning products, special attention and appropriate safety measures must be
taken to handle said products. Always read the safety data sheet for different chemical

products before using them and follow their instructions for use. These products, in contact
with any part of the body, are abrasive and can cause skin and eye irritation and burns.
During the cleaning process of the combi oven and in case of aerosol or mist formation
during the handling of cleaning products, use a mask with type P2 / P3 particle filter,
panoramic goggles against splashes and/or projections and chemical protection gloves. .
MyCare CleanDuo and DA21 cleaning products have been specially formulated for the
correct cleaning and protection of Mychef ovens with automatic washing. The product
contains, in addition to detergent, rinse aid for a perfect finish. The use of this detergent is
mandatory in Mychef iCOOK COMPACT ovens.
Use CleanDuo in Mychef iCOOK COMPACT ovens equipped with an
automatic washing system. The use of other products voids the warranty.

4. RECEPTION, TRANSPORTATION AND LOCATION
Before carrying out the installation, the dimensions of the location where the equipment is
going to be located and the electrical and water connections must be verified, and see that
they are within the parameters detailed in the section4.3.
4.1. Reception
Once the oven has been received, check that the model purchased corresponds to the
order.
Verify that the packaging has no damage suffered during transport and that no pieces or
parts of the equipment are missing. If you detect any anomaly or problem, contact your
distributor immediately.
4.2. Transport
The equipment must be transported with the original packaging to the location closest to
the installation point to avoid possible damage as much as possible. It is recommended to
keep the original packaging until the equipment is properly installed and in operation.
To move the equipment and place it in its workspace, the following observations must be
taken into account:
-The measurements of the different models to pass through narrow places (hallways,
doors, narrow spaces). See chapter2.
-The manipulation must be done with the necessary personnel to move the furniture
load, taking into account the current occupational safety regulations at the
installation site.
-During transportation of the oven, it must always be in a vertical position. It must be
lifted perpendicular to the ground and transported parallel to it.
-Make sure that during transport it does not tip over or hit any object.

4.3. Site
-Place the oven at a comfortable distance from the wall to make electrical and water
connections. There must be a minimum separation between the parts of the oven so
that it can ventilate and cool correctly. This minimum distance is:
o50mm on the left and right sides
o50mm from the rear
o500mm from the top
-The equipment should be placed on a Mychef support table or wall mount.
-If there are sources of heat or steam near the equipment (stoves, embers, griddle,
fryer, pasta cooker, kettle, tilting frying pan, etc.), these must be at a distance greater
than 1 meter.
-Check that the oven is not exposed to hot air or vapors in the areas where the cooling
fans are (front right area and rear left area).

-Once it is placed in the work space, check that it is level.

Be extremely cautious with oven cooling zones. If it sucks in vapors or hot
air, it can drastically reduce the life time of the components.
To install stacked Mychef ovens, follow the instructions that will be supplied
with the corresponding stacking kit.

5. FACILITY
5.1. Electrical connection
Check that the voltage reaching the point where the oven is to be connected matches the
operating voltage of the equipment.

Before carrying out any electrical work, ensure that no electrical current reaches the
equipment connection point.
The equipment must be connected to the electrical network through an omnipolar cut-off
switch and with a contact opening distance greater than 3mm. Also install a class A
differential device and overcurrent protection.
Always ensure effective grounding.
Connect the equipment to an equipotential systemusing the contact specially
provided for this purpose (see equipotential sign at the bottom left of the equipment). If two
devices are stacked, both must be connected to the equipotential system.
Connection to an equipotential bonding system guarantees additional
safety in the event of simultaneous ground leakage and differential failure.

The wiring and other safety devices used for the electrical installation must have the
appropriate section for the equipment in question.
In all cases, respect the current regulations for connecting the equipment to
the low voltage network.
Before starting the electrical installation, verify that the electrical requirements of the oven
and the electrical network supply are the same.
Never connect a phase to neutral or ground. Check that the installation
voltages correspond to those of the equipment.
The following subchapters show the types of connections possible for Mychef ovens.

5.2. Water connection
5.2.1. water inlet
Cold water (max. 30°C) ¾ inch 150 to 400 kPa dynamic flow pressure.
Drinking quality water with the following characteristics:
- Hardness between 3º and 6º FH
- PH between 6.5 and 8.5
- Chlorides (Cl-) less than 30 mg/L
- Chlorine (Cl2) less than 0.2 mg/L
- Iron (Fe) less than 0.1 mg/L
- Manganese (Mn) less than 0.05 mg/L
- Copper (Cu) less than 0.05 mg/L
- Conductivity less than 20uS/cm
Use of descaler and Mychef filter mandatory.
The use of water with characteristics other than those indicated can cause
serious problems in the oven components, such as corrosion in the cooking
chamber or glass, premature failure of the solenoid valves, etc.
Periodically check the quality of the oven water.
The oven has a ¾'' water inlet at the back of the oven for steam generation and self-
cleaning processes.

If it is a new installation, the water must be allowed to run until the
connection is completely purified. This operation must be repeated every
time works or repairs are carried out on the water installation that feeds
the furnace.

5.2.2. Drain
For the correct operation of the steam system of the iCOOK COMPACT ovens, the
equipment must be connected to a drainage system with a nominal diameter 40mm
(DN40) through a heat-resistant and siphonic type pipe.
Mychef iCOOK COMPACT ovens internally incorporate a system to block odors that may
come from the drain.

For correct operation, keep in mind that the tube must have a constant slope of at least
5º.
The drain must be a maximum of 1 meter long, have a diameter larger than
the drain connection and be free of chokes.
5.3. Vapor condensation hood
Refer to the installation manual supplied with the vapor condensation hood for
installation.
The vapor condensation hood is an accessory. The hood can be installed
once the oven is installed.

6. INITIAL REGISTRATION
6.1. Commissioning of Mychef iCOOK COMPACT
This brief instruction is intended to explain the steps to follow to start the Mychef iCOOK
COMPACT oven for the first time.
1. Turn on the oven. Then select a language and press “Done”.
2. Choose the Wifi network and then enter the password to connect:

a) The oven does not connect to the WiFi network:
Make sure the router is working and the password is correct.
b) If the WiFi network is currently unavailable:
You can use your mobile phone as an access point to make the connection
(Internet Sharing Mode).
3. Choose “User Mode” to create an account and register the oven.
•Make sure you enter a valid email address to receive access credentials.
•All fields must be filled out.
4. If you already have a user account: enter the email address and password. The oven
will synchronize.

5. Access “Installer Mode” and complete the fields with the required data.
6. System Analysis
The oven will begin a general check to ensure that the installation was done correctly.
Follow the instructions shown on the screen.
