1. Introducon
1.1 Safety
When incorrectly used this appliance is a potenally DANGEROUS machine. Before using
the equipment, read the manual carefully and keep it on an accessible place for future
checks.
To avoid accidents, seizures and damages to the equipment, follow the instrucons below:
1.1.1 Read completely these instrucons.
1.1.2 To avoid to risk electric shocks and damage to the equipment, never use it with wet
clothes or shoes and/or standing on wet floors. Do not plunge it into water nor any other
liquid, do not spray water directly to the equipment.
1.1.3 When the equipment is in operaon the operator shall supervise it, principally
when children might be near.
1.1.4 Unplug the equipment when: It is not in use, before to clean it, before to remove or
to place some accessory during maintenance or any other service that is in operaon.
1.1.5 Do not operate the equipment if the cord or plug are damaged. Do not lean the
cord on table edges, nor let them lie on hot surfaces.
1.1.6 If the equipment falls, has been damaged in any way, or simply does not work, take
it to Technical Assistance to check.
1.1.7 Do not use spare parts that are not Recommended by the manufacturer.
1.1.8 Keep the hands or any other object away from moving parts while the equipment is
in operaon.
1.1.9 Make sure the equipment voltage and the network voltage are the same, and the
equipment has been solidly grounded.
1.1.10 Disconnect the equipment from the power grid when changing the OIL.
1.1.11 Never turn on the equipment without oil.
1.1.12 Never touch the heang element N°08 (Fig.02) and the oil when the equipment is
on or in cooling me, because they will be hot and cause burns.
1.1.13 This product was developed to be used in commercial kitchens. It is used, for
example, in restaurantes, cafeterias, hospitals, bakeries, butlers and others.

For the use of this equipment, it is not recommended that:
- The producon process be done connuously, in industrial scale;
- The workplace be with corrosive or explosive atmosphere, or contaminated with water,
steam, dust or gas.
IMPORTANT
Make sure the cord is in perfect condions for use. If it is not, change it for a new
one in accordance with the technical specicaons and safety rules.
The substuon shall be made by a qualied professional, and shall respect the
local safety norms.
IMPORTANT
This equipment must not be used by children or any persons with reduced physical or
mental aptness, lack of experience or knowledge, unless they are under supervision
or have received from the person responsible for safety, proper instrucons on how
to use the equipment.
IMPORTANT
Children shall be watched in order to avoid them to play with the equipment.
IMPORTANT
Pay aenon and be careful with boiling sprouts that may occur when placing
excessively wet/frozen foods in the tank. Boiling sprouts may also occur if excessive
loads of food are placed in the tank.

In case of emergency take o the plug from its socket.
IMPORTANT
Do not use direct water jets on the equipment.
IMPORTANT
We strongly recommend that the End Users of this machine have readily accessible
and available K Class (US Standard or in accordance with local norms/laws) re
exnguishers at the place where the machine will be used.
IMPORTANT
Make sure that the oil level is at the indicated level at ALL TIMES. The use of the
machine with the oil below the indicated level may result in a re.
IMPORTANT
Never turn on the equipment without oil.
IMPORTANT
The oil should also be changed, as old oil can have a reduced ash point and can be
more prone to boiling spurts.
IMPORTANT
This equipment should not be cleaned with a steam cleaner.
IMPORTANT
This appliance must be installed and used in such a way that any water cannot come
into contact with grease or oil.

2. Installaon and Pre-Operaon
2.1 Installaon
2.1.1 Posioning
The Electric Fryer is to be installed onto a levelled, dry and clean surface.
2.1.2 Electrical Installaon
IMPORTANT
Make sure that the voltage of the power source is 220V.
IMPORTANT
Before lling the tank with OIL, make sure that the Valve ¾” No. 10 (Fig.01) is
closed to avoid a leakage.
2.2 Pre-Operaon
Before using your equipment, all parts that come in contact with the product to be
processed must be washed with water and neutral soap.
Make sure that the fryer is rm on its posion and stable.
This equipment has been designed to be used on 220 V single phase network. When
receiving the equipment check the voltage given on the cord label;
The cord has no plug and features three wires, ground wire is green and yellow.
Connecon to the electric network has to be made at the installaon local by a qualied
technician, giving special aenon to the ground connecon.
It is recommended to connect the cord to the network by means of a plug and a socket to
allow to unplug the equipment when cleaning or maintenance are performed.

3. Operaon
3.1 Starng
Before turning on the machine, ll the Tank N°01 (Fig.01) with 15 liters of comsble oil. The
oil level must reach the “MIN OLEO” mark located in the inner part of the tank and must
not exceed the “MAX OLEO” mark.
To turn on the machine, follow the procedure below:
Machine 5.000 W:
Turn the temperature thermostat knob N°07 (Fig.01) to the desired temperature and the
pilot lamp will light up.
When the oil reaches the desired temperature the pilot light will turn o.
Machine 8.000 W:
Turn both temperature thermostat knobs to the desired temperature. The pilot lights will
go on. When the oil has reached the desired temperature, the pilot lights will go out.

Oil levels are shown in FIGURE 03, for a perfect operaon and enhanced safety it is
necessary a strict respect for the oil levels.
3.2 Operaon Procedures
Aer the oil has reached the temperature indicated on the Thermostat Knob N°07 (Fig.01)
(approximate me from 7 to 9 minutes), introduce the products to be fried inside the
basket N°02 (Fig.01) and then dip the basket into the Tank N°01 (Fig.01) leaving the frying
me according to each product.

IMPORTANT
Be very careful when placing the food when the oil is heated up. Food must be
placed gradually (slowly). Sproung must be avoided. If sproung begins li up
the basket and slowly lower it back in the oil. Repeat this move as many mes as
necessary to avoid sproung. Sproung will be intense when lower temperature /
frozen food are placed in the heated oil.
IMPORTANT
This equipment has a safety system to ensure the operator’s integrity. The
equipment operaon must be according to the item “Operaon” of this manual.
Other procedures to operate the equipment are unsafe, in this condion the
equipment should not be used.
3.3 Safety System
This equipment is also equipped with a safety thermostat, which has the funcon of
turning o the resistance when the oil temperature reaches the maximum allowed limit.
If the fryer turns o and does not turn on again, i.e. the oil does not heat up again, turn o
the temperature thermostat, disconnect the machine from the power supply and wait for
the oil to cool down completely.
Then remove the plasc cover of the safety thermostat No. 01 (Fig. 04), on the back of the
machine, exposing the reset buon No. 02 (Fig. 04). Press the reset buon and observe if
it moves inward producing a “plec” sound. This indicates that the safety thermostat has
been acvated. If this occurs, do not use the fryer anymore and take it to an Authorized
Technical Service.

IMPORTANT
Do not use water jet directly on the equipment.
The equipment must be cleaned and sanized:
- Before being used the rst me;
- Aer everyday operaon;
- Whenever it will not be used for a prolonged period;
- Before pung it into operaon aer a prolonged period of inacvity.
Wash all parts with mild soap and water.
1 - Before starng to clean the machine, remove all oil.
2 - Before removing the OIL, turn of the machine and and wait for the total oil cooling.
Open the Valve ¾” N°10 (Fig.02) and let the OIL drain unl the Tank Nº 01 is emped
(Fig.01).
3 - Aer the complete removal of the oil from the tank, wash the internal poron of
the tank with water and mild detergent, rinse and dry it. For the remaining parts of the
machine wash with water and mild detergent.
IMPORTANT
Remove the plug from its socket before to start cleaning.
3.4 Cleaning and Sanizing

3.5 Cauons with Stainless Steels
The Stainless Steel may present rust signs, which ARE ALWAYS CAUSED BY EXTERNAL
AGENTS, especially when the cleaning or sanizaon is not constant and appropriate.
The Stainless Steel resistance towards corrosion is mainly due to the presence of chrome,
which in contact with oxygen allows the formaon of a very thin protecve coat. This
protecve coat is formed through the whole surface of the steel, blocking the acon of
external corrosive agents.
When the protecve coat is broken, the corrosion process begins, being possible to avoid
it by means of constant and adequate cleaning.
Cleaning must always be done immediately aer using the equipment. For purpose,
use water, mild soap or detergent, and clean the equipment with a so cloth or a nylon
sponge. Then rinse it with plain running water, and dry immediately with a so cloth, this
way avoiding humidity on surfaces and especially on gaps.
The rinsing and drying processes are extremely important to prevent stains and corrosion
from arising.
IMPORTANTE
Acid soluons, salty soluons, disinfectants and some sterilizing soluons
(hypochlorites, tetravalent ammonia salts, iodine compounds, nitric acid and others),
must be AVOIDED, once it cannot remain for long in contact with the stainless steel.
These substances aack the stainless steel due to the CHLORINE on its composion,
causing corrosion spots (ping).
Even detergents used in domesc cleaning must not remain in contact with the stainless
steel longer than the necessary, being mandatory to remove it with plain water and then
dry the surface completely.
Use of abrasives:
Sponges or steel wools and carbon steel brushes, besides scratching the surface
and compromising the stainless steel protecon, leave parcles that rust and react
contaminang the stainless steel. That is why such products must not be used for cleaning
and sanizaon. Scrapings made with sharp instruments or similar must also be avoided.
Main substances that cause stainless steel corrosion:
Dust, grease, acid soluons such as vinegar, fruit juices, etc., saltern soluons (brine),
blood, detergents (except for the neutral ones), common steel parcles, residue of sponges
or common steel wool, and also other abrasives.

4.1 Basic Operaon Pracce
4.1.1 Danger
Some areas of the electric device have parts that are connected or have parts connected
to high voltage. These parts when touched may cause severe electrical chocks or even be
fatal.
Never touch switches such as buons, turning switchs and knobs with your hands wearing
wet clothes and/or wet shoes. By not following these instrucons operator could be
exposed to severe electrical shocks or even to a fatal situaon.
4.1.2 Advertências
Provide sucient working space to prevent dangerous falls.
Water or oil can make the floor slippery and dangerous. To prevent accidents, the floor
must be dry and clean.
IMPORTANT
The change in the protecon system and the appliance safety devices will lead
to serious risks to physical integrity of the people during operaon, cleaning,
maintenance and shipping according to ISO 12100 standard.
The following safety instrucons have been elaborated to guide and instruct the users of
this equipment.
The machine has to be delivered only in perfect condions of use by the Distributor to the
user. The user shall operate the machine only aer being well acquainted with the safety
procedures described in the present manual. READ THIS MANUAL WITH ATTENTION.
4. Safety Pracces

Never touch or operate a manual override (buon, keys, switches, levers, etc.) by accident.
If a job is to be done by two or more people, coordinaon signals must be given at each
step of the operaon. The next step should not be started unless a signal is given and
responded to.
4.1.3 Warnings
Avoid mechanical shocks, as they may cause failure or malfuncon.
Prevent water, dirt or dust from entering the mechanical and electrical components of the
machine.
DO NOT ALTER the original features of the machine.
DO NOT DIRTY, TEAR OR REMOVE ANY SAFETY OR IDENTIFICATION LABEL. If any label is
illegible or lost, request a replacement from your nearest Technical Service.
4.2 Precauons and Observaons before Turning on the Equipment
IMPORTANT
Read the INSTRUCTONS in the manual before turning on the equipment. Make sure
that the informaon as understood.
4.2.1 Danger
An electric cable or electric wire with damaged jacket or bad insulaon could cause
electrical chocks as well as electrical leak. Before using the equipment, check condions
of all wires and cables.
4.2.2 Advices
Be sure ALL INSTRUCTIONS in this manual have been thoroughly understood.
Every funcon and operaonal procedure have to be very clear to the operator. Contact
your nearest Dealer for further quesons.
Any manual command (switch, buon or lever) shall be given only aer being sure it is the
correct one.
4.2.3 Cauons
The electrical power cable, responsible for powering the machine, must have sucient
cross-secon to support the electrical power consumed.
The electrical cables that are on the ground or next to the machine must be protected to

avoid short circuits.
4.3 Operaon
4.3.1 Advices
Do not work with long hair that could touch any part of the machine, as this could cause
serious accidents. Tie them up and back, or cover them with a scarf.
Only trained and qualied users may operate the machine.
NEVER operate the machine without any of its safety accessories.
4.4 Maintenance
4.4.1 Danger
With the machine switched on, any maintenance operaon is dangerous.
SWITCH OFF THE APPLIANCE BY PULLING THE PLUG OFF THE SOCKET DURING
MAINTENANCE.
IMPORTANT
Always disconect the plug from the outlet in case of emergency.
4.5 Advices
Electrical or mechanical maintenance must be done by qualied personal for such opera-
on.
The person in charge has to be sure that the machine is under TOTAL SAFETY condions
when working.

5. Analysis and Problems Solving
5.1 Problem, causes and soluons
The equipment has been designed to operate with the need of minimum maintenance but
the natural wearing caused by longer use of the equipment may occasionally cause some
malfuncons.
If such problem occurs with your equipment, refer to Chart 03 in which the most common
situaons are listed with recommended soluons.

6. Maintenance
The maintenance must be a group of procedures that have the objecve of keeping the
appliance in its best condion of operaon and increasing its life expectancy and safety.
* Cleaning – Check the item 3.3 Cleaning of this Manual.
* Electrical wiring – Check all the cables to avoid deterioraon and all the electrical contacts
about their ghtening and corrosion.
* Contacts – Turn on and o boom, emergency boom, reset boom, electric circuits,
etc. Check the appliance so that all the components are working correctly and that the
operaon is working normally.
* Installaon – Check the installaon of your appliance according to the item 2.1 Installaon
of this manual.
1 - Items to be veried and implemented monthly:
- Check the electrical installaon;
- Check the outlet tension;
- Measure the operang current and compare it to the Nominal one;
- Check all the eletrical terminal ghtening of the appliance, to avoid bad contact;
- Check the possible clearance of the shi of the electric motor;
- Check the wiring and the electric cable to avoid its overheang, decient isolaon and
mechanical breakdown.
2 - Items to be veried and implemented every 3 months:
- Check the electric components as ON/OFF Switch, Emergency Buon, Reset Switch, and
eletric circuit related to overheang, decient isolaon and mechanical breakdown.
- Check possible loosens in the bearings
- Check retainers, o´rings, v´rings and other sealing systems.
