deck panel is removed. Disconnect

AVOID DAMAGING HATCO® HEATED WELLS
 Check water level in all wells periodically to make
sure they are not allowed to run dry.
 Allowing unit to run dry during wet operation or
adding water during dry operating can cause
‘thermal shock’ and damage unit.
 If heated wells are operating wet and are allowed to
run dry, turn them off. Allow to cool before adding
water to avoid damaging unit.
 Turn off unit when filling with water. Do not splash!

WIRING DIAGRAM
 Each case has its own wiring diagram folded and in packet.
 See accompanying manual P/N 20-08064 for wiring diagrams
that specifically pertain to these models.
 Wiring diagram placement may be placed near ballast box,
field wiring box, raceway cover, or other related location.
GFCI [GROUND FAULT CIRCUIT INTERRUPTER]
 See illustration and requirement below.
OVERVIEW
 These Structural Concepts Impulse® cases are designed to
merchandise product at a range of temperature.
 Refrigerated units are designed to merchandise product at
5 °C / 41 °F or less temperatures.
 Refrigerated product must be pre-chilled to 5 °C / 41 °F or
less prior to being placed in merchandiser.
 These cases should be installed and operated according to
this operating manual’s instructions to ensure proper
performance. Improper use will void warranty.
 Improper use will void warranty.
NSF® TYPE
This unit is designed for the display of products in ambient store
conditions where temperatures and humidity are maintained
within a specific range.
 For NSF® Type 1 Conditions (most cases): ambient
conditions are to be at 55% maximum humidity and
maximum temperatures of 75 °F [24 °C].
 For NSF® Type 2 Conditions: ambient conditions are to be
at 60% maximum humidity and maximum temperatures of
80 °F [27 °C].
 If unsure if unit is NSF® Type 1 or 2, see tag next to serial
label. See SERIAL LABEL LOCATION & INFORMATION
LISTED / TECH INFO & SERVICE section for samples).
CAUTION! GFCI BREAKER USE
REQUIREMENT
If N.E.C. (National Electric Code) or
your local code requires GFCI
(Ground Fault Circuit Interrupter)
protection, you MUST use a GFCI
breaker in lieu of a GFCI receptacle.

 Performance issues caused by adverse
conditions/spacing issues are NOT warranted.
 Keep unit at least 15-feet from exterior doors,
overhead HVAC vents or any air curtain
disruption to maintain proper temperatures.
 Do not expose unit to direct sunlight or separate
heat source (ovens, fryers, stoves, etc.).

INSTALLATION: CASE REMOVAL FROM SKID / LINE-UP
1. Remove Case From Skid
A. Fork Lift
 To lift case up for lift-truck forks to slide into
position, use J-Bar Lift Tab (location #1 shown
below) or Support Rung (location #2 shown
below).
 Make certain case is well-supported on lift
truck. Move into position.
B. J-Bar or Dolly Only (No Fork Lift)
 See illustration at top right for J-Bar/Dolly case
removal instructions.
 Slide case to edge of skid.
 With several people in position, carefully slide
frame support rail to edge of skid.
 With several people in position, slide case
several more inches (off skid) and lower rear
frame support to floor.
 Once the rear frame support rail rests on the
floor, have several people supporting front of
case while skid is slid out from under case.
 After case is off skid, several employees may
be required to slide into position.
 Note: Illustration below reflects general outline
of sample case and does not reflect any
particular model or options).

2. Frame Support Rails
 Illustration below shows case with frame support
rails at underside. Note: Though underside of
soup case is shown, frame support layout is
applicable to all cases.
 Frame support rails must be shimmed.
 Shims will be provided with all cases.
 Note: After case is in position, it must be
sealed to floor to prevent entry or leakage of
liquid or moisture.
 Note: Below illustration reflects underside of
Soup Case. However Frame Support Rail
instructions apply to all cases.
3. Removable Front Panels
 Front panels of all units are able to be lifted
up and off (no screw removal).

PANEL REMOVAL / WYE CLEANOUT TEE, SOLENOID VALVE & WATER DRAIN FIELD HOOKUP
1. Front-Left Panel Must Be Removed to Access
 Caution! Only certified plumbers/mechanical
contractors are to access solenoid/Wye cleanout/
water drain.
 No screws are required. Simply lift front-left
panel up and off hooks.
 See illustration below.
2. Wye Cleanout Tee Access
 Remove customer-left bowl dispenser to access
Wye cleanout tee.

VOLLRATH® MODULAR DROP-IN RESERVOIR W/AUTO-FILL / ATTAINING PROPER WATER LEVELS
1. Modular Drop-In Auto-Fill Reservoir
Vollrath® Modular Drop-In Auto-Fill Reservoir
automatically maintains consistent water levels in hot
wells or soup wells.
The unit utilizes flexible tubing and a simple reservoir
with a float switch allowing for remote mounting with
multiple drop-ins. Features
 Maintains constant water level.
 Eliminates the need to monitor well and add water.
 6ft. cord and plug (NEMA 5-15P) is provided. No hard
wiring is required.
 Check valve/siphon brake prevents cross-
contamination of drain and potable water
 Overflow connection is provided.
 Control box mounts inside base enclosure.
 Power ON/OFF toggle switch.
 Solenoid valve closes if power is interrupted.
 Flexible hose is supplied for all connections.

2. Attaining Proper Water Level in Heated Wells:
 Recommended water level in Hatco®heated soup wells
is to be a minimum of 3/8” and maximum of 1/2” depth.
 Drop-in auto-fill reservoir height is carefully determined
during manufacturing process. Note: There should be
NO NEED to adjust the auto-fill reservoir height.
 Shipment of unit will likely cause air pockets to
permeate water lines. At setup, it will be necessary to
purge water lines of air to attain proper water level in
heated wells.

instructions.

START-UP & OPERATION [SOUP BAR MODEL DP647Q.4764]: INITIAL START-UP / PURGING
Merchandiser Initial Start-Up / Purging
1. Power Up Case
 Case will energize when properly field-wired.
 Caution! Only certified electricians are to
field-wire case!
 Illustration below has front “flip-up” panel
removed to show access to dials & switches.
2. Heated Wells On/Off Switch Control
 Each Heated Well has its own On/Off Switch
(see illustration below).
 Caution! Water MUST BE in heated wells
before turning on Heated Well switches!
 Caution! Heated Wells can get very hot!
Use extreme caution!
3. Heated Wells Temperature Control Dial
 Each Heated Well Temperature Control Dial
controls a different Heated Well.
 See illustration below for specifics on which
control dial controls each Heated Well.
4. Initial Startup: Heated Well Purging Procedure
Caution! Water Lines Must Be Purged at
Initial Startup or Heated Wells May Overflow!
>> During case shipment, air pockets may fill water
lines. At initial start-up, you must purge air from water
lines to attain proper water level in heated wells.
>> Follow these steps to assure proper purging of
water lines from Vollrath® Auto-Fill Reservoir to
Hatco® Heated Wells.
A. Confirm that case is level.
B. Confirm that case is properly connected to
water and power sources.
C. Make sure Drain Control Switch is closed.
D. Flip Auto-Fill Switch to ’ON’ position. Water
will begin to fill heated wells.
E. Solenoid will turn flow of water off at
pre-determined level.
Note: Recommended water level in Hatco®
heated soup wells is to be a minimum of 3/8”
and a maximum of 1/2” depth.
F. If water level in heated wells is ABOVE 1/2”
depth, flip Drain Control Switch to ‘OPEN’ position,
draining water from heated wells.
G. When water has fully drained from heated wells,
solenoid will make a “click” sound. You may now
switch Drain Control Switch back to ‘Closed’ position.
H. Water will, again, fill heated wells. You may
notice air bubbles coming up through drain. This is a
normal effect of the purging process.
I. Again, if water level in heated wells is ABOVE
1/2” depth, flip Drain Control Switch to ‘OPEN’
position, draining water from heated wells. Then,
after water has fully drained from heated wells, flip
Drain Control Switch back to ‘Closed’ position again.
J. Repeat previous step until water level in heated
wells is at 3/8” minimum to 1/2” maximum depth.
Note: If after 4 to 6 attempts, water level in heated
soup wells does NOT reach recommended levels,
contact Structural Concepts Technical Service
Department for guidance.

DAILY STEP-BY-STEP PROCEDURE [SOUP BAR MODEL DP647Q.4764]: BEGINNING / END OF DAY
Daily Step-By-Step Procedure: Beginning and
End of Day
A. At beginning of the day, verify that drain is
closed. If not, flip the Drain Control Switch to
‘Closed’ by pressing downward on the “O” area of
the switch (see illustration below-left).
B. Flip each Heated Well Switch and Auto-Fill
Switch to ‘On’ position by pressing downward on
the “I” area of the switch (see illustration below-left).
Water will fill wells to pre-determined levels and
then shut off (due to solenoid).
Note: Recommended water level in Hatco®
heated soup wells is to be a minimum of 3/8”
and maximum of 1/2” depth. If water fills wells
ABOVE these levels, see previous page for
purging process.
C. If Heated Well Temperature Control Dial is
not set at desired temperature, do so (see
illustration immediately below).
D. Insert pans into wells.
E. At end of day, flip all Heated Well Switches to
‘Off’ position (see illustration immediately below).
F. Also at end of day, flip Auto-Fill Switch to ‘Off’
position (or water will run all night)! To do so, press
downward on the “O” area of the switch (see
illustration below-left).
G. Then (after “E” and “F” are complete), open drain
by flipping Drain Control Switch to ‘Open’ by pressing
downward on the “I” area of the switch (see illustration
below-left).
H. Remove pans from heated wells. Clean as
specified in HATCO® HEATED WELLS - CLEANING
GUIDELINES & SCHEDULE section of this manual.

1. Trash Bin Removal
 Trash bins are at left and right of case.
 Trash bags are removable from each
trash bin.
 See illustrations at right.
 Note: Illustrations may not exactly
reflect your particular case.
 To remove trash bag, lift bin cover up
and off trash bin.
 After placing new bag in trash bin,
replace bin cover over top of trash bin
(to hold bag in place).
 Slide trash bin back under display
case.
2. Trash Chute Removal (For Cleaning)
See photos 1-4 below:
1. Trash chute is designed to lay flat
against front of case.
2. Slide fingers under edge and lift
upward.
3. Remove entirely from case.
4. See cleaning schedule for specifics
on cleaning methods.
