OVERVIEW
• Service Upper Section Heated Wells and Heated
Canopy With Ceramic Heaters: This unit is designed to
merchandise perishable, unpackaged products at a
range of temperatures.
• Product must be heated to the proper food-safe
temperature before placing in the heated wells. Failure
to heat food product properly may result in serious
health risks. This unit is for pre-heated product only.
• Cases should be installed and operated according to
this operating manual’s instructions to ensure proper
performance. Improper use will void warranty.
• Merchandising capabilities meet the required standards
for maintaining proper food temperatures and
sanitation.
TYPE I vs. TYPE II ENVIRONMENTAL CONDITIONS
This unit is designed for the display of products in ambient
store conditions where temperature and humidity are
maintained within a specific range.
• Type I display refrigerators are intended for use in an
area where environmental conditions are controlled and
maintained so that the ambient temperature does not
exceed 75 °F (24 °C) and 55% maximum humidity.
• Type II display refrigerators are intended for use in an
area where environmental conditions are controlled and

WIRING DIAGRAM
• Each case has its own wiring diagram folded and in its
own packet.
• Wiring diagram placement may vary; it may be placed
near ballast box, field wiring box, raceway cover, or
other related location.
POWER CORD AND PLUG MAINTENANCE
• Caution! Risk of electric shock.
• If cord or plug becomes damaged, replace only with
cord and plug of same type.
CAUTION! GFCI BREAKER USE REQUIREMENT
If N.E.C. (National Electric Code) or your local code
requires GFCI (Ground Fault Circuit Interrupter) protection,
you MUST use a GFCI breaker in lieu of a GFCI receptacle

LED lamps reflect specific size, shape, color, light output and overall
design. Any replacements must meet factory specifications.

CASE REMOVAL FROM SKID / REMOVABLE TOE-KICKS
1. Remove Case From Skid
Fork Lift
• To lift case up for lift-truck forks to slide into
position, use J-Bar Lift Tab (location shown).
• Make certain case is well-supported on lift truck.
Move into position.
J-Bar or Dolly Only (No Fork Lift)
• See illustration below for J-bar/dolly case
removal instructions.
• Slide case to edge of skid.
• With several people in position, carefully slide
frame support rail to edge of skid.
• With several people in position, slide case
several more inches (off skid) and lower rear
frame support to floor.
• Once the rear frame support rail rests on the floor,
have several people supporting front of case while
skid is slid out from under case.
• After case is off skid, several employees may be
required to slide into position.
2. Removable Toe-Kicks
• Toe-kicks are lifted up and off case.
• Slots in toe-kicks reside over hooks.
• Case magnets also hold toe-kick in position.
• Illustrations below show case after toe-kick
has been removed and reversed (for
illustrative purposes).

ADJOINMENT GUIDE: LOWERING FRONT PANEL FOR END PANEL ADJOINMENT
Adjoinment Guide
1. Lowering Front Panel
• Lowering front panel allows screws to be inserted
through inner end panels and into adjacent cases.
• To do so, you must first remove two (2) screws from
brackets located at front underside of case.
• Number of brackets vary depending upon case
length.
2. Adjoining End Panels
• Use wood screw to attach to adjacent case.
• After adjoinment screw has been attached, raise
front panel back up and reattach (2) screws in each
bracket.
• Drill bits and screws are provided in lineup kit.
• Number of brackets vary depending upon case
length.

3. Rear Adjoinment Cover Plate
• Removal of rear adjoinment cover plate
allows access to inner end panels
(at both ends of case).
• Attach through end panel to adjacent
case end panel with wood screws.
• Note: Drill bits for pilot holes and wood
screws are included in adjoinment kit.
• Return rear adjoinment cover plate to
case in reverse order it was removed.

ADJUSTING FRAME SUPPORT RAILS VIA SHIMS
1. Position & Align Case Alongside Other Cases
• Before adjusting levelers (or shimming frame support
rails), make certain that the case is in proper position
and, if required, aligned with adjoining case(s).
• This may require the repositioning of the case you
are installing or the already positioned case.
2. Cases With Frame Support Rails: Shim
• Illustration below shows case with frame
support rails.
• Shims will be provided with all cases that have
frame support rails.
• Use shims to level case.
• Note: After case is in position, it must be
sealed to floor to prevent entry or leakage
of liquid or moisture.

• The LED LIGHT SWITCH controls only the LED lights

LED LIGHT SWITCH / LED STYLE LIGHT FIXTURES
1. Light Switch
• Light switch at case rear controls heated canopy
LED lights only.
• Optional skirt lighting is daisy-chained from
accompanying cases.
• See CASE START-UP / MAIN POWER SWITCH
AND LED LIGHT SWITCH ACCESS section in
manual for general light switch location.
1. LED Style Light Fixtures
Removal of Faulty LED Lights:
• LED lights rarely require change-out.
• Contact Structural Concepts’ Technical Service
Department for replacement LED lights.
• Turn off LED light switch.
• To remove faulty LED light, follow these steps:
A. Disconnect plug from LED light.
B. Using both hands, grasp LED light assembly
(with its magnetic mounting clips). Pull
downward and off its shelf (or header).
C. Remove magnetic mounting clips from LED
light by pressing against flange part of clip
with thumb.
>> Note: Mounting clips MAY be riveted to shelf or
header. In such instances, simply remove LED light
from mounting clips by pressing against flange part
of clips with thumb.
Replacement of LED lights:
• Attach magnetic mounting clips onto LED light.
• Adjust magnetic mounting clips so they are
equally spaced on LED light.
• Reattach LED light assembly to its shelf/header.
• Position properly in shelf/header.
>> Note: If mounting clips are riveted to shelf (or
header), attach by placing LED in base of clip and
then snapping into clip at FLANGE SIDE.
• Press plug’s barrel-shaped insert all the way into
LED light.
• Important: If plug is not inserted ALL THE WAY
IN the LED light’s orifice, the light may not
energize. See “BAD” vs. “GOOD” insertion
illustrations in TROUBLESHOOTING (TO BE
PERFORMED BY STORE PERSONNEL)
section of manual.
• Turn LED light switch back on.

HATCO® HEATED BUFFET WELLS - START-UP AND OPERATION (AUTO-FILL HEATED WELLS)

Start-Up and Operation
1. Power Up Case
• Case will energize when properly field-wired.
• Caution! Only certified electricians are to
field-wire!
2. Heated Wells On/Off Switch Control
• Each heated well has its own On/Off switch.
• Caution! You must have product in heated
wells prior to turning on Heated Well switches!
• Caution! Heated Wells can get very hot! Use
extreme caution!
3. Heated Wells Temperature Control Dial
• Each heated well temperature control dial controls
a different heated well (as illustrated below).
4. Heated Wells Power / Auto-Fill Switch
• Each heated well has its own POWER (Heat) On/
Off switch located under each heated well
temperature control dial (as shown mid-right).
• Turning on the far-left POWER (Heat) switch
automatically activates the Auto-Fill system and
begins heating the water within wells that are also
turned on.
• Heated wells should be filled to 1 1/4” max. depth.
• To turn ONLY the auto-fill on, just turn the heated
well temperature control dial all the way down.
• Caution! You must have product in wells prior
to turning on heated well switches!
• Caution! Heated wells can get very hot! Use
extreme caution!
5. Daily Step-By-Step Procedure
A. At beginning of the day, verify that drain is closed. If not,
turn heated well drain valve to ‘Closed’ (shown below-right).
B. Turn on the far-left power on/off switch (with the “pitcher”
on it) to activate the Auto-Fill system. Note: Green indicator
light glows when on/off switches are properly activated.
C. Turn power switch on all other wells to ‘on’ position.
D. Turn temperature control knobs on all wells to desired
safe food temperature.
E. Allow units to preheat for approximately 30 minutes.
F, All wells will fill until water in far-left well reaches the
‘water level sensor’ in the far-left well.
G. During operation, the Auto-Fill system will maintain water
level automatically (using water level sensor).
H. Insert pans into wells.
I. At end of day, flip ALL heated well switches to ‘off’ position
to disable Auto-Fill (so water will not run all night)!
G. After item “I” is complete, crank heated well drain valve to
‘Open’ (see below) and drain units.
H. Remove pans from heated wells.
I. Clean pans (see HATCO® HEATED WELLS - CLEANING
GUIDELINES & SCHEDULE section of manual).

3. Overhead LED Lights
• Overhead LED lights are controlled by the
“LED LIGHT SWITCH” on rear panel.
• Note: LED driver is located in LED LIGHT
SWITCH / MAIN POWER compartment.

1. Heated Canopy (Ceramic Heaters) / Pre-Heat
• Press pre-heat button (one at on each thermostat).
Allow 25 minutes for preheat.
• Red light will come on while pre-heating.
• Red light will go off when case is fully pre-heated.
2. Overhead Ceramic Heaters: SCC

temperatures of overhead ceramic heaters.
• To increase temperature, press ▲UP key.

SCC PROPRIETARY THERMOSTAT CONTROLLERS: HEATED CANOPY WITH CERAMIC HEATERS
1. Main Power Switch / Individual Controls
• Main Power switch (at right of thermostats on
main control panel) controls power to heated
canopy’s ceramic heaters.
• Two (2) separate sets of controls operate left
and right heated surfaces (as shown in
illustration below).
2. SCC Controller Thermostat Settings
• To increase temperature, press ▲UP key.
• To decrease temperature, press ▼ DOWN KEY.
• If controllers are set at “0”, relays will be
de-energized.
• HEAT LED indicates that the relay is energized
and heater is on.
• Setting “1” is minimum heat.
• Setting “5” is medium heat.
• Setting “9” is maximum heat.
• Adjust settings accordingly to reflect your desired
food temperatures.
• After unit is adjusted, the control will automatically
save the user setting approximately 5 seconds
after the user stops adjusting the setting.
• Note: Should food temperatures significantly vary
from acceptable range, contact SCC Technical
Service. See SCC TECHNICAL SERVICE

• SCC Model FB9S-6HO.7355 Uses Hatco®
Heated Well Model HWBI-3MA 208V.
• Consult your Hatco Modular Built-In Insulated
Heated Wells Installation and Operating Manual
for specifics on your heated well.
2. Capabilities
• This model is capable of holding a variety of pan
combinations in its heated well.
