Sensor
Use
With the testo Saveris cooking oil probe, the total polar materials (TPM value) is
determined as a percentage. The TPM value enables a statement to be made
on the ageing of the cooking oil due to the effects of heat.
The following measuring tasks can be performed with the cooking oil probe:
Displaying the temperature of the cooking oil: Indicator for correct setting of
the deep fat fryer, checking of integrated temperature displays.
Displaying TPM values: Indicator for the ageing of the cooking oil.
The temperature of the cooking oil being measured must be at least
40 °C. The maximum operating temperature of the probe measuring tip
is 190 °C, for brief periods 200 °C.
Please adhere to the country-specific TPM limit values.
Operation check
For a simple function test without adjustment (accuracy +/- 3% TPM), we
recommend you carry out the measurement for commissioning your new
instrument in unused cooking oil at 150 to 180 °C.
You are recommended to carry out the function test every time the deep fryer is
refilled with fresh oil.

9.2.3 Special information for measurement
WARNING
Risk of burns!
Hot instrument parts (probe shaft / measuring head)!
-Do not touch hot instrument parts (probe shaft / measuring head) with
your bare hands.
-Allow the probe measuring tip to cool sufficiently before cleaning.
-In the event of burns, immediately cool the relevant spot with cold water
and consult a doctor if necessary.
9.2.3.1 testo Saveris penetration temperature probes
Carefully place the penetration temperature probe in the medium and carry out
the measurement. This should involve a minimum penetration depth of 10 mm.
A hole must be pre-drilled for core temperature measurement in frozen food. In
order to avoid heat dissipation, the hole should be at least 2.5 cm deep and its
diameter should approximately correspond to that of the probe measuring tip.
You can then insert the probe measuring tip carefully into the item being
measured and carry out the measurement.
Penetration temperature probe - fine:
For core temperature measurements in liquid and semi-solid foods. The
penetration temperature probe has an extra-fine penetration tip for minimal
punctures.
Penetration temperature probe - robust:
For core temperature measurements in solid foods. The penetration
temperature probe can also be carefully placed between individual packaging
units to determine the temperature.
WARNING
Sharp tip!
Risk of injury!
-Handle the probe measuring tip carefully before and after measurement.
ATTENTION
Sensitive sensor technology!
-Handle with care, do not expose to any kind of impact.

9Operation
18
9.2.3.2 testo Saveris cooking oil probe
Please ensure the following points before determining the cooking oil quality:
Take the product being deep fried out of the oil and wait until there are no
more bubbles rising (approx. 5 minutes).
Temperature measuring range of the cooking oil: min. 40 °C, max. 200 °C.
Keep the sensor away from metallic parts (e.g. deep-frying basket, pan
walls), as these may affect the measurement result. The minimum distance
from metal parts is 1 cm on any side.
Cleaning of the sensor is recommended before every measurement or when
the deep fat fryer pan is changed.
Switch off induction deep fryers during the measurement or take a cooking
oil sample, as the electromagnetic field can lead to incorrect readings.
Plastic components must not come into contact with the cooking oil.
“Temperature skeining” in the oil may cause measurement errors. Move
probe measuring tip in the deep fryer.
Cooking oil probe is fitted onto the testo Saveris multifunction handle.
1
Immerse the sensor in hot oil. Pay attention to min/max marks!
2
Move the probe measuring tip in small circles.
Auto-Hold enabled: Auto and the reading flash on the display, if the
temperature is within the permitted measuring range (40 –200 °C).
The final value is held.
or
Auto-Hold disabled: Temperature display no longer changes, a stable
final value has been reached.
Water may lead to an increased reading. If you suspect a measurement
error due to the presence of water: repeat the measurement after 5
minutes (do not deep fry during this time, keep oil/fat at > 100 °C). If the
new reading is lower, if necessary measure again after 5 minutes until
the reading stabilizes.
