•Whitebread,frenchbreadandsweetbreadareautomaticallybaked.

Yeastistheleaveningagentthatcausesthedoughtoexpandor"rise".Itis
alivingorganismthatispurchasedina dehydrated,dormantstate.Whenmixed
withwarmliquids,yeastisbroughtbacktolife.Itreactswiththesugarand
starchintherecipeandsubsequentlydevelopsgaseswhichiswhatcreatesthe
smallairpocketsfoundinbakedbread.Sincemakingbreadina breadmachine
isdifferentfromthetraditionalhandmademethod,youshouldneverdissolve
theyeastinliquid.JustcarefullyfollowtheinstructionsgivenintheWelbilt

BreadFlour
Flourisanorganicfoodproductthatcontainsmanyofthenatural
propertiesfoundinthewheat.Gluten,a naturalproteinfoundinwheat,iswhat
makesbreaddoughelasticwhenefficientlykneaded.Thehigherglutencontent
ofbreadflour,whichisavailableinmostlocalsupermarkets,iswhatproduces
highvolumeloavesofbread.Asanorganicfoodproduct,theglutenorprotein
levelofflourcanvaryformharvesttoharvest.Inordertostabilizetheprotein
levelsoftheflour,themillsadddoughconditionerssuchaspotassiumbromate
orascorbicacid(aformofvitaminC).

results.Youcandeterminewhetherornottheflouryouareusingcontains
ascorbicacidasa doughconditionerbyreadingtheingredientlistontheflour
bag.Ifyouareunabletopurchaseflourwithascorbicacid,youcantryadding
1teaspoonoffreshlysqueezedlemonjuicetotheingredientsinthebread
machinepriortopressingSTART.Infact,youmaywanttoconsideradding
1teaspoonoflemonjuicetoallofyourbreadrecipestoassureconsistentbaking
