Canning / Retort Control System
Introduction
Canning is a process of packaging and preserving the food in hermetically sealed containers. Retorting is
one of the most important steps in the canning process. It is a batch process. It is a batch process involving
thermal processing or cooking of canned product to destroy spoilage organisms in the food and is done by
using horizontal or vertical vessels called retorts.
The Control System:
The application is a batch process and involves the following steps:
1. Load Retort with canned product
The batch starts by loading cans (metal containers or glass jars) into the retort. The retort door is then
closed tightly and the air inside the retort is vented out.
2. Cooking
The canned product is cooked next. This is done by passing either steam or water into the retort. The
temperature is raised to around 250 deg. F and the spoilage organisms in the canned product are
destroyed.
3. Pressure relieve
The retort pressure, attained as a result of cooking at high temperature in a closed vessel is relieved
before the product is taken out. If the retort is filled with small cans, then the pressure can be relieved
immediately by blowing down to atmospheric pressure. If the cans are large, the retort pressure has to
be lowered slowly and then blown out. The cooling or relieving cycle can be chosen as desired to
match the retort and can size.
4. Drain Retort
The water in the retort is drained out after the pressure is relieved. The retort door is opened next. The
product can now be cooled at atmospheric pressure by passing water if desired.
5. Unload Retort
The cans are removed from the retort. The can filled baskets are passed through a cooling canal for
further cooling.
The application and the control system is shown in Figure 1.

Demonstration Guide
The MOD 30ML is performing the process simulation as well as the retort control. No physical input/output
are used in the simulation. The demo is setup in such a way that the entire batch can be run from the front of
the instrument.
1: Start the Batch: Load Retort with cans:
Activity: After downloading the demo to the instrument, the instrument should display the
START BATCH display. If not, press the Tag button to get this display. The Batch
Start display, should display OPC (Operator Command for starting the batch) next
to the SCROLL button. Press the UP arrow button to show START at the bottom
and then press the SCROLL button to accept it.
Look for: The batch will start now and LOADING RETORT will display at the top. After the
retort is loaded with cans, you will see CLOSE DOOR at the top of the display.
2: Close Door:
Activity: Press the SCROLL button a few times until you see DOR next to it. It should also
display OPEN at the bottom. Press the UP arrow to show CLOSE at the bottom and
then press the SCROLL button to accept it.
Look for: The retort door will be closed and water will start filling. You will see FILLING
WATER at the top of the display followed by COOKING GOING ON. After cooking is
done, there will be a process alarm and the red LED at the top will start flashing.
You will also see PR COOL YES/NO at the top. This is for the operator to choose
between pressure cooling or direct venting.
3: Confirm Pressure Cooling :
Activity: Acknowledge the process alarm by pressing the ALARM button at the top. The
display will switch to the Process Alarm Display. Acknowledge the alarm by
pressing the AUTO key. ACT will be displayed next to it after the alarm is
acknowledged. Press the TAG button next to switch to the Pressure display.

Look for: The pressure display will display PRESSURE and the value of the pressure at the
top.
Activity: You have two options now to continue:
1. Select Pressure cooling for the batch and select the cooling cycle.
2. Do not select pressure cooling so that all the pressure will be relieved by
venting out.
PRC (Pressure cool yes/no?) will be displayed next to the SCROLL button and
??? at the bottom. Press the UP or DOWN arrow to display NO or YES at the
bottom and then press the SCROLL button again to accept.
Look for: Case 1: If you selected NO, you will notice the pressure going down rapidly.
Press the TAG button to switch to the Batch display. The display will show
RELIEVIN PRESSURE at the top. After pressure is relieved, the water in the retort will
be drained and it will display DRAINING WATER at the top of the display. This will
be followed by a display OPEN DOOR at he top.
Case 2: If you selected YES, you will notice a process alarm. Press the
ALARM button to display the alarm CONFIRM PR COOL. This alarm is displayed to
let the operator know that a pressure cooling cycle needs to be selected.
Acknowledge this alarm and then press the TAG key to switch to the
PRESSURE display. Press the SCROLL button to display CYC next to tit and
then press the UP / DOWN button to select between CYCLE 1 or CYCLE 2. The
difference between the 2 cycles is the rate at which the retort is cooled and the
pressure is relieved. You will notice the name of the selected cycle displayed at
the top. The display will show COOLING CYCLE 1 or COOLING CYCLE 2 at the top.
After pressure is relieved, the water in the retort will be drained and it will
display DRAINING WATER at the top of the display. This will be followed by a
display OPEN DOOR at he top.
Activity: Open the retort door by pressing the SCROLL button to show DOR next it and
then by pressing the UP / DOWN button to show OPEN at the bottom and then by
pressing SCROLL button again.
Look for: After you open the door, the retort will unload the cans and the display will show
UNLOADING CANS at the top. The batch will be complete after the cans are unloaded
and a message BATCH COMPLETE will be displayed at the top. This will be followed
by a process alarm.
Activity: Press the ALARM button to display the alarm and acknowledge it. Switch to the
operating display by pressing the TAG button.
Look for: The operating display (Batch) will display START BATCH at the top. You can run
the next batch by displaying OPC next tot he SCROLL button and then by
repeating from Step 1 above.

Benefits:
•The entire batch can be run from the instrument displays.
•The operator can display and manipulate on one instrument, all process and
calculated values associated with the process unit.
•The displays are programmable and are highly interactive. Instructions and
guidelines on how to run the batch and how to control the process are
displayed right on the instrument display and it makes it simpler for even an
inexperienced operator to operate.

operation to minimize mistakes.
