Openthelidandremove thecookinggrids andpile
thecharcoalon the charcoaltray.Donotbuildtoo
largeofafire.Werecommendstarting afirewitha
maximumof3.5poundsofcharcoalandaddingmore
asneededduringcooking. Neverfillcharcoalabove
theupperlevel of theTray.
You caneasilyadd charcoalorspreadoutyourcoals
through access doorwhilecooking.Werecommend
you wearflameretardantBBQmittstoavoidhot
surfaces.
TherearetwoAirVentson bothsides ofthelid.You
canadjusttheAirVentstocontroltheflowofairinto
yourgrill.Bycontrolling theflowofair, you canadjust
theflamelevelinyourgrill.(Ex:Opening theAirVents
will allowyou tobuildabiggerfire.)
You canalsouse thecrank handletoadjustthe
CharcoalTraytodifferentlevelstocontrolgrilling
temperature.Turnthecrank eitherclockwise or
counter-clockwise until thedesiredheightis
achieved.(Crank will stop whenattop oftravel)

Cleaning ExteriorStainless SteelSurfaces
Weatheringandextremeheatcan causeexterior
stainlesssteelsurfaces toturntan incolor.Machine
oilsusedinthe manufacturingprocess ofstainless
steelcanalsocausethistanningcolor.Beforeinitial
use,use aStainlessSteelCleanertopolishthe
stainlesssteelsurfaces ofyourgrill. Neveruseastiff
wirebrush,brassbrush orabrasivecleanersbeause
theywillscratchthestainlesssteelsurfaceofyour
grill.
Cleaning TheCooking Grids
Beforeinitialuse,andperiodically,washyourCooking
Gridsinamildsoap andwarmwatersolution.You
can useawash clothorvegetablebrushtoclean your
Cooking Grids.Then coatbothsidesoftheCooking
Gridswithalightcoatofvegetableoil.
Cleaning TheGrease/AshTray
Toreduce the chanceoffire,the Grease/Ash Tray
shouldbe visuallyinspectedbeforeeachgrilluse.
Remove anygrease and ash,thenwash Grease/Ash
Traywithamildsoap and warmwatersolution.
Cleaning TheInsideofTheGrill Lid
Greasecan haveatendencytobuildup ontheinside
ofthe Grill Lidandcoulddripontodeck orpatiowhen
thelidisopened.Visuallyinspecttheinsideofthe
Grill Lidandbowlbeforeeachgrilluse.Removeany
greaseandwashwithamildsoapandwarmwater.
Neveruseastiff wirebrush,brassbrush,orabrasive
cleanersbecausetheywillscratch thestainless steel
orcauseittorust.

Frequencyofcleanup isdeterminedbyhowoftenthe
grill isused.However,atleastevery3monthsyou
mustgivetheentiregill athoroughcleaning to
minimize yourriskoffireandkeepthegrill intop
shape.Followthese steps:

Preparing YourGrill ForInitialUse
Beforecooking onyourgrill forthe firsttime,you
shouldburnoffthegrilltoeliminateanyodoror
foreignmaterial. Buildasmall fireon the Charcoal
Tray.Close thelidandposition the airventsapproxi-
matelyonequarteropen.Thisburnshouldbe
sustainedforatleast30 minutes.Beginincreasing
thetemperaturebyopeningtheairventhalfwayand
addingcharcoalthroughthecharcoalaccessdoor.
Yourcharcoalgrillisnowreadyforuse.
CharcoalGrilling
AlwayswearaflameretardantBBQmitt when cooking
onyourgrillorwhen addingcharcoaltothe Charcoal
Tray.Charcoalisrecommended,howeverwoodora
combination ofwoodandcharcoalcouldbeusedas
afuel.
RemovetheCooking Gridswhenstarting thefire(see
Using Charcoal).Startfireonthecharcoal. Everyonce
forawhileadd somecharcoalaccordinglytosustain
thefire.UseflameretardantBBQmittswhen replac-
ingtheCooking Grids.
Adjusttheairventstoregulatethetemperature(open
theventstogetahighterflame,andgraduallyclose
theairventstolowertheflame).
AdjusttheheightoftheCharcoalTraybymoving the
crankup ordown.
Byadjusting the heightofthe CharcoalTray,you can
controlhowclosetheheatistoyourfood.Placing the
CharcoalTrayatthehighestposition isidealfor
searing.Placingthe CharcoalTrayatlowerpositions
allowsyoutoroastorsmokeyourfood.
Remove charcoalandfood remnantsfromCharcoal
Tray.CleantheTraywithafiberpad ornylonbrush
andwashwithamildsoapandwarmwatersolution.
Rinse thoroughlyandletdry.
