TG ROTISSERIE OVEN MODELS
BEFORE USING THE OVEN FOR THE FIRST TIME,
CAREFULLY READ THIS ENTIRE MANUAL.

following these instructions to ensure the safe and proper
installation, operation, and maintenance of the ovens and warmers.

in the handling, operation, cleaning, and repair of the ovens and

GENERAL
The TG Series Rotisserie Ovens feature stainless steel interior and exterior for ease
of cleaning. The rotor system, spits, chicken racks or baskets and combination
convection and radiant heat provide thorough cooking and even browning yet
eliminate hot spots. Oven controls provide “Manual” operation where the END TIME
or PROCESS TIME can be preset.
Model TG50-M:
The grease drawer can be completely removed for cleaning. A tempered glass door
on the operator/customer side, and quartz lighting promote visual appeal and
stimulate customer interest.
Model TG110-M, TG330-M and TG550-M:
The grease drawer has a drain plug for elimination of excess fat and can be
completely removed for cleaning. Tempered glass doors, both front and back, and
quartz lighting promote visual appeal and stimulate customer interest.
Doors can be re-hinged; contact your local service agency.
Ovens are available in following seizes:
TG50 - Oven with 3 spits (6-9 chickens)
TG110 - Oven with 4 spits (12-20 chickens)
TG330 - Oven with 7 spits (28-35 chickens)
TG550 - Oven with 14 spits (56-70 chickens)

INSTALLATION
Immediately after unpacking the oven, check for possible shipping damage. If oven is
found to be damaged after unpacking, save the packaging material and contact the
carrier within 15 days of delivery.
TG550-M and TG330-M are secured to the skid with four screws which must be
removed.
WARNING
Prior to installation, test the electrical service to assure that it agrees with the
specifications on the machine data plate located on the right side panel near
the controls. (for the TG50-M on the upper right if you face the back of the
oven)
LOCATION
The oven may be placed where cooking may be observed to enhance customer
awareness, but must be installed on a level surface if the oven or warmer is not on
casters.
The installation location must allow adequate clearances for servicing and for proper
operation of the front and rear doors.
WARNING
A minimum wall clearance of 10” (254 mm) from any glass, and 4" (102 mm)
from each side panel must be maintained.
Keep the space around the bottom and the ventilation openings in the top of the units
free of obstacles to guarantee a good air flow in the electrical compartment.
LEVELING
1. Place oven in the installation position and place a carpenter's level on top of
the oven.
2. Turn the adjustable legs to level the oven front-to-back and side-to-side.
WARNING
The oven should not be accessible to the customer. Hot glass and parts can
cause burns.
LEGS/CASTERS
Counter models, TG110-M, TG220-M and TG330-M , are furnished with 11/2" legs.
TG550-M is furnished with 2 swivel and 2 locking swivel casters.

ASSEMBLY
Place the two bottom plates in the oven. The two plates slant to the middle to allow
fat to drip into the grease drawer.(See the above figure).
The TG5500-M bottom plates are the same size and equal to the TG330-M.
NOTE: Bottom plate on the customer side is smaller in the top unit of the TG550-M.
The model TG50-M does not feature removable bottom plates.
SUPPLEMENTAL INSTALLATION INSTRUCTIONS
(For model TG550-M)
WARNING
Safety standards require that, when this appliance is properly connected to the
electrical power supply using flexible conduit, adequate means be provided to limit
movement of the appliance without depending on or transmitting stress to the
electrical conduit. This means that, as part of the installation, the unit must be
secured to the building structure (typically either wall or floor) to limit the
movement of the appliance and, thus, helping to prevent damage to the conduit
during cleaning, maintenance and service operations.
A tether bracket, as shown in the figure below, is installed along with the caster to
one corner of the unit. The remaining open hole in the center of the tether bracket is
to be used to secure one end of the tether (locally supplied chain, cable, etc.). The
other end of the tether is to be secured to an anchoring point in the building structure.
Note: Length of tether must be shorter than the flexible conduit to make sure that
during appliance movement, no stress is transmitted to the conduit.
Following installation, check to confirm that, when the appliance is
moved to the limits of the tether in each direction, no stress is
transmitted to the electrical conduit.

INSTALLATION CODES AND STANDARDS
In the United States, all STG series ovens and STW series Warmers or combinations
must be installed according to the following codes:
State and local codes.
National Electric Code, ANSI/NFPA (latest edition). Copies may be obtained from the
National Fire Protection Association, Batterymarch Park, Quincy, MA 02269.
In Canada, all STG series ovens and STW series Warmers or combinations must be
installed according to the following codes:
Local codes.
Canadian Electric Code, CSA C22.1 (latest edition) available from the Canadian
Standard Association, 5060 Spectrum Way, Suite 100, Mississauga, Ontario, Canada
L4W 5N6.
ELECTRICAL CONNECTIONS
WARNING
Electrical and grounding connections must comply with the applicable
portions of the national electrical code and / or other local electrical codes.
WARNING
Disconnect electrical power supply and place a tag at the disconnect switch
indicating that you are working on the circuit.
WARNING
Appliances equipped with a flexible electric supply cord are provided with a
three- or four-prong grounding plug. This plug must be connected into a
properly grounded three- or four-prong receptacle. If the receptacle is not the
proper grounding type, contact an electrician. Do not remove the grounding
prong from this plug.
Access the electrical connection point by removing the side panel(s) where the
controls are located.
WARNING
Ensure that the electrical power supply agrees with the specifications on the
oven's data plate and complies with the wiring diagram, located behind the
oven side panel and under the drive motor

BEFORE FIRST USE
WARNING
Disconnect electrical power before cleaning.
Oven must be "burned in" to release any odors that might result from heating the new
oven surfaces.
1. Clean accessories, oven both inside and outside, with warm soapy water. Refer
to "Cleaning" in this manual for further instructions.
2. Rinse thoroughly and wipe dry with a soft clean cloth. Avoid water contact with
quartz lamps.
3. Operate oven at maximum temperature setting of 480°F (249°C) for 45 minutes.
Smoke with an unpleasant odor will normally be given off during this burn-in
period. Provide adequate room ventilation and avoid inhaling.
WARNING
Refer to "Cleaning" in this manual for further instructions how to clean
the quartz lamps.
OPERATION
WARNING
Hot glass, grease, and parts can cause burns. Use care when operating and
servicing the oven.
WARNING
Check the grease drawer after each cooking process and empty already when
about half full to avoid overflowing. Refer to EMPTYING GREASE DRAWER.
WARNING
Grease will be hot immediately after cooking. Allow grease to cool or use
extreme caution and wear insulated gloves or safety mitts.

OVEN CONTROLS TG50-M
Thermostat
The thermostat has 2 functions: (A) it activates the quartz lamp, and (B) it controls
the oven temperature. The thermostat knob is graduated from 0 ºF to 480°F (250 ºC),
and the temperature can be set by turning the thermostat knob in a clockwise
direction.
Timer
The timer has 2 functions: it is (A) the power ON/OFF switch, and (B) the timer. Oven
time can be set between 1 and 120 minutes (maximum) by turning the timer knob in a
clockwise direction. When the timer is set between 0 and 15 minutes, only the rotor
will operate so that the oven may be loaded without the fan motor and the healing
elements being on. When the timer is set above 15 minutes, the following two
functions can be selected:
When the thermostat knob is in off position ( ), only the quartz lamp will switch on
for the time selected.
When the thermostat has been set at the required oven temperature, the heating
elements and the fan motor will switch on immediately. The heating elements,
quartz lamp and fan motor will continue to operate for the amount of time you have
selected.
Cooking
1. Refer to Loading accessories into the oven.
2. Close the oven door and keep it closed during the whole process.
3. Set thermostat to the desired temperature.
4. Set the timer to the desired cooking cycle time.
If greater than 15 minutes, set to desired time.
If less than 15 minutes, turn timer past “15”, then turn to desired time.
The oven will begin cooking immediately. After the preset temperature has been
reached, the heating elements will cycle on and off to maintain the set temperature.

The quartz lamp, fan and heating elements will turn off when the timer reaches "0."
The rotor will continue to turn until the timer reaches the OFF position (approximately
8 minutes), at which time the bell will give a signal.
OVEN CONTROLS TG110-M, TG330-M AND TG550-M
Thermostat
The dial on the thermostat is graduated from 150 to 480°F (250 ºC), and the
temperature can be set by turning the thermostat dial a clockwise direction.
Timer
Oven time can be set between 1 and 120 minutes by turning the timer knob in a
clockwise direction.
Selector switch
The switch has three positions:
0 - position The oven is OFF.
- position Only the rotor-system is rotating.
- position In combination with the Thermostat and Timer, a cooking process
can be set.

Cooking
1. Refer to Loading accessories into the oven.
2. Close the oven door and keep it closed during the whole process.
3. Set the selector switch to the -position.
4. Set the thermostat to the desired temperature.
5. Set the timer to the desired cooking cycle time.
If greater than 15 minutes, set to desired time.
If less than 15 minutes, turn timer past “15”, then turn to desired time.
The oven will begin cooking immediately. After the preset temperature has been
reached, the heating elements and the lamp on the operator side will cycle on and off
to maintain the set temperature.
The quartz lamps, fan and heating elements will turn off when the timer reaches "0",
at which time the timer stops in the end position. The bell will give a signal.

PREPARING THE PRODUCT
WARNING
The Oven is not designed to roast frozen foods.
Use only fresh or previously thawed product.
Clean hands, all work areas and tools before and after preparing poultry to
avoid cross-contamination.
Maintain proper sanitation at all times.
LOADING PRODUCTS ONTO ACCESSORIES
NOTE: See features and options for the possibilities for your oven.
Make sure the product weight is evenly balanced on the accessory.
To load a chicken or garnish hen you must do the following: (see fig. below)
Tuck the wings to the back.
Tie the legs.

LOADING PRODUCTS ONTO SPITS
WARNING
Skewers are sharp. Be very careful when loading the product.
V Spit (Optional)
Skewer spit into the whole poultry so that the point goes through the rear then the
head (see fig. below).
Leave approximately V2" (1.2 cm) between each chicken to permit proper
browning.
Fork spit (Optional)
Skewer spit into the whole poultry so that the point goes through the rear then the
chest and thighs (see fig. below).
Leave approximately 2" (1.2 cm) between each chicken to permit proper
browning.
For TG50-M: If chickens are over 2 ½ lbs, place the two points of the spit
though the bottom and out of the neck of the chicken.

Turkey spit (optional)
You must remove the rotor assembly from the oven.
(see fig. below, model STG7 is shown).
First remove the left end bushing and the left turkey fork from the spit.
Apply the turkey
Attach the left turkey fork and the end bushing.
Hang the turkey spit in the oven to roast one whole turkey.
Loading the product onto Chicken Racks (Optional)
Place the chicken on a rack, breast forward, with legs down and wings up.
Make sure the product is not sticking out of the racks. Shown below is a 4 rack
chicken rack for the STG7. Five rack chicken racks for the STG7 and 3 rack chicken
racks for the STG5 are available as an option.
Loading products in a basket (TG110-M, TG330-M and TG550-M)
Load the chickens, breast up, in the basket (see fig. below)

Loading products in a basket (TG50-M)
1. Load small parts in the basket (s). Basket supports can hold two baskets each
(See the figure below ).

LOADING ACCESSORIES INTO THE OVEN (TG330-M AND TG550-M)
1. Turn the selector switch dial to rotate rotor
2. Turn dial to “0” to stop rotation when the hole pattern is located at the bottom of
the oven as shown in the left figure below.

3. Verify that the hole pattern is identical to the illustrated hole pattern shown in
middle figure above.
4. If the hole pattern does not mach the middle illustrated hole pattern, but does
match the hole pattern as in the right figure above:
a. Take the rotor assembly out of the oven.
b. Flip rotor assembly.
c. Place rotor assembly back in oven.
d. Repeat steps 2-4 above.

5. Load accessory with product into oven. Make sure the product is distributed
evenly. (See the next page for further instructions on loading specific
accessories into the oven.
6. Turn to to rotate rotor.
7. Turn to “0” to stop rotation.
8. Load accessory with product into the oven.
9. Repeat steps 7-9 until all loading is complete.
10.Close oven door.
WARNING
When you load any accessory with product into the oven, make sure the
product clears the top of the oven and no part of the product is sticking out.
Check this by allowing the rotor to make one entire rotation.
Do not mix accessories on the rotor.
Loading Spits into the Oven (TG330-M and TG550-M)
1. Place the skewer into the small outside hole on the rotor end plate on your left
(as you face the oven). The back of the V-shape spit should be pointing towards
you (see fig. below).
2. Fit the other end on the spit into the small corresponding holes on the rotor end
plate on your right (as you face the oven).
3. Make sure the spit is level. If spit is not level make, sure you are using the
correct holes on the rotor end plates.
Loading Fork Spits into Oven
1. Place sharp end of spit into holes on the rotor end plate on your left (as you face
the oven). (see fig. below)

2. Fit the opposite end of spit into corresponding holes in the rotor end plate on
your right.
Loading Racks or Baskets into Oven (TG330-M and TG550-M)
A Chicken Rack or Basket all load the same. Loading a basket is shown (see fig.
below).
1. Place one end of the accessory on the bolt on the rotor end plate.
2. Place the other end of the accessory on the corresponding bolt on the other
rotor end plate.
Make sure the accessory is level.
LOADING ACCESSORIES INTO THE OVEN (TG50-M)
When loading poultry-filled spits into the oven, the breast of birds that are skewered
through the chest and thighs should face the operator. Make sure the bird will clear
the top of the oven. If the bird does not clear the top of the oven, re-skewer as
described in “PREPARING THE PRODUCT”.

2. Place sharp end of spit into holes on the rotor end plate on your left (as you
face the oven). Take care of even loading (See the figure above )
3. Fit the opposite end of spit into corresponding holes in the rotor end plate on
your right. (this end is slotted so that it locks onto the rotor end plate).
A pin on each side of the basket support fits into the holes near the outside of the
rotor-plate.
Rotating the rotor TG50-M
1. Set the timer to a position between 0 and 15 to allow the rotor to advance to
the next position to be loaded. Turn the timer OFF and load the next spit or
hang in the next basket.
2. Repeat until all loading is complete.

Rotating the rotor TG110-M
1. Turn the selector switch dial to rotate rotor.
2. Turn to “0” to stop rotation.
3. Load accessory with product into the oven.
4. Repeat until all loading is complete.
