1. INTRODUCTION
1.1 PURPOSE OF THE MANUAL
This publication contains all the infor ation
necessary for the installation, use and aintenance
of the anual flywheel slicing achines to be used
for food, with circular blade, odels 300L.
The purpose of this anual is to allow the user,
above all the direct user, to take every precaution
and arrange all hu an and aterial eans
necessary for a safe and lengthy use of these
achines.
1.2 KEEPING THE MANUAL
This anual ust be given to the person who will
use and aintain the achines and this person will
keep the anual in a safe and dry place, ready to be
used.
We reco end that a copy be kept on file.
For any correspondence with the anufacturer or
authorised personnel, please refer to the
infor ation on the plate and the achine serial
nu ber.
The anual ust be kept for the entire life of the
achine and in case of need (ex. any da age to
even a part of the anual that akes consulting it
difficult) the user ust acquire a new copy
exclusively fro the anufacturer.
The user ust let the anufacturer know the
address of any new owner of the achine.
1.3 USE OF THE MACHINE
The use and configurations of the achine are the
only ones allowed by the anufacturer; do not try to
use the achine differently fro the indications.
The achines are to be used for cutting only food
products of the type and size indicated in the
following paragraphs.
The anufacturer declines all responsibility derived
fro an i proper use or use by personnel who has
not read and fully understood the contents of this
anual; changes and/or repairs carried out on one’s
own; the use of spare parts that are not original or
not specific for the type of achine..
For any explanation or doubts on the contents of this
anual, please contact i ediately the
anufacturer or an authorised technical assistance
service and quote the paragraph nu ber of the
required subject.
2. GENERAL INFORMATION
2.1 MACHINE LIMITS, SAFETY REGULATIONS
The achine has been designed and ade to slice
food products of the type and size as indicated in
paragraphs 3.1, 3.2, and 3.4.
Environ ental conditions for using the achine
The operating environ ent ust have the following
characteristics:

The achine cannot be used in open areas and/or
exposed to at ospheric agents and in places with
fu es, s oke or corrosive and/or abrasive dust,
with the risk of fire or explosion and in any case
where the use of antideflagrating co ponents are
prescribed.
General safety regulations
The slicing achine ust be used only by personnel
who has carefully read the contents of this anual.
The operators ust be over 18 years of age, in
perfect ental and physical conditions, have the
right attitude and capacity (with the necessary
knowledge for anoeuvring and nor al
aintenance of si ple echanical and electrical
co ponents).
For a safe use of the achine follow the
instructions below:
Install the achine according to the
instructions in the paragraph “Installation”;
Install the achine so that it is far fro
people who ust not use it, especially
children;
Do not be distracted while using the achine;
Do not wear loose clothing or open sleeves, if
necessary use headgear to keep hair out of
the way;
Do not let anyone co e close to the achine
while in use;
Do not re ove, cover or change the plates
that are on the achine and, if they are
da aged, replace the i ediately;
Do not re ove the protective devices and do
not change or exclude the echanical
protective devices;

Only slice per itted products; do not try to
slice any products that are not allowed;
The area around the achine, where the food
is laid and the floor where the operator works
ust always be kept clean and dry;
Do not use the achine as a support surface
and do not place any object on it that does not
pertain to nor al cutting operations;
I ediately stop the achine and call the
technical assistance service in the case of
ano alous function, suspect of breakages,
incorrect ove ents, unusual noises, etc.;
Always use gloves that are resistant to cutting
and tearing for the cleaning and aintenance
operations;
The goods to be cut are to be placed on and
re oved fro the sliding overplate only when
the plate is co pletely retracted (far fro the
blade) and the carriage all the way towards
the operator;
No cutting accessories are allowed unless
supplied by the anufacturer;
For any extraordinary intervention (belt
replace ent, blade replace ent, etc.) please
contact the anufacturer or authorised
assistance personnel.
2.2 GUARANTEE AND MANUFACTURER’S
RESPONSIBILITY
The guarantee of a good function and a co plete
confor ity of the achines, that are to be used
accordingly, depends on the correct application of
the instructions contained in this anual.
The anufacturer declines all direct and indirect
responsibility deriving fro :
-Not following the instructions in the anual;
-Persons using the achine who have not read
and understood the contents of this anual;
-Using the achine so that it does not confor
to specific regulations in force in the country of
installation;
-Unauthorised changes and/or repairs to the
achine;
-The use of accessories that are not supplied by
the anufacturer and spare parts that are not
original;
-Outstanding events.
If the achine is sold or given away, this
auto atically eans that the anufacturer is no
longer responsible unless the relative anual
acco panies it.
If the achine is transferred to another user in a
country with another co unity language it is the
first user’s responsibility to supply a correctly
translated copy of this anual in the language of the
country where the achine will be used.
In the case of transfer of the achine the first user
ust let the anufacturer know the address of the
new user so that he can be reached for any
indispensable co unications.
The original text of this anual, in the Italian
language, it to be considered the sole reference for
resolving any interpretative controversy pertaining to
translations into co unity languages.
2.3 THE USER’S OBLIGATIONS
The user ust scrupulously observe the instructions
in this anual for the anufacturer’s guarantee to
be valid and particularly:
-Always respect the li its of the achine;
-Always carry out a constant and diligent
aintenance;
-Make sure the persons using the achine are
qualified and able to do so, including the fact
that they ust have read this anual.
2.4 PLATES
The following plate is installed on the achine:
-anufacturer’s identification plate, achine plate,
technical data plate; placed on the base, as shown
in the figure.

3.2 PRODUCT THAT CAN BE SLICED
The following are products that can be sliced:
-All types of cold cuts (cooked, raw, s oked);
-Boneless eat (cooked or raw at a te perature
of no lower than +3 °C);
-Bread and cheeses (those that can be sliced,
such as Gruyere, Fontina, etc.).
3.3 PRODUCT THAT CANNOT BE SLICED
The following are products that cannot be sliced
because they could cause da age to people and
equip ent:
-Frozen foods;
-Deep-frozen foods;
-Food with bones ( eat and fish);
-Vegetables;
-Any other product that could be sliced but not
eant for consu ption.
ATTENTION: Do not try to slice products that are not
allowed.
4. DESCRIPTION
4.1 UNPACKING
Check that the packaging is unopened and
unda aged; otherwise i ediately infor the
forwarding agent or the area agent.
To take the achine out of the packaging proceed as
follows:
1. Cut and re ove the plastic straps;
2. Re ove the staples fro the top of the box;
3. Open the box and take out the copy of the
instruction anual which is on top of the
polyurethane protection;
4. Continue as indicated in the anual;

5. Push the upper cardboard box down (1) using
the flaps so that the next step is easier, that is,
re oving the polyurethane protection and the
corner reinforce ents (2);
6. Re ove the above entioned protection and
the corner reinforce ents;
7. Lift and take out the achine which is wrapped
in a sheet of transparent polyethylene;
ATTENTION: The achine ust be lifted by two people,
taking into account that it weighs ore on the side
where the knife is.
8. Once this operation is over, check the contents of the box and ake sure it corresponds to the label on the
outside.
WARNING: The packaging co ponents (plastic straps, cardboard, polyurethane foa ) can be thrown away with
nor al solid wastes and therefore there is no difficulty in disposing of the .
However it is advisable to dispose of products separately (differential collecting) in confor ity with the regulations
in force for adequate recycling.
DO NOT DISCARD THE PACKAGING PRODUCTS IN THE ENVIRONMENT!

4.3 GENERAL DESCRIPTION
The slicing achine has been designed and ade to
offer axi u safety when in use, during cleaning
and ordinary aintenance; axi u hygiene fro
the use of inoxidisable aterials or adequately
protected against oxidisation together with an
attentive design of all the parts that co e into
contact with food; axi u cutting precision and
capacity together with sturdiness and reliability of
the structure.
The achine is essentially ade up of a base that
holds a circular blade that is vertically ounted and
a sliding carriage on bars, parallel to the cutting
edge of the blade, which in turn holds a food plate.
The food plate is ade up of a base plate and an
overplate which slides at right angles to the edge of
the blade for slicing the food; the overplate also has
an appropriate selfstopping device, which can be
regulated in height, to keep the product in its proper
place during cutting operations (food press).
Carriage ove ent and blade rotation are
co pletely anual; by activating rotation of the
flywheel with the special handle the carriage is put
into otion and at the sa e ti e with a chain
trans ission the blade is turned.
The product is cut during the forward ove ent of
the carriage, parallel to the blade; the thickness of
the slice is regulated by a echanical device which
is auto atically started every ti e the carriage
co es back, aking the sliding overplate
transversally towards the blade, with a value which
is pre-deter ined by the graduated handwheel.
All the co ponents of the achine are ade of a
light alu iniu alloy, in stainless steel and plastic
for food products as according to the sanitary
regulations in force.
The achine has a sharpener which is extre ely
easy and safe to use.
The food plate, sharpener, slice deflector and blade
protection can be re oved for cleaning.
4.3.1 Risks during use
DO NOT use the achine if you are not in perfect
psycho-physical condition and DO NOT let anyone
co e near during use; concentrate when loading
and cutting the product.
Pay attention!
Only cut products which are allowed; DO NOT try
cutting products which are forbidden.
DURING CLEANING, LUBRICATION AND BLADE
SHARPENING ALWAYS USE PROTECTIVE GLOVES
WHICH ARE RESISTANT TO CUTS AND TEARS.

5. INSTALLATION
5.1 INSTALLATION OF THE MACHINE
If a support colu n (optional) is not used, install the
achine on a surface which is level, dry and suitable
for the weight of the achine plus the food to be
sliced; refer to paragraph 3.1
Check that there is nothing that can get in the way of
the flywheel, carriage ove ent and food loading.
5.2 COMMAND DESCRIPTION
5.2.1

The flywheel (1) turned clockwise allows the
carriage to be oved with the food plate with
si ultaneous blade rotation.
5.2.2 REGULATING KNOB FOR SLICE THICKNESS
The thickness of the slice is regulated by turning
the graduated scale knob (2) clockwise.
Regulating field: see paragraph 3.1.
5.2.3 OVERPLATE ADVANCE HANDWHEEL
The handwheel (3) allows the overplate with the
product to be brought quickly near to the blade
after loading it or taken away fro the blade after
cutting or for s all regulations.
5.2.4 OVERPLATE RAPID ADVANCE LEVER
Pull the lever (4), in order to near quickly the
overplate to the blade or to re ove it at the end
of the cutting operation.
The operation is considerable ore rapid than
the one executable with the little flywheel.

6. USING THE SLICING MACHINE
Before the first use of the achine, carry out a thorough cleaning, as described in paragraph 6.3.
6.1 LOADING THE GOODS
-Using the flywheel (1) bring the carriage (2) all
forward (towards the operator).
-Pull back the sliding overplate (3) co pletely (away
fro the blade) using the handwheel (4) or the
overplate rapid advance lever (5).
-Place the food to be sliced on the overplate and
block it with the food press (6) regulating the
height as well.
-Regulate the thickness of the slice by pulling and
rotating the knob (7) at the sa e ti e, graduated
fro 0 to 11.
-Bring the overplate with the goods towards the
blade by using the rapid advance lever or the
handwheel.
6.2 CUTTING THE GOODS
-Turn the flywheel clockwise (do not turn it counter
clockwise, this could seriously da age the
achine).
-During the forward ove ent of the carriage
(away fro the operator) the goods will go into the
blade and the slice, guided by the slice deflector,
will fall onto the plate below.
-During the return ove ent of the carriage
(towards the operator) the echanical device
which akes the overplate advance transversally
towards the blade will be put into otion, its value
pre-deter ined with the slice thickness regulating
knob.

6.3 CLEANING THE SLICING MACHINE
6.3.1 GENERAL INFORMATION
The achines ust be properly cleaned at least once a
day, if necessary even ore.
If the achines have not been used for a while they
ust be cleaned before use as well.
WARNING: Danger of cutting!
Use protective gloves which are resistant to cutting and
tearing and concentrate on the job at hand.
PAY CAREFUL ATTENTION!
-Unscrew the knob (1) to re ove the slice deflector
(2);
-Take out the container (3);
-Loosen the knob (4) and lift the sliding overplate
(5) with its food press ar ;
-Re ove the blade cover (6);
-Unscrew the knob (7) to re ove the sharpener
Clean all the disasse bled parts, the achine body,
etc. only using hot water and a biodegradable foa ing
detergent for dishes at a te perature of no lower than
+30 °C using a soft, spongy cloth and a nylon brush if
necessary for the plate and the sharp food press.
Rinse well with a lot of hot clean water only and dry
with a soft cloth or a spongy aterial
WARNING: DO NOT clean the achine with jets of
water or stea or si ilar.

7. MAINTENANCE AND REPAIRS
7.1 GENERAL INFORMATION
The operator is allowed to carry out the following
aintenance:
-Blade sharpening, periodically; the interval and
length of the sharpening obviously depend on
the use of the achine (work ti es and type of
product used).
-Lubrication of the carriage guide bars: weekly;
-Adjust ent of the bevel gear pair: as necessary,
see the relative paragraph.
Maintenance to be carried out exclusively by
personnel authorised by the anufacturer is as
follows:
- Replacing the blade;
- Replacing the sharpener grindstones;
- Replacing the chain;
- Repairing the structural parts, repairing and/or
replacing co ponents under the base.
7.2 SHARPENING THE BLADE
Proceed as follows as soon as it is noticed that there is
less cutting capacity::
WARNING: Danger of cutting!
Use protective gloves which are resistant to cutting
and tearing and concentrate on the job at hand.
PAY CAREFUL ATTENTION!
-Re ove the slice deflector;
-Clean the blade with denatured alcohol or hot
water;
-Loosen the blocking knob of the sharpening group
(1);
-Lift the sharpener (2) and turn it 180° (3);
-Release it and co pletely retighten the blocking
knob;
-Start the blade;
-Carry out the sharpening of the blade by pressing
the sharpening grindstone button and keeping it
pressed for 10-15 seconds (4);
-Press and antain pressed for 2-3 seconds the
button of the finishing (5);
-Stop the blade;
-Replace the sharpener into the original position.
Note: do not insist ore than 2-3 seconds with the
burring operation so as to avoid da age to the edge of
the blade.

7.3 LUBRICATING THE GUIDE BARS OF THE CARRIAGE
−After each cleaning operation of the achine put a
few drops of oil along the sliding bar (3) of the
carriage;
−Turn the flywheel briefly.
Note: Only use white Vaseline oil. Do not use vegetable
oils.
7.4 ADJUSTING THE BEVEL GEAR PAIR
If there is too uch play in the flywheel at the start of
rotation proceed as follows to eli inate it:
-Loose the screw (1);
-unscrew (2), a quarter of round, till you have
definitively re oved the flywheel play.
8. DISMANTLING THE SLICING MACHINE
The achines are ade up of:
- Alu iniu alloy structure;
- Insertions and various in stainless steel;
- Electric parts and wires, etc.;
- Electric otor;
- Plastic aterials, etc.
If disasse bly and dis antling are to be carried out
by a third party, only consult fir s that are
authorised in the de olition of the above entioned
aterials.
If you carry out the dis antling yourself the
aterials ust be separated according to type and
consult a specialised fir for their disposal.
Always abide by the regulations in force in your
country.
WARNING: In any case it is necessary to consult the
anufacturer or qualified personnel authorised by
the anufacturer for the re oval of the circular
blade and subsequent re oval of the cutting wire so
that it can be disposed of safely.
DO NOT ABANDON SCRAPS WHERE THERE IS FREE
ACCESS (THERE SHOULD BE BARRIERS AND SIGNS)
BECAUSE THIS CAN BE VERY DANGEROUS FOR
PEOPLE, SPECIALLY CHILDREN AND ANIMALS; THE
OWNER HAS SOLE RESPONSIBILITY.

Metcalfe Warranty
All Metcalfe products are guaranteed against defects in material and workmanship for a period of one year from
date of Invoice, except where specially noted.
The Company's obligation under this warranty is limited to repairing or replacing, without charge, any part or parts
found to be defective under normal use, in accordance with the specified operations manual and capacity ratings.
On all return to factory warranty items, it is the responsibility of the purchaser to return the entire unit to the
factory, in a clean condition, properly packed and labelled.
All repairs, alterations or replacement of materials or parts not authorised by Metcalfe will automatically void all
warranties in their entirety.
All Metcalfe slicers (except Simple Line) are covered by a 2-year warranty (1st year parts and labour, 2nd year parts
only) and full after sales service.
All Metcalfe SP mixers are covered by a 3-year warranty (1st year parts and labour, 2nd & 3rd year parts
only) and full after sales service.
There is a limited 6-month warranty on the following:
•Mixer attachments (beater, whisk and dough hook)
•Parts purchased or supplied for the repair of Metcalfe equipment
This warranty does not cover the following:
•Failure due to neglect, abuse, careless handling or misuse of machine
•Failure caused due to improper maintenance
•Blender clutches
•Knives and gears on can openers
•Sharpening of slicer blades
•General wear and tear
Metcalfe and its suppliers reserve the right to make changes in design and specification to any product without
prior notification.
