1. General
Read the instructions in this manual carefully, as they contain important information on
how to install, use and service the appliance properly, effectively, and in a safe manner.
Keep this manual in a safe place for future reference by other operators of the appliance.
This appliance should be installed following the instructions provided by the manufactur-
er and in compliance with all applicable local regulations. This appliance should be con-
nected to the power supply by qualified personnel only.
The operators using this appliance should receive a specific training in its operation.
In the event of failure or malfunction, switch off the appliance. The periodic functional
checks requested in this manual should be carried out according to the instructions. Have
the appliance serviced by a technically qualified person duly authorized by the manufac-
turer that uses genuine spare parts.
Failure to comply with the above may jeopardise the appliance’s safety.
1.1 Symbols used in the manual
This symbol informs about a situation where a safety risk could be imminent. The instruc-
tions provided are mandatory in order to prevent injury.

1.3 Checking correspondence between the appliance and the manual
The rating plate of the appliance shows its serial number. If you have lost the original us-
er’s manual, you can order a new one from the manufacturer or local representative. When
ordering new manuals, it is essential to quote the serial number shown on the rating plate.

2.1 Using the appliance safely
Being designed for professional use, this appliance should be used by qualified personnel
only.
Never leave the appliance unattended while in use!
Do not move the appliance while hot!
2.2 Safety instructions in case of malfunction
In the event of failure or malfunction, disconnect power to the appliance. Call the service.
If an emergency occurs, use the main switch to disconnect power to the appliance.
2.3 Disposing of the appliance
This appliance was built by using recyclable raw materials and does not contain any haz-
ardous or toxic substances. Dispose of the appliance in full compliance with applicable
local regulations in force where the appliance is being used. Packing materials should be
separated according to their types and delivered to specific collection sites. Ensure com-
pliance with environmental protection regulations.

3. Functional description
3.1 Intended application of the appliance
This electric glass-ceramic range is intended to cook food in pots or pans placed on the
glass-ceramic cooking surface.
3.1.1 Prohibited use
This appliance is not designed to cook food directly on the glass-ceramic cooking surface,
as if it were a griddle plate.
3.2 Cooktop construction
Stainless steel bearing structure resting on four height-adjustable feet. Outer covering and
worktop are all stainless steel (AISI 304).
Shatter-proof glass-ceramic cooktop fixed to the worktop in such a way as to ensure wa-
tertight seal.
Hot-surface indicator light to warn the user about residual heat on the glass-ceramic sur-
face.

• Each cooking zone is marked by concentric, silk-screen-printed rings that show the
different heating zones;
• high-to-low power regulator (Fig. 3);

• Stainless steel static oven, temperature adjustable from 50°C to 300°C (122-
572°F);
• two heating units (top and bottom) that can be separately adjusted through a selec-
tor switch and a single thermostat;
• safety thermostat to prevent overheating;
• knobs with watertight gasket;
• wire shelf support with two loading positions and a device to prevent tipping;
• removable stainless steel bottom plate;
• silicone rubber oven door gasket, easily replaceable.
3.5 Cooktop operating principle
The heating elements located underneath the glass-ceramic cooktop heat the surface to the
required temperature; a maximum temperature of 550°C (1022°F) can be reached in just
a few minutes.
Pots absorb heat by contact and irradiation.
When cooking food, any energy savings will depend on the quality of pots and pans, and
in particular of their bottom.
Pot diameter should match the cooking zone. Use cookware suitable for cooking over
electric hot plates.

By turning the knob to the desired setting, the power indicator light will come on and the
selected cooking zone will start heating. Heating is effected by means of radiative heat
provided by electric heating elements. Heating element temperature can be controlled
through a power regulator.

By further turning the knob, for a brief moment, to the position shown as item 18 in Fig.
3, you will obtain the maximum heating power in the selected cooking zone thanks to the
operation of the second heating element.
To bring the appliance back to normal, single-heater operation, just turn the knob to the
"0" position and then, if needed, select the required temperature to continue cooking.

4. Operating instructions
4.1 Before you start using the appliance
In the event of breakage of the glass-ceramic cooktop, the appliance must not be used due
to electric shock hazard.
4.1.1 Preparing the appliance to operate
Remove all packing materials and adhesive films from the range very carefully. Remove
the protective plastic film from the panels, being careful not to leave any traces of glue on
the steel surface; if necessary, remove any glue traces left by using non-flammable sol-
vents.
Prior to cooking for the first time, we recommend cleaning the appliance thoroughly, and
especially the glass-ceramic surface, using hot water and a sponge.
Before cleaning the stainless steel parts, make sure that the detergent you intend to use
does not contain any abrasive substances and is suitable for stainless steel surfaces.
After cleaning the appliance, rinse it with clean water and wipe it dry with a cloth.
Never place the appliance under a jet of water to clean it!

4.2 Using the appliance
4.2.1 Turning on the cooktop
Energize the appliance by turning on the safety switch installed externally. Set the cook-
ing zone power regulator (Fig. 3 further above) to the desired cooking temperature. The
indicator lights will come on; the power indicator light (item 5 in Fig. 2) shows that the
appliance is energized.
By turning the knob to the desired setting, the power indicator light will come on and the
selected cooking zone will start heating. Heating is effected by means of radiative heat
provided by electric heating elements.Heating element temperature can be controlled
through an energy regulator.
4.2.2 Cooking
1. Select the desired cooking temperature using the power regulator.
2. When cooking food, any energy savings will depend on the quality of pots and
pans, and in particular of their bottom.
3. Pot diameter should match that of the cooking zone. Use cookware suitable for
cooking over electric hot plates.
4. Always place lids on pots while cooking.
5. Use the HIGH setting to reach the desired cooking temperature, and then turn tem-
perature down and keep it as low as required to go on cooking.
Never leave the appliance unattended while in use!
In the everyday use, only perfectly dry pots and pans should be used. Never place any wet
containers or any objects on which water may have condensed (such as pot lids) on the
glass-ceramic cooking surface.
4.2.3 Turning off the appliance
To switch off the range, turn the power regulator to the "0" position. Now, the green indi-
cator light will also go off.
The cooking surface may still be burning hot! In any case, all cooking zones are equipped
with an indicator light that warns the user about residual heat on the glass-ceramic surface.

4.2.4 Turning on the electric oven [74CE]
Select the required heating direction using the knob shown as item 21 in Fig. 4. The power
indicator light (item 22) will come on. Set the required cooking chamber temperature by
turning the operating thermostat knob clockwise (item 20). The heating elements will start
operating and both the power indicator light (item 22) and the oven operation indicator
light (item 23) will light up. The operation indicator light will go out as soon as the set
temperature has been reached. Oven temperature can be set from 50°C (122°F) to 300°C
(572°F) and to any value in between.
An unpleasant smell the very first time the oven is operated can be considered as com-
pletely normal. In fact, this is due to the overheating of insulating materials and residues
of oil used during the metal working process. The first time you turn it on, don’t place any
food in the cooking chamber and set the temperature to 300°C (482°F) until the smell dis-
appears.

4.3 After-use care
4.3.1 Cleaning
Before cleaning the appliance, switch it off and disconnect power to the appliance.
General information
The main causes for stainless steel wear or corrosion are:
• using abrasive or acid detergents, especially chlorine-based products such as hy-
drochloric acid or sodium hypochlorite (bleach). Therefore, before buying a deter-
gent, make sure that it won’t cause stainless steel corrosion (see also paragraph
below);
• stagnation of ferrous deposits (such as those created by rust dissolved in the water
flowing through the piping, especially after the appliance has remained idle for
some time). Therefore, avoid such stagnation; do not use wire wool pads to remove
the most stubborn food residues. Use, rather, pads or spatulas made of stainless
steel or softer, non-ferrous materials;
• When cleaning, do not use abrasive pads as they can scratch the glass-ceramic sur-
face.
• stagnation of substances having acid components such as vinegar, lemon juice,
sauces, salt, etc. Therefore, prevent prolonged contact of these substances with the
stainless steel parts of the appliance. The evaporation of saline solutions over the
surfaces of the appliance is particularly harmful to them.
Routine cleaning
Cleaning the appliance thoroughly every day will keep it in perfect condition and increase
its lifetime. Clean the appliance with a damp cloth using water and soap or detergents,
provided that they are not acid or abrasive as discussed further above. Such detergents
should not even be used to wash the floor near the appliance, as their fumes may deposit
on the steel surfaces and damage them. If the appliance is very dirty, use a synthetic
Scotch Brite™ type sponge. Rinse it off with clean water and wipe it dry with a clean
cloth. Do not rub the appliance with steel wool pads as they could leave rust stains. For
the same reason, avoid touching the appliance with ferrous objects.
Never use direct water jets to clean the appliance because this could result in water enter-
ing into it and damaging it.
When cleaning, do not use abrasive pads as they can scratch the glass-ceramic surface.
Stains and abrasions on the steel surface
Scratches and dark stains may be smoothed or removed using stainless steel wool pads or
synthetic abrasive sponges, which should always be rubbed in the same direction as the
satin finish.

Rust
Should you need to eliminate rust stains, contact manufacturers of industrial detergents to
find a detergent that can remove such stains. Industrial descaling products can also be
used to that end. After rubbing off the stain and rinsing with clean water, an alkaline de-
tergent may be required to neutralise any acid compounds left on the surface.
Cleaning the glass-ceramic cooktop
In order to get the greatest satisfaction from the use of your appliance, it is important to
follow certain suggestions:
• first of all, remove any dirt and food residues from the cooktop using a specific,
NON-ABRASIVE scraper;
• pour a few drops of a suitable detergent over the cold cooktop and rub with kitchen
towel or a soft cloth;
• rinse the cooktop and wipe it dry with kitchen towel or a clean cloth;
It is advisable to clean the cooktop on a regular basis, every time you use it.
Should any aluminium or plastic foil, sugar or food containing sugar melt over the cook-
top surface, clean it off the warm cooking zone immediately using a non-abrasive scraper.
In this way, you will prevent damage to the surface.
Prior to cooking food with high sugar content (such as jam), you will need to apply a suit-
able protective product over the cooking surface to prevent possible damage caused by
spills.
4.3.2 Idle period
If the appliance will remain idle for a certain period of time, clean it and wipe it dry first,
and then apply a film of a suitable product (such as vaseline oil spray or similar products)
to protect it. Disconnect power supply upstream of it.
To avoid the appearance of corrosion spots, make sure that any salt residues left on the
internal and external walls are carefully removed.
4.3.3 Periodic maintenance
Only qualified personnel are allowed to carry out service and maintenance operations.
The following maintenance operations should be performed at least once a year:
• checking for proper operation of all control and safety devices;
We recommend signing a service agreement providing for at least one check-up a year.
