OVERVIEW
 Structural Concepts® Grocerant™ Hot Sides Merchandiser
should be installed and operated according to this operating
manual’s instructions to ensure proper performance.
 This unit is designed for the display of perishable,
unpackaged products. Improper use voids warranty.
Vollrath® WARMING SYSTEM / Hatco® HEATED DRAWERS
 See VOLLRATH® INDUCTION WARMING SYSTEM
section and HATCO® HEATED DRAWERS section in this
manual for overview, instructions, cleaning and
troubleshooting information.
TEMPERATURE SETTINGS
 This merchandiser’s Induction Warming System and Heated
Drawers are designed to maintain product at a range of
temperatures.
 This merchandiser is designed to MAINTAIN product
temperature. It is NOT designed to HEAT UP products from
unheated temperatures.
 Product must be heated up PRIOR to placing on unit.
 See VOLLRATH® INDUCTION WARMING SYSTEM
section and HATCO® HEATED DRAWERS section in this
operating manual for recommended temperature settings.
WARNING! Risk of electric shock. Disconnect power before servicing.
CAUTION! More than one source of electrical supply is
employed with units that have separate circuits.
Disconnect ALL ELECTRICAL SOURCES before servicing.

cool before accessing, cleaning or removing from case.

OVERVIEW / VOLLRATH® WARMING SYSTEM / TEMP. SETTINGS / TYPE / COMPLIANCE /
TYPE
This unit is designed for the display of products in ambient store
conditions where temperatures and humidity are maintained
within a specific range.
 Type 1 Conditions (these units): ambient conditions are to be
at 55% maximum humidity and maximum temperatures of
75 °F (24 °C).
 See SERIAL LABEL LOCATION & INFORMATION LISTED /
TECH INFO & SERVICE section in this manual for
sample serial labels).
COMPLIANCE
 Performance issues when in violation of applicable NEC,
federal, state and local electrical and plumbing codes are not
covered by warranty. See below compliance guideline.
WARNING
 As with any merchandiser that has electrical and heated
components, there is risk of injury or death.
 Pacemakers must be kept at least 2-feet from heating areas
when using Vollrath® Warming System induction range.
 See warnings below.
COMPLIANCE
This equipment MUST be installed in compliance with all applicable
NEC, federal, state and local electrical and plumbing codes.

PRECAUTIONS
 Following are important precautions to prevent damage
to unit or merchandise.
 Please read carefully!
WIRING DIAGRAM
 Each case has its own wiring diagram folded and in its
own packet.
 Wiring diagram placement may vary; it may be placed
near ballast box, field wiring box, raceway cover, or
other related location.
CAUTION! ADVERSE CONDITIONS / SPACING ISSUES
 Performance issues caused by adverse conditions are NOT warranted.
 Unit must be kept at least 15-feet from exterior doors, overhead HVAC
vents or any air curtain disruption to maintain proper temperatures.
 Unit must not be exposed to direct sunlight or any heat source.
CAUTION! GFCI BREAKER USE REQUIREMENT
If N.E.C. (National Electric Code) or your local code
requires GFCI (Ground Fault Circuit Interrupter) protection,
you MUST use a GFCI breaker in lieu of a GFCI receptacle.
CAUTION! POWER CORD AND PLUG MAINTENANCE
Risk of electric shock. If cord or plug becomes damaged,
replace only with cord and plug of same type.

 If NEC or your local code requires GFCI protection,
you MUST use a GFCI breaker in lieu of a GFCI

 Each case has its own wiring diagram folded & in its own packet.
 Wiring diagram placement may vary; it may be placed near ballast
box, field wiring box, raceway cover, or other related location.
CAUTION! DO NOT RELY ON THERMOMETERS OR THERMOSTATS
FOR ACTUAL PRODUCT TEMPERATURES.
 Thermometers and thermostats reflect air temperatures ONLY.
 For ACTUAL food temperatures, use a calibrated food thermometer.
CAUTION! TOP GLASS WEIGHT LOAD LIMIT
 To prevent sagging or breakage, do not exceed 5 LBS (2.3 KG)
weight load per top glass section (between posts and/or supports).
 To prevent scratching or marring, do not place ANY items on glass.

SKID REMOVAL: REMOVE FRONT & REAR TOE-KICKS / DISCONNECT CASE FROM SKID
1. Remove Front and Rear Toe-Kicks
 Case Front: Case front toe-kicks are attached to
case via magnets.
 Case Rear: Case rear toe-kicks are attached to
case via screws. See illustrations below.
 You must remove front and rear toe-kicks to
access frame support rails (and disconnect case
from skid).
2. Disconnect Case From Skid
 Remove screws that are securing case to skid.
 Screws are drilled through both front and rear
support rails and into skid.
 After screws are removed from both front and rear
support rails and skid, removed case from skid.
 See next page for skid removal instructions.

SKID REMOVAL, CONT’D: REMOVE CASE FROM SKID / POSITIONING CASE ALONGSIDE OTHERS

3. Remove Case From Skid
 Support case to prevent tipping.
 Caution! Rails can be damaged if case hits floor
with heavy force!
 Slide unit to rear of skid and tip backward off skid.
 Slide skid out from under case.
4. Position & Align Case Alongside Others
 Before shimming frame support rails, make
certain that the case (or cases) are in proper
position and, if required, aligned with adjoining
case.
 This may require the repositioning of the case
you are installing or the already positioned case.

INSTALLATION: FIELD SERVICE ELECTRICAL CONNECTION GUIDE
1. Field Access Boxes / Voltage & Amp Req.
 Remove front toe-kick to access field access box.
 See illustration below.
 Caution! Only certified electricians/electrical
contractors are to perform electrical service.
Important! Circuit Allocation:
> Circuit #1 = Heat
> Circuit #2 = Lights

INSTALLATION, CONT’D: SHIM / ATTACH SPLASH GUARD BRACKET AND REAR TOE-KICK TO CASE
 After case has been properly positioned and
frame support rails have been shimmed, place a
bead of silicone sealant to underside of splash
guard bracket (that rests on floor).
 Center back of bracket flush against frame
support rail.
 After splash guard bracket has been secured to
case, apply another bead of silicone sealant
where underside of bracket meets floor.
4. Attach Rear Toe-Kick To Case
 Attach rear toe-kick to case rear via (2) screws.
 See illustrations below.
2. Shim Frame Support Rails As Needed
 Shims are provided with case shipment.
 Check that case is level.
 Place shims, as needed, at underside of frame
support rails until case is level and plumb.
 See illustration below.
3. Attach Splash Guard Bracket To Case and
Seal To Floor
 The separately shipped splash guard bracket is
designed to prevent entry or leakage of liquid or
moisture to underside of case.

5. Place Ledge Brackets Onto Holders
 Ledge brackets are to attach to holders
(at case rear near counter top).
 Check that brackets are held securely.
6. Attach Holder/Container Brackets
 Holder/container brackets attach to ledge
brackets (top bracketry) and to each other.
 Check that brackets are held securely.

LED STYLE LIGHT FIXTURES
LED Style Light Fixtures
Removal of lamp:
 Certain cases have LED lights. LED lights rarely require
change-out.
 Should malfunction occur, contact Structural Concepts’
Technical Service Department for replacement parts.
See Technical Service section of manual information.
Replacement of lamp:
 To replace LED Light Fixture, simply disconnect the
existing LED light from its brackets. Replace.
 Plug must be inserted ALL THE WAY into the LED light
orifice (with no gap) to work properly.
 LED light energizes when case is powered up.

Merchandiser Start-Up and Operation
1. Hatco® Heated Drawer On/Off Switch Control
 Each Heated Drawer has its own On/Off Switch
(see illustration below).
A. Turn ‘ON’ by pressing downward on the “I” area
of the switch.
B. Turn ’OFF’ by pressing downward on the ’O’ area
of the switch.
 Caution! Heated drawers can get very hot!
Use extreme caution.
2. Hatco® Heated Drawer Temperature Control
 For models with multiple heated drawers, each
temperature control dial controls a different
heated drawer.
