Deep frying with your new deep fryer will be
even more fun than before.
Among other things, the app iance offers you the
fo owing advantages:
– a gent e fat me ting stage
– thanks to exact (e ectronic) temperature contro ,
the surfaces of deep fried titbits can be c osed
so fast that deep frying oi or fat cannot
penetrate into the food you are cooking. This
ensures that proteins, vitamins and minera s are
retained.

To ensure that you wi be ab e to use this
app iance in a its diversity, read through the
operating and assemb y instructions
conscientious y before operating it for the first
time. The instructions contain important notes
on use,installation and maintenance of the
app iance.
You wi find notes on Page 3 that you ought to
observe before operating the appliance for the
first time.
The chapters entit ed “Structure and operating

1.1 For your safety
You must not operate the appliance if it is
damaged.
The app iance must on y be connected by an
authorised specialist, paying attention to the
re evant regu ations of the power supp y companies
and the regiona construction regu ations. Observe
the assembly instructions!
When connecting e ectrica app iances in the
proximity of the deep fryer, make sure that
connecting cab es do not come into contact with hot
cooking surfaces.
As the user, you yourse f are responsib e for
maintenance and proper use in the househo d.
Only ever operate the app iance under
supervision.
Please make sure never to heat up the deep fryer
whi e it is empty. Top up the oi or fat when the eve
drops be ow the minimum mark. Risk of burns!
Caution! The app iance gets hot during operation.
Keep it out of the reach of chi dren!
Note: to avoid jeopardising the e ectrica safety of
the app iance, it is forbidden to use high-pressure
or steam jet c eaning devices.
Isolate the appliance from the mains during
every maintenance operation. To do this, remove
the mains p ug or actuate the corresponding fuse.
Repairs may on y be carried out by authorised
electricians, in order to guarantee the safety of
the app iance.
No warranty claims can be odged for any
damage resu ting from fai ure to observe these
instructions.
Caution! Fats and oi s can ignite easi y if they get
overheated. Keep naked ights away from the
app iance! Fire risk!
Observe particu ar caution when working with
water in the proximity of the warm app iance.
Explosion risk!
Foodstuffs that are prepared in fat and oi (e.g.
French fries) must on y be prepared under constant
supervision!
Caution! Over-greased fi ters are a fire risk if the
app iance is positioned under an extractor hood or
adjacent to a hob venti ator!
The appliance cover must on y be p aced over
the deep fryer after it has coo ed down. Risk of
burns!

1.2 Operating for the first time
Before operating the app iance for the first time,
p ease pay attention to the fo owing notes:
–Read through these instructions attentive y
before operating your app iance for the first
time.
–The appliance must be insta ed and connected
by a specia ist.
–The rating plate for this app iance is inc uded
with the instructions on a separate sheet. Store
the rating p ate in the same ocation as your
operating and assemb y instructions.
–Remove the packaging from the app iance and
dispose of it proper y. The packaging consists of
foi and cardboard.
Pay attention to the fact that there are
accessories in the base of the packaging. Keep
packaging e ements away from chi dren.
–Thoroughly clean the app iance and
accessories before using them for the first time.
This wi e iminate any 'newness’ sme s and
soi ing (see chapter entit ed C eaning and care).
–Before operating the appliance for the first
time, make sure that the mains connection is in
proper working order.

1. Important notes

1.3 About use
The appliance is intended so e y for use in the
househo d and must not be put to any other uses.
Use the appliance to prepare mea s on y. It must
not be used to heat up the room in which it is
insta ed.
Keep ventilation openings open (doors, extractor
hoods and windows).
Do not store any combustib e items inside the
app iance. During operation, on y ever eave the
items you need inside the app iance.
Only ever use deep frying inserts (deep frying
baskets) that are intended for the purpose.
The (heating) symbol in the contro pane
goes off as soon as the set temperature has been
reached.
Return the “Temperature" knob to “0" after deep
frying.
The appliance must not be operated empty (i.e.
without oi or fat; do not use water!). If the
app iance is operated empty, it wi switch off
automatica y and the ( imiter) symbo wi
appear in the disp ay. If this is the case, turn the
“Temperature" knob to the 0 position. Wait unti the
( imiter) symbo goes off again.
Note: If the ( imiter) symbo appears in the
disp ay, there may be many reasons for this (see
Structure and operating princip e).
Top up oil or fat as soon as it is be ow the minimum
eve (bottom marking). Caution: there is a risk of
fires if the fi ing shou d drop be ow the bottom
marking!
Observe caution with oi s and fats. They may
overheat and burn easi y.
O d/soi ed fat must be rep aced if it becomes
brown, has an unp easant sme and/or smokes
premature y. Fire risk!
If a fire shou d break out, remove the mains p ug
and p ace the id on the deep fryer. Never
extinguish with water!
Switch off the extractor hood immediate y because
the draught wi otherwise intensify the fire!
The deep frying oi /fat wi foam over if foodstuffs
that are too wet or if excessive quantities are
inserted. Risk of burns!
In the event of malfunctions, first of a check
the househo d fuses. If the prob em has nothing
to do with the power supp y, p ease contact your
specia ist dea er or your oca Gaggenau after-sa es
service.
Built-in temperature protection prevents
overheating of the app iance and of bui d-in
furniture.
Clean the appliance at regu ar interva s and a so
rep ace the deep frying oi or fat at regu ar interva s
because soi ing causes the deep frying oi or fat to
become more easi y ignitab e.
Do not use the lid during deep frying. The id
must on y be p aced over the deep fryer after it has
coo ed down fu y.
Caution: never use the g ass cover of the steam
cooker for the deep fryer.

2.3 Operating principle During deep frying, the heat that is generated by
the app iance is transmitted by the fat to the food
you are cooking. When this fast cooking method is
emp oyed, a tasty crust is formed around the
cooked food. The deep frying temperature range
ies between 160 and 180°C. The maximum
temperature is 190°C. A higher temperature wou d
resu t in a consistency change in the deep frying fat
or oi .
The two marks on the rear of the deep fryer
indicate the maximum and minimum levels for
the deep-frying oi or fat. The oi /fat eve shou d
a ways be between the two marking ines (Fig. 5).
The food to be fried shou d a ways be comp ete y
covered by the deep-frying oi or fat; if this is
impossib e, turn the food after ha f the frying time.
Any water contained in the food sinks to the bottom
of the Gaggenau E ectric Fryer into so-ca ed cold
oil zone (see 1in Fig. 6). This prevents the oi
frothing over. A so, any partic es of food which
break away during frying fa through the basket
and sink to this co d zone.
The ower temperature in this zone prevents the oi
breaking down and considerab y prolongs the time
for which the oi or fat can be used.
The foaming edge (see 2in Fig. 6) serves to imit
the foam that occurs during deep frying.
Numerous safeguards serve to protect you. Turn
the “Temperature" knob back to 0 if the ( imiter)
symbo shou d appear on the disp ay.
Possible causes:
– No fat/oi in the deep frying tub or not enough.
– The deep fryer has been switched on with the
tubu ar heating e ement ti ted out.
– The ( imiter) symbo goes off as soon as the
temperature on the heating e ement drops be ow
a critica va ue. Pour fat/oi into the deep frying
tub. The app iance can then be easi y operated
again.

after a few minutes.

3.1 Switching on /off “Temperature" knob
The temperature can be set within the range from
135-190 °C. The fat me ting stage can a so be set.
“Short time" knob
The short time can be set within a range from
1 minute to 90 minutes (Fig. 7). The app iance is not
switched off by the short-time reminder.
Switching on:
Turn the “Temperature" knob to the temperature
you require. The chosen temperature is shown on
the disp ay. Whi e the app iance is heating up, the
(heating) symbo wi appear on the disp ay
(Fig. 8)
Turn the “Short time" knob to the eft or the right
to set the short time you require (Fig. 9). The range
that can be set is between 1 minute (01) and 90 mi-
nutes (90). The set time e apses on the disp ay. If
you turn the knob fu y to the eft, 90 appears in the
disp ay. After a few seconds, the chosen va ue is
confirmed by an audib e signa .
Note: the short time reminder does not switch the
app iance. You can use the short time reminder
even when the app iance is switched off.
Switching off:
Turn the “Temperature" knob to the 0 position
(Fig. 10). The indication in the disp ay goes off.

3.2 Fat melting stage
– P ace approximate y 3 kg of crushed fat in the
deep fryer.
– Turn the “Temperature" contro knob to the fat
me ting stage position on the right. In this
position, the fat is me ted s ow y and overheating
of the heating e ement, and thus damaging of the
app iance, are prevented. The (heating)
symbo f ashes on the disp ay and 100°C is
disp ayed.
or
– Turn the “Temperature" contro knob to the right
to the fat me ting stage position . As soon as an
audib e signa sounds, turn the contro knob to
the left to the temperature you require. During
the me ting process, the (heating) symbo
f ashes on the disp ay. The app iance then heats
up automatica y to the se ected temperature.
Important:
Owing to the ow temperature in the co d oi zone,
fat that has not me ted may remains in this zone. You
can start deep frying as soon as the (heating)
symbo has gone off.

3.3 And this is how to deep fry
(see a so 7.1)
– Set the required temperature with the
temperature contro knob. The required
temperature has been reached as soon as the
(heating) symbo goes off.
– Brief y dip the deep frying basket into the hot fat
or oi . The optimum quantity is 3-3.5 of oi (or
3 kg of fat).
– P ace the food in the deep frying basket and fry it.
The basket has a capacity of 500 g.
– When the food is ready (see Tab e 7.1), take out
the deep frying basket and shake it ight y. This
wi make sure that the fat or oi can drip of faster.
Note:
The deep frying times stated are on y approximate
va ues; more or ess times and energy may be
required, depending on the condition of the food
and your own persona taste.
Important!
Do not sa t or spice the food above the deep fryer,
since this wou d f avour the oi or fat and,
consequent y, the next food fried.
Important:
On y ever switch on the app iance after having
p aced deep frying fat or oi in the deep frying tub.
Deep frying fat must be me ted (see front)!
Moist foods such as fish, she fish, pieces of meat,
vegetab es or fruit s ices must be thorough y
dried.
