Melting the frying fat
The deep fryer features a fat melting setting. This makes
it possible to gently melt frying fat without overheating
of the heating element.
1Place 3 kg of crushed fat in the deep fryer. Use fat
from the fridge or at room temperature. Thaw frozen
fat before melting.
2Turn the temperature control knob left to the
position ™. The symbols ™and [and the
temperature of 100 °C are shown on the display.
After a few seconds a signal is sounded.
3When the fat melting stage is finished, the ™
and [symbols go off. Now you can select the
required temperature.
If you want to deep fry immediately after melting the fat
you can proceed as follows:
1Turn the temperature control knob left to the
position ™. Wait for the signal tone, then turn the
control knob further to the left to the required
temperature (do not turn the control knob to the
right past 0!).
2During the fat melting stage the symbols ™and
[are shown on the display. The appliance then
heats up automatically to the selected temperature.
When the temperature has been reached the [
symbol goes off.
Notes
‒Owing to the low temperature in the cold oil zone,
fat that has not melted may remain in this zone. Wait
with deep frying until the [symbol has gone off.
‒You can only start the fat melting setting if the
temperature of the deep fryer is below 50 °C.
If you select the fat melting setting while the
temperature of the deep fryer is above 50 °C, [
and 100 °C are shown on the display. The deep
fryer will heat up to 100 °C.
Deep frying
Before switching on the deep fryer make sure the frying
basin contains frying oil or fat at least up to the
minimum marker. When using frying fat, first melt it at
the fat melting setting.
1Set the required temperature. The [heating up
symbol is shown on the display. When the
temperature has been reached the [symbol goes
off.
2Fill the food into the frying basket on the worktop
beside the deep fryer (do not fill the frying basket
directly over the deep fryer).
3Lower the frying basket with the food into the oil or
fat.
4Having finished frying, lift out the basket and shake
it lightly in order to remove excess oil or fat.
To allow the rest of the oil or fat to drip off, the basket
can be hooked into the frying basket holder.

9
Electronic short-term timer
You can set the short-term timer between 1 and
90 minutes. The timer will not switch the deep fryer on
or off.
You can use the short-term timer even when the deep
fryer is switched off.

position. Hold the knob in this position.
2Turn the temperature control knob to the right to
any temperature.
3Turn the timer control knob back to 0.
The child lock is de-activated.
Overheating protection
To protect the appliance and the furniture, the deep
fryer switches the heating element off automatically
when overheated. ©appears on the display. Switch off
the appliance and wait until it has cooled down.
Possible causes for overheating:
▯The deep fryer has been switched on empty.
▯There is not enough frying oil or fat in the frying
basin (below the minimum marker).
▯The frying oil or fat is too old.
▯The appliance has been set to a frying temperature,
although the frying fat is still cold and has not been
melted on the fat melting setting.
Safety shut-off
For your protection the appliance features safety shut-
off. Every heating operation is switched off after four
hours if the appliance is not operated during this time.
Dashes flash on the display.
Turn the temperature control knob to 0. Then you can
operate the appliance again normally.

10
Cold oil zone
Any water contained in the food sinks to the bottom of
the deep fryer into so-called cold oil zone below the
heating element. This prevents the oil frothing over.
Also, any particles of food which break away during
frying fall through the basket and sink to this cold zone.
The lower temperature in this zone prevents the oil
breaking down and considerably prolongs the time for
which the oil or fat can be used. The foaming edge
contains the foam that occurs during deep frying.
mRisk of burns!
Water in hot oil generates a fat explosion. Before
heating up the appliance, drain a small amount
(approx. one cup) of water from the cold oil zone.
Draining the frying oil or fat
mRisk of burns!
Before draining deep frying oil or fat wait until it has
cooled to approx. 40 °C.
1Unscrew the plastic cap from the drain valve.
2Place a temperature resistant bucket (capacity at
least 10 liters) underneath the drain valve.
3Open the drain valve by pulling the handle down,
drain the oil or fat.
4Close the drain valve, screw the plastic cap back
on.
Note: Dispose of used oil and fat in accordance with
local regulations.

specified on the package.
Tips and tricks
Tips for using oil or fat to fry food
▯When frying food, use only pure plant oils or fats
that are suitable for high-temperature frying, such
as groundnut oil, palm oil and coconut oil. Oils that
are not suitable include virgin olive oil, soybean oil
and wheatgerm oil. Avoid using blends of fat.Follow
the manufacturer's instructions.
▯Each time you use the fryer, use a skimming ladle
afterwards to remove any large food remnants from
the frying oil or fat. Alternatively, you can open the
oil drain valve to drain off the food remnants. Wait
until the frying oil or fat has cooled down to 40 °C
or less.
▯If you wish to reuse the frying oil or fat, line a metal
sieve with a piece of paper towel and, once the oil
or fat is lukewarm, pour it through the sieve.
▯Replace the frying oil or fat regularly, and at the
very latest when it starts to smell or taste
unpleasant, foams significantly, starts to smoke (at
160-170 °C) or if the food no longer becomes
crispy even at the correct temperature setting. Early
smoking must not be confused with the steam that
rises when moist food is placed in the fryer.
▯Put the lid back on once the oil or fat has cooled
down. This prevents impurities or water from
contaminating the fat.
Tips regarding the food
▯The following are suitable for deep frying: small
pieces of meat and fish, vegetables, potatoes,
pastries, fruit and breaded food.
▯Moist foods such as fish, shellfish, pieces of meat,
vegetables or fruit slices must be thoroughly dried.
▯Foods with a high water content are not suitable for
deep frying.
Tips regarding the deep frying
▯Do not deep fry very large quantities at once so that
the oil can circulate and release the heat quickly to
the food. Shake the frying basket with the food to
avoid it sticking and to help the oil circulate.
▯The food should be completely covered by the deep
frying oil or fat. Turn large food items after the first
halve of the frying time or push them down with a
second frying basket.
▯Fill the food into the frying basket on the worktop
beside the deep fryer. Do not fill the frying basket
directly over the deep fryer. This will help keep the
deep frying oil or fat free from residues.
▯Do not salt or season the food above the deep fryer
to avoid soiling of the deep frying oil or fat.
▯Moist or frozen food leads to particularly hefty
foaming of the oil or fat when it is inserted. Slowly
lower the filled basket several times. This prevents
overflowing of the fat.
▯Remove ice from deep frozen foodstuffs before
deep frying.
▯Set the recommended temperature.
‒Correct temperature: proteins form a protective
crust. Only a small amount of fat is absorbed.
‒Temperature too high: the food is browned too
quickly and remains raw on the inside.
‒Temperature too low: the food absorbs too much
oil or fat.
▯Dab freshly deep fried food with kitchen paper to
reduce the amount of fat even more.
‘Schlosserbuben’ (plum doughnuts) 160 10 6 min. deep fry without basket
Shortbread 180 6 3 min. each side deep fry without basket
