ANTI-TIP DEVICE
To reduce the risk of
tipping the range, the
range must be secured
by a properly installed
anti-tip bracket. See
installation instructions
shipped with the bracket for complete details
before attempting to install.
To check if the bracket is installed and
engaged properly, look underneath the
range to see that the rear leveling leg is
engaged in the bracket. On some models,
the storage drawer or kick panel can be removed for easy inspection. If visual inspection is not possible, slide the range
forward, confirm the anti-tip bracket is securely attached to the floor or wall, and slide the range back so the rear leveling
leg is under the anti-tip bracket.
If your range is removed for cleaning, servicing or any reason, be sure the anti-tip device is reengaged properly when the
range is replaced. Failure to take this precaution could result in tipping of the range and can result in death or serious
burns to children or adults.
Never completely remove the leveling legs or the range will not be secured to the anti-tip device properly.

surface of the cooktop will retain heat after the

Surface Units
Operating the Cooktop Elements
WARNING FIRE HAZARD: Never leave the range
unattended with the cooktop on. Keep flammable items
away from the cooktop. Turn off all controls when done
cooking. Failure to follow these instructions can result
in fire, serious injury or death.
Before using the cooktop for the first time, clean it with
ceramic cooktop cleaner. This helps protect the top and
makes cleanup easier.
Push the knob in and turn in either direction to the setting
you want.
A knob indicator light will glow when any surface unit is on.
For glass cooktop surfaces:
A HOT COOKTOP indicator light will:
■ comeonwhentheunitishottothetouch.
■ stayonevenaftertheunitisturnedoff.
■ stayonuntiltheunitiscooledtoapproximately150°F.
At both OFF and HI the control clicks
into position. You may hear slight
clicking sounds during cooking,
indicating the control is maintaining your
desired setting.
Be sure you turn the control knob to OFF
when you finish cooking.
Using the Warming Zone
WARNING
FOOD POISON HAZARD: Bacteria may grow in food at
temperatures below 140°F.
■ Alwaysstartwithhotfood.Donotusewarmsettingto
heat cold food.
■ Donotusewarmsettingformorethan2hours.
The WARMING ZONE, located in the back center of
the glass surface, will keep hot, cooked food at serving
temperature.Alwaysstartwithhotfood.Donotuseto
heat cold food. Placing uncooked or cold food on the
WARMING ZONE could result in foodborne illness.
To turn the WARMING ZONE on, turn knob clockwise to
the setting you want.
For best results, all foods on the WARMING ZONE should
be covered with a lid or aluminum foil. When warming
pastries or breads, the cover should be vented to allow
moisture to escape.
The initial temperature, type and amount of food, type of
pan, and the time held will affect the quality of the food.
Always use pot holders or oven mitts when removing food
from the WARMING ZONE, since cookware and plates will
be hot.
Radiant Glass Cooktop
The radiant cooktop features heating units beneath a
smooth glass surface.
NOTE: A slight odor is normal when a new cooktop is
used for the first time. It is caused by the heating of new
parts and insulating materials and will disappear in a short
time.
NOTE: On models with light-colored glass cooktops, it is
normal for the cooking zones to change color when hot or
cooling down. This is temporary and will disappear as the
glass cools to room temperature.
The surface unit will cycle on and off to maintain your
selected control setting.
It is safe to place hot cookware on the glass surface even
when the cooktop is cool.
Even after the surface units are turned off, the glass
cooktop retains enough heat to continue cooking. To avoid
overcooking, remove pans from the surface units when the
food is cooked. Avoid placing anything on the surface unit
until it has cooled completely.
■ Waterstains(mineraldeposits)areremovableusingthe
cleaning cream or full-strength white vinegar.
■ Useofwindowcleanermayleaveaniridescentfilmon
the cooktop. The cleaning cream will remove this film.
■ Don’tstoreheavyitemsabovethecooktop.Iftheydrop
onto the cooktop, they can cause damage.
■ Donotusethesurfaceasacuttingboard.
Never cook directly on
the glass. Always use
cookware.
Always place the pan in the
center of the surface unit
you are cooking on.
Donotslidecookwareacrossthe
cooktop because it can scratch
theglass—theglassisscratch-
resistant, not scratch proof.

Pizza Oven
■ Neverreachintotheovenwithbarehands.

cooking surface, with the exception of parchment paper,

CAUTION Ensure that all packaging material

prior to placing the food item in the oven cavity to prevent
ignition of these materials.

use.

cooking surface. They may result in unsatisfactory
cooking performance.
Pizza Oven Modes
The upper oven of your TrattoriaTM Pizza Oven has 4 special pizza cooking modes including Artisan, NY Style, Frozen,
and Pan. The cooking surface is designed to provide intense heat that is needed to make the perfect crust with the
versatility to use as a traditional double oven.
Artisan Pizza
■This mode is best suited for Neapolitan-style pizza, with
a thin and soft crust with large air pockets and some
char on the bottom surface and edges. These pizzas
are best with just a few toppings, and regions of sauce
visible between toppings.
■Place pizza on the cooking surface, not the oven rack
■You will be prompted to select a temperature. This will be
the temperature of the cooking surface. We recommend
540°F as a starting point. You may need to adjust the
cooking surface temperature based on the type of dough
used.
■The oven will move through a series of four steps, and
will prompt you to proceed where needed.

NY-Style Pizza
■This mode is best suited for New York-style pizza, with
a thin crust that is firm enough to support the toppings
when folded in half to eat.
■Place pizza on the cooking surface, not the oven rack.
■You will be prompted to select a temperature. This will be
the temperature of the cooking surface. We recommend
500°F as a starting point. You may need to adjust the
cooking surface temperature based on the type of dough
used.
■The oven will move through a series of four steps and
will prompt you to proceed where needed.
1. Select Options to select your Pizza Mode and
temperature.
2. Preheat. Donotplacefoodintheovenyet.
3. Ready to Cook. You will be prompted to place food in
the oven and press START.
4. Cooking. Your pizza will cook quickly! Monitor its
progress through the door window.
5. Finish. When you open the door and remove your
pizza, you will be prompted to PRESS 1 FOR
ANOTHER PIZZA. If you plan to cook another pizza,
PRESS 1 and the oven will preheat again to prepare
forthenextpizza.Donotplacefoodintheovenuntilit
displays Ready to Cook again.
If not cooking another pizza, be sure to turn the oven
off.
Pan Pizza
■This mode is best suited for pan-style pizza, with a thick
and deep crust contained within a deep pan.
■Place pan and pizza on the cooking surface, not the
oven rack.
■Useacastironrectangularpanforbestresults.
■You will be prompted to select an oven temperature, not
a cooking surface temperature. We recommend 500° as
a starting oven temperature.
■The oven will move through a series of three steps and
will prompt you to proceed where needed.
1. Select Options to select your Pizza Mode and
temperature.

3. Ready to Cook. You will be prompted to place food in

temperature to the package recommended temperature.
■The oven will move through a series of three steps and
will prompt you to proceed where needed.
1. Select Options to select your Pizza Mode and

the oven and press START.

Bread
■This mode is best suited for artisan-style bread, cooked
without a loaf pan. The cooked bread will have large air
pockets and a crispy crust.
■Place food on the cooking surface, not the oven rack
■You will be prompted to select an oven temperature,
not a cooking surface temperature. Set the oven
temperature to the recipe recommended temperature.
■The oven will move through a series of three steps, and
will prompt you to proceed where needed.
■When using the Bread mode, prepare your loaves on a
piece of parchment paper on a pizza peel. This will make
them easier to slide onto and off of the cooking surface.
1. Select Options to select your Bread Mode and
temperature.
2. Preheat.Donotplacefoodintheovenyet.
3. Ready to Cook. You will be prompted to place food in
the oven and press START.
4. Cooking. Monitor your bread’s progress through the
door window.
Bake
■Place food on an oven rack, not the cooking surface.
■You will be prompted to select a temperature. This will be
thetemperatureoftheoven(notnecessarilythatofthe
cookingsurface).
Broil
■Heat is delivered from the top heater only.
■Food may be placed on the oven rack or the cooking
surface.
Pizza Oven Tips
Tips for Great Artisan and NY-Style Pizza
■Useapizzapeel.Woodenpeelsarebetterthanmetal
ones for preparing the pizza before it goes into the oven,
sincepizzadoughdoesn’tsticktowoodaseasily.Donot
store wooden pizza peel in your oven.
■Lightly flour the peel to prevent the dough from sticking
to it. Avoid putting too much flour on the peel, as it will
change the crust flavor and may smoke when the pizza
is put into the oven.
■After the dough has been placed on the peel, periodically
perform a “shake test” by lightly moving the peel back
and forth. If the dough sticks to the peel, add a bit more
flour.
■Uselow-moistureingredientstopreventyourslicesfrom
getting soggy. If you make sauce from canned or fresh
tomatoes, strain the excess liquid from the sauce before
spreading it on the pizza. If using mozzarella cheese,
select a low-moisture version.
■Top your pizza right before putting it into the oven. The
longer sauce sits on the dough, the more likely the
dough is to stick to the peel.
■Avoid the temptation to put too many toppings on your
pizza. It will make it harder to slide it off the peel and
onto the cooking surface.
■Watch your pizza like a hawk while it cooks. This oven
useshighheattocookpizzaquickly(~4minforan
Artisanpizza).

Pizza & Bread Function Screens
Once you have chosen your option, the following screens
will display:
Temperature Screen
This screen will show the selection you have made and the
default temperature. You an option to edit the temperature.
Once you have done so or if using the default, press
START.
Preheating Screens
The Preheating screen will show you that the oven
is preheating to the assigned temperature. Once the
temperature has been achieved, the oven will beep
Ready to Cook Screen
You will be prompted when it is time to add your selection
to the oven. Once added, press START.
Cook Screen
The screen will let you
know that your food
selection is cooking. For
the Frozen Pizza function,
the screen will show
Frozen Rapid Bake.
Recharge Prompt Screen
This screen is only applicable if Artisan or NY Style Pizza
was selected. This will prepare the oven for another pizza
to be prepared.
Artisan, NY, and Bread modes have a 3 hour time limit
before the mode will automatically turn off.
Lower Oven Controls
For complete information about the oven controls, see the full owner's manual at cafeappliances.com/literature.
Start/Enter: Must be pressed to start any cooking,
cleaning, or timed function.
Clock:Sets the oven clock time. Press the Settings pad
and select clock. Follow the instructions to set the clock.
Cook Time:Countsdowncookingtimeandturnsoff
the oven when the cooking time is complete. Select the
desiredcookingmode.Usethenumberpadstoprogram
a baking temperature. Press the Options pad and select
Cook Time.Usethenumberpadtoprogramcooktimein
hours and minutes, then press Start/Enter.CookTimeis
not available with all modes.
Timer:Works as a countdown timer. Press the Timer
pad and use the number pads to program the time in hours
and minutes. Press the Start/Enter pad. The oven will
continue to operate when the timer countdown is complete.
To turn the timer off, press the Timer pad.
Delay Time:Delayswhentheovenwillturnon.Use
this to set a time when you want the oven to start. Press
thedesiredcookingmodepad.Usethenumberpadsto
program a baking temperature. Press the Options pad and
select Delay Time.Usethenumberpadstoprogramthe
time of day for the oven to turn on, then press Start/Enter.
DelayTimeisnotavailablewithallmodes.

Lower Oven Cooking Modes and Recommendations
Follow these general recommendations for better results. The modes listed below are not available in all ovens.

NOTE: Remove unused racks when using the oven for faster preheat, improved efficiency and optimal performance.
Bake:Usethismodeforgeneralbakingonasinglerack.
Place food in approximately the center of the oven.
Convection Bake:Usethismodeforbaking
on multiple racks. Your oven is equipped with Auto
RecipeConversion,soitisnotnecessarytoadjustthe
temperature when using this mode.
Convection Roast:Usethismodeforroasting
meatsorvegetables.AutoRecipeConversionisnot
applied in this mode.
Broil:Usethismodeforsearingfoods.Alwaysbroilwith
the door closed. For better searing or browning, place food
closer to the broil heater.
Oven Probe:Usetheprobetobakefoodstoaprecise
temperature. For details on proper use see the full owner's
manual.
Additional Modes:Your oven may have additional
specialized cooking modes. Press Options to explore and
see full owner’s manual for details.

There are several different special features on your range.
Adjust the Oven Temperature
This feature allows the oven baking temperature to be
adjustedupto35ºFhotterordownto35ºFcooler.Use
this feature if you believe your oven temperature is too hot
or too cold and wish to change it. This adjustment affects
every cooking mode except broil. Press Setting pad and
select Oven Adjustment.Usethenumberpadtoselect
more or less heat. Once the adjustment is set, press Save.
CAUTION Do not use any type of foil or oven liner to cover the oven bottom and upper oven cooking
surface. These items can trap heat or melt, resulting in damage to the product and risk of shock, smoke or fire.
Damage from improper use of these items is not covered by the product warranty.
Foilmaybeusedtocatchspillsbyplacingasheetonalowerrack,severalinchesbelowthefood.Donotusemorefoil
thannecessaryandneverentirelycoveranovenrackwithaluminumfoil.Keepfoilatleast1-1/2”fromovenwallsto
prevent poor heat circulation.
Aluminum Foil and Oven Liners
Upper Oven Pizza and Bread Cooking Surface
Wait for cooking surface to cool before cleaning and clean
cooking surface before each use. Only clean cooking
surfacewithwarmwaterandmilddishdetergent.Donot
use harsh cleaners, abrasives, steel wool or a brush with
steel bristles because this will scratch the cooking surface.
Useawetspongewithwarmsoapywatertowipeupany
hardeneddoughandpizzatoppings.Donotuseametal
scraper or abrasive cleaner because it will scratch the
cooking surface. We recommend the use of a plastic scraper
to remove baked-on soils from the cooking surface.
Wooden Pizza Peel
Scrape your wooden pizza peel for hardened dough and
pizza toppings using a plastic scraper. Never use a metal
scraperbecausethiswilldamagethewoodensurface.Usea
wet sponge with warm soapy water to sanitize your wooden
peel.DonotputthewoodenpizzaPeelinwatertoprevent
cracking or warping. You can air-dry your wooden pizza peel
onadishrack.Neverputthepeelinthedishwasher.Donot
use olive oil or any vegetable oil on your wooden pizza peel.
It will cause the wood to smell and will not prevent the dough
fromstickingtothesurfaceofthepeel.Donotuseyour
wooden pizza peel as a chopping or cutting board. Your,
knife, pizza wheel, or any sharp equipment that you use to
cut a pizza with will leave a scar on the surface. This will
result in the sticking of raw dough to your wooden pizza peel
preventing your pizza from not sliding into the oven.

Manual Cleaning
Donotuseovencleaners,abrasivecleaners,strongliquid
cleansers, steel wool, scouring pads, or cleaning powders
ontheinteriororexterioroftheoven.Cleanwithamildsoap
and water or vinegar and water solution. Rinse with clean
water and dry with a soft cloth.
Self Clean Mode
ReadSelf-CleaningOvenSafetyInstructionsatthe
beginningofthismanualbeforeusingSelfCleanMode.
Self-clean(black)racksmayremainintheoven.Closethe
door. If the oven is too hot, you will not be able to start self-
clean. Press the Self Cleanpad.Usethenumberpadsto
enter any clean time between 3 and 5 hours and press start.
The oven door will lock. For a moderately soiled oven, run
a 3 hour self-clean cycle. For a heavily soiled oven, run a 5
hour self-clean cycle. The oven will turn off when the self-
clean cycle is complete. The door will not unlock until the
oven has cooled below the unlocking temperatures. After the
oven has cooled down wipe ash out of the oven.
Steam Clean Mode
TheSteamCleanfeatureisforcleaninglightsoils.Touse
theSteamCleanfeature,wipegreaseandsoilsfromthe
oven. Pour one cup of water into the bottom of the oven.
Closethedoor.PressSteam Clean then press Start. The
oven door will lock. You cannot open the door during the
30 minute steam clean. When the cycle completes, soak up
remaining water and wipe the oven walls and door .
Cleaning the Lower Oven

carefully. If you still think your new oven is too hot or too cold,
you can adjust the temperature yourself to meet your specific
cooking preference. NOTE: This adjustment affects Bake and
ConvectionBaketemperatures;itwillnotaffectConvection
Roast,BroilorClean.

EXCLUSION OF IMPLIED WARRANTIES
Your sole and exclusive remedy is product repair as provided in this Limited Warranty. Any implied warranties,
including the implied warranties of merchantability or fitness for a particular purpose, are limited to one year or
the shortest period allowed by law.
This limited warranty is extended to the original purchaser and any succeeding owner for products purchased for home
