Chapter 1 Overview
Safety
Henny Penny products have many safety features incorporated. However, the only way to
ensure safe operation is to fully understand the proper installation, operation, and main-
tenance procedures. These instructions have been prepared to aid you in learning the proper
procedures. Where information is of particular importance or is safety related, the words
DANGER, WARNING, CAUTION, or NOTICE are used. Their usage is described as follows:
DANGER! indicates hazardous situation which, if not avoided, will
result in death or serious injury.
WARNING! indicates hazardous situation which, if not avoided,
could result in death or serious injury.
CAUTION! indicates hazardous situation which, if not avoided,
could result in moderate or minor injury.
NOTICE NOTICE is used for information considered important regarding
property damage.

Selecting the Location
Burn Risk
To prevent personal injury, install and level fryer according to
manual instructions.Restraining ties may be used for stabilization.
Fire Hazard
To avoid fire, the area under the fryer should not be used to store
supplies.
Fire Hazard
To avoid personal injury and fire: install appliance with minimum
clearances described in manual; do not spray aerosols near appli-
ance while in use. Install the open fryer with minimum clearance
from all combustible materials.
The proper location of the appliance is very important for operation, speed, and convenience.
Choose a level location for the appliance to ensure proper operation including oil coverage of
product. Choose a location which provides easy loading and unloading without interfering with the
final assembly of food orders. Operators find that frying from raw to finish, and holding the product
in a warmer provides fast continuous service. Landing or dumping tables should be provided next

to the fryer. The best efficiency is obtained by a straight line operation, i.e. raw in one side and fin-
ish out the other side. Order assembly can be moved away with only a slight loss of efficiency.
Clearances
Sides 2 in. (51 mm) from combustible materials or other heat producing equipment, otherwise
no clearance required.
Back 6 in (152 mm) air flow, connections.
Front 30 in (762 mm) remove filter pan.
Unpacking
Shock Hazard
To avoid property damage, do not use puncture unit with tools dur-
ing unpacking.
NOTICE - Any shipping damage should be noted in the presence of the deliv-
ery agent and signed prior to his or her departure.
NOTICE - To avoid equipment damage, remove filter pan , before removing
unit from pallet.
1. Cut and remove the metal bands from the carton.
2. Remove carton lid and lift the main carton off the fryer.
3. Remove corner packing supports.
4. If necessary, cut the stretch film from around the carrier/rack box and remove it from the top
of the fryer lid.
5. Cut and remove the metal bands holding the fryer to the pallet, and remove fryer from pal-
let.

Electrical Requirements
Shock Hazard
lThis unit must be adequately and safely grounded (earthed)
or electrical shock could result. Refer to local electrical
codes for correct grounding (earthing) procedures or in
absence of local codes, with The National Electrical Code,
ANSI/NFPA No. 70-(the current edition). In Canada, all elec-
trical connections are to be made in accordance with CSA
C22.1, Canadian Electrical Code Part 1, and/or local codes.
lTo avoid electrical shock, this appliance must be equipped
with an external circuit breaker which will disconnect all
ungrounded (unearthed) conductors. The main power switch
on this appliance does not disconnect all line conductors.
lThe power cord may be already attached to the unit, ordered
as an accessory, or provided at installation. Check the data
plate to determine the correct power supply.

To prevent electric shock hazard this appliance must be bonded to
other appliances or touchable metal surfaces in close proximity to
this appliance with an equipotential bonding conductor. This appli-
ance is equipped with an equipotential lug for this purpose. The

Cable Restraint
Secure I-bolt to building using acceptable building construction practices.
Permanently connected electric fryers with casters must be installed with flexible conduit and a
cable restraint, when installed in the United States. Holes are available in the rear fryer frame for
securing the cable restraint to the fryer. The cable restraint does not prevent the fryer from tip-
ping.
CE units require a minimum wire size of 6 mm to be wired to the terminal block. If a flexible power
cord is used, it must be HO7RN type.
NOTICE - It is recommended that a 30 mA rated protective device such as a
residual current circuit breaker (RCCB), or ground fault circuit
interrupter (GFCI), be used on the circuit.The supply power cords
shall be oil-resistant, sheathed flexible cable, no lighter than ordin-
ary polychloroprene or other equivalent synthetic elastomer-
sheathed cord.
Check the data plate mounted on the inside of the left door to determine electrical requirements
for the fryer, see Figure 2-4 Data Plate Location, page 9. Refer to local electrical codes for correct
grounding (earthing) procedures or in absence of local codes refer to the National Electrical Code
ANSI/NFPA No. 70 (the current edition). Each vat has its own power cord assembly. An all pole
separate disconnect switch with proper capacity fuses or breakers must be installed at a con-
venient location between the fryer and the power source. The disconnect switch must be installed
according to national and local codes. It should be an insulated copper conductor rated for 600
volts and 90° C. For runs longer than 50 feet (15.24 m) use the next larger wire size. CE units

require a minimum wire size of 6 mm to be wired to the terminal block. It is recommended that a
30 mA rated protective device such as a residual current circuit breaker (RCCB) or ground fault
circuit interrupter (GFCI) be used on the fryer circuit. Electrical requirements for each fryer are
found on the inside of the left door.

Ensuring Proper Ventilation
NOTICE - Ventilation must conform to local, state, and national codes.
Consult your local fire department or building authorities.
The fryer should be located with provision for venting into adequate exhaust hood or ventilation
system to permit efficient removal of steam exhaust and frying odors. The exhaust canopy must
be designed to avoid interference with the operation of the fryer. Consult a local ventilation or
heating company to help in designing an adequate system.

MAP System Theory of
MAP System Theory of Operation
Purpose
The F5 Modular Architecture Platform (MAP) system allows for control of printed circuit boards
(PCBs) responsible for each of the fryer's sub-systems. MAP allows the fryer sub-systems to
integrate for more effective operation and communication. The MAP system is connected elec-
trically by a Power Distribution PCB which converts incoming line AC voltage to 24 volts DC that
is required by each component. Communication between the MAP system components is
handled via CAN bus messaging. The F5 MAP system consists of:

CAN Bus
The F5 MAP system is a Controller Area Network (CAN) serial communication bus of com-
ponents which operate all fryer sub-systems. CAN communication is designed for robust and flex-
ible performance in harsh environments. Each component in the CAN bus system is linked
together by a chain of communication cables. The CAN communication will remain intact should a
failure of one of the PCBs occur as long as the physical electrical traces are present. CAN com-
munication would fail if one of the cables become disconnected or are severed.
Addressing
Within the MAP system, addressing is used to properly identify the type and location of com-
ponents so that a CAN message reaches its intended destination. If the address of a component
does not match the stored configuration value then an error will occur.

Addressing of vat/heat type and PMUs/GMUs are handled by a series magnets physically moun-
ted to the fryer and Hall effect sensors that are built into the component. The address for vat/heat
type and PMU location is a string of binary digits 0 or 1.

Each control panel also has a location address that is created by a unique configuration of jumper
wires on a tethered addressing cable connector. Control panels are numbered 1 through 4 from
left to right as viewed from the fryer's front.
