using the tt chments
knife bl de
This bl de is the most vers tile of ll the tt chments. The
texture you get is determined by the length of processing time.
For co rser textures use the ‘pulse’ fe ture checking the
consistency regul rly.
wh t the knife bl de c n do.
Raw meat
Mke ‘mince’ by trimming r w me t of ny excess f t nd
cutting into 2cm/3⁄4in cubes, pl ce into the bowl nd oper te for
pproxim tely 10 seconds or until the desired texture is
chieved. The longer you run the m chine the smoother the
texture will be.
Cooked meat
Follow the method for r w me t but process for shorter time.
Vegetables
Cut the veget bles into pieces pproxim tely 2.5cm/1in in size.
Process foods h ving simil r texture together eg h rder
veget bles like c rrots nd pot toes or softer ones like
mushrooms, tom toes or cooked veget bles.
Biscuit and breadcrumbs
Drop pieces down the feed tube whilst the m chine is oper ting.
S ortcrust pastry and scones
Put the flour into the bowl. Use f t str ight from the refriger tor
nd cut into 2cm/3⁄4in cubes. Process until the mixture resembles
fine bre dcrumbs but t ke c re not to overprocess. Le ve the
m chine running nd dd the liquid down the feed tube. Process
until one or two b lls of p stry re formed. Chill before use.
Soups
Purée soups either before or fter cooking. Dr in the ingredients
nd pl ce into the bowl with sm ll qu ntity of liquid from the
recipe. Process until the desired consistency h s been re ched,
then dd to the rem inder of the liquid.
Nuts
Chop nuts for c kes nd biscuits by pl cing into the bowl nd
processing until the desired consistency is obt ined.
Cake making
Sponge type c kes re best m de by the ‘ ll in one method’. All
the ingredients re pl ced into the bowl nd processed until
smooth - pproxim tely 10 seconds. A ‘soft tub’ m rg rine used
str ight from the refriger tor nd cut into 2cm/3⁄4in cubes should
lw ys be used.
Savoury dips/spreads
Pl ce the solid ingredients into the bowl in 2.5cm/1in cubes.
Process until finely chopped. Add the cre m etc., nd continue
to process until the ingredients re well blended.
Batters
With the knife bl de in position pl ce the dry ingredients, egg
nd little liquid in the bowl, process until smooth. Add the
rem ining liquid down the feed tube whilst the m chine is
oper ting.
Yeast doug
Pl ce the flour, f t nd other dry ingredients into the bowl nd
process for few seconds to mix. With the m chine running dd
the liquid mixture down the feed tube nd continue processing
until the mixture forms dough nd becomes smooth in
ppe r nce nd el stic to touch - this will t ke 45-60 seconds.
Allow the dough to rise then re-kne d for 10 seconds.
whisk
Use for egg whites nd cre m only. The whisk is unsuit ble for
other recipes. M ke sure the bowl nd whisk re free from ny
tr ces of gre se or egg yolk when whisking egg whites.
slicing nd shredding pl tes
wh t the cutting pl tes c n do.
slicing plate - slices c rrots, pot to, c bb ge, cucumber,
courgette, beetroot, onion.
s redding plate - gr tes cheese, c rrot, pot to nd foods of
simil r texture.
to ssemble the pl te c rrier
1 Select the desired pl te nd fit into the c rrier with the cutting
side uppermost.
●Loc te one end of the pl te under the rim nd press the other
end into position. It will only fit one w y round .
using the cutting pl tes
s redding plate
Cut pieces of food to fit the feed tube. Fill the tube lmost to the
top nd push down using the pusher with n even pressure
whilst the m chine is running.
Longer shreds c n be obt ined by st cking pieces horizont lly in
the feed tube eg c rrot.
slicing plate
If necess ry cut food to fit the feed tube. Core foods such s
pples nd peppers. P ck the food in n upright position in the
feed tube. The height should be slightly shorter th n the feed
tube. Using the pusher, push down with n even pressure whilst
the m chine is running.
hints
●Use fresh ingredients.
●Don’t cut food up too sm ll. Fill the feed tube f irly full, this
prevents food from slipping sidew ys during processing.
●When slicing or shredding: food pl ced upright comes out
shorter th n food pl ced horizont lly.
●After using cutting pl te there will lw ys be sm ll mount of
w ste on the pl te or in the food.
●Do not llow food to build up to the underside of the pl te -
empty regul rly.
●Push food down the feed tube using n even pressure.
m xi blend c nopy
When blending, use the m xi blend c nopy in conjunction with
the knife bl de. It llows you to incre se the liquid processing
c p city of the bowl nd improve the chopping perform nce of
the bl de.
1 Pl ce the c nopy into the bowl over the knife bl de - do not
push down .
2 Fit the lid .
