SVM-00 Small Knife Holder
SMALL KNIVES
Positioning of Machine
Sharpening direction: Towards or away from
the edge.
Note The height of the bench
must not be too high when
grinding towards the edge.
550–650 mm (22–26") is suitable
depending on your height.
Design
The SVM-00 Small Knife Holder complements the
SVM-45 Knife Jig. It extends the usage so that you can
sharpen even the smallest knives.
It consists of a Guide Bar (1), a Handle Grip (2), and an
Adjustable Clamp (3). The knife handle is fastened with
the Knob (4). The holder is designed to securely hold the
knife without damaging the handle.
The Guide Bar (1) mounts in the jaws of the SVM-45
Knife Jig and you sharpen using the same technique as
for the knife jig. The exact edge angle is set by turning
the Adjustable Stop (6) or using the Micro Adjust on the
Universal Support.

Sharpening and honing
Set the edge angle and sharpen in the same way as the SVM-45 Knife Jig, see the
Handbook. After sharpening, hone away the burr and polish the bevel on the honing
wheel. The SVM-45 instruction is also available to download from www.tormek.com.
Sharpen away from or towards the edge?
Sharpen towards the edge
The Universal Support is normally mounted vertically for
sharpening towards the edge. This will give you a more
effective grind and you will get less burr to remove when
honing. For folding knives (which cannot be locked) you
should work in this position to prevent the knife blade from
closing during the sharpening.
Important!
Apply a bit of pressure onto the stop so that
it is always resting firmly against the Universal
Support. In this way you will get an even edge
and will not risk that the knife cuts into the grind-
ing wheel.
Sharpen away from the edge
You can also sharpen away from the edge with the Uni-
versal Support mounted horizontally. If your machine is
placed on a bench over 700 mm high (27½") this will give
a better working position. Some prefer this position since
the knife cannot cut into the grinding wheel. It can also
be advantageous if for some knives you want to have a
slower grind.
Note Some knives are difficult to mount in line
with the Guide Bar. Knives can also be sharpened
with asymmetrical bevels. In these cases, and if the
angle is not correct when you turn over to sharpen
the second side, you can adjust it separately with
the Micro Adjust.

Konstruktion
Hållaren för små knivar SVM-00 är ett komplement till
Tormeks knivjigg SVM-45. Den utvidgar användningsom-
rådet så att du även kan slipa de allra minsta knivarna.
Den består av ett riktblad (1), en hållare (2) och en spän-
nare (3). Knivens handtag spänns fast med ratten (4).
Hållaren är konstruerad för att stadigt hålla fast kniven
utan att skada handtaget.
Du monterar hållarens riktblad i SVM-45 och slipar sedan
enligt samma princip som knivjiggen. Exakt eggvinkel
ställs in genom att vrida på anslaget (6) eller med uni-
versalstödets mikrojustering.

Anm Vissa knivar är svåra att montera
helt i linje med riktbladet. Knivar kan också
vara slipade asymmetriskt. I dessa fall, och om
vinkeln inte stämmer när du växlar till knivens
andra sida, kan du ställa in den sidan separat
med mikrojusteringen.
Slipning och bryning
Ställ sedan in eggvinkeln och slipa på samma sätt som med SVM-45, se instruktion i
handboken. När slipningen är klar, brynar du bort råeggen och polerar slipfasen på bryn-
skivan. Instruktionen nns också tillgänglig att ladda ned från www.tormek.se.
Med eller motslipning?
Motslipning
Universalstödet placeras normalt vertikalt för motslipning.
Det ger en effektivare slipning och du får en mindre råegg
att bryna bort. För ckknivar (som inte kan låsas) bör du
arbeta i denna position så riskerar du inte att kniven viker
sig under slipningen.
Viktigt!
Lägg lite tryck på anhållet så att det alltid
ligger stadigt an mot universalstödet.
Då får du en jämn och fin egg och riskerar
inte att kniven hugger i slipskivan.
Medslipning
Du kan också slipa med eggen, placera då universalstödet
horisontellt. I de fall då maskinen är placerad på en bänk
som är ca 700 mm eller högre, ger det en bättre arbets-
position. En del föredrar medslipning då kniven inte kan
hugga i slipskivan. Det kan också vara lämpligt om man för
vissa knivar vill ha en långsammare avverkning.

Konstruktion
Die Halterung SVM-00 ist eine ergänzendes Zubehör zur
Schleifvorrichtung SVM-45. Sie erweitert den Anwen-
dungsbereich, so dass Sie auch kleinste Messer schleifen
können.
Sie besteht aus einer Richtschiene (1), einer Halterung
(2) und einem Spannbügel (3). Der Messergriff wird mit
der Feststellschraube (4) xiert. Die Halterung dient zum
sicheren Halten des Messers, ohne dass der Messergriff
beschädigt wird.
Sie montieren die Richtschiene der Halterung in die
SVM-45 und schleifen dann nach dem gleichen Prinzip
wie mit der eigentlichen Schleifvorrichtung. Der genaue
Schneidenwinkel wird eingestellt, indem Sie den verstell-
baren Anschlag (6) drehen oder die Feinjustierung der
Universalstütze benutzen.
