Berkel’s slicers are designed to slice meat and other food products safely and
efciently.However,unlesstheoperatorisproperlytrainedandsupervised,
there is the possibility of a serious injury. It is the responsibility of the owner
toensurethatthisslicerisusedproperlyandsafely,strictlyfollowingthe
instructions contained in this manual and any requirements of local law.
Nooneshoulduseorservicethisslicerwithoutpropertrainingandsupervi-
sion.Alloperatorsshouldbethoroughlyfamiliarwiththeprocedurescon-
tainedinthismanual.Evenso,Berkelcannotanticipateeverycircumstanceor
environmentinwhichitsslicerswillbeused.You,theownerand/oroperator,
mustremainalerttothehazardsposedbythefunctionofaslicer—particu-
larlythesharprotatingbladeandmovingtable.Nooneunder18yearsofage

INTRODUCTION
PURPOSE OF THE MANUAL
Thispublicationcontainsalltheinformationnecessaryfortheinstallation,useandmaintenanceofthe
manualywheelslicingmachinestobeusedforfood,withcircularblade,models330M.Thepurpose
ofthismanualistoallowtheuser,aboveallthedirectuser,totakeeveryprecautionandarrangeallhu-
man and material means necessary for a safe and lengthy use of these machines.
KEEPING THE MANUAL
Thismanualmustbegiventothepersonwhowilluseandmaintainthemachinesandthispersonwill
keepthemanualinasafeanddryplace,readytobeused.Werecommendthatacopybekeptonle.
Foranycorrespondencewiththemanufacturerorauthorisedpersonnel,pleaserefertotheinformation
on the plate and the machine serial number.
Themanualmustbekeptfortheentirelifeofthemachineandincaseofneed(ex.anydamagetoeven
apartofthemanualthatmakesconsultingitdifcult)theusermustacquireanewcopyexclusively
from the manufacturer.
The user must let the manufacturer know the address of any new owner of the machine.
USE OF THE MACHINE
Theuseandcongurationsofthemachinearetheonlyonesallowedbythemanufacturer;donottryto
use the machine differently from the indications.
The machines are to be used for cutting only food products of the type and size indicated in the follow-
ing paragraphs.
Themanufacturerdeclinesallresponsibilityderivedfromanimproperuseorusebypersonnelwhohas
notreadandfullyunderstoodthecontentsofthismanual;changesand/orrepairscarriedoutonone’s
own;theuseofsparepartsthatarenotoriginalornotspecicforthetypeofmachine.
GENERAL INFORMATION
MACHINE LIMITS, SAFETY, AND REGULATIONS
The machine has been designed and made to slice food products of the type and size indicated below.
PRODUCTS THAT CAN BE SLICED
The following are products that can be sliced:
• Alltypesofcoldcuts(cooked,raw,smoked);
• Bonelessmeat(cookedorrawatatemperatureofnolowerthan+3°C);
• Breadandcheeses(thosethatcanbesliced,suchasGruyere,Fontina,etc.).

PRODUCTS THAT CANNOT BE SLICED
The following are products that cannot be sliced because they could cause damage to people and equip-
ment:
• Frozenfoods;
• Deep-frozenfoods;
• Foodwithbones(meatandsh);
• Vegetables;
• Any other product that could be sliced but not meant for consumption.
NOTE: Do not try to slice products that are not allowed.
Environmental conditions for using the machine
Theoperatingenvironmentmusthavethefollowingcharacteristics:
• Temperature from-5°Cto+40°C
• Relativehumidity max.95%
Themachinecannotbeusedinopenareasand/orexposedtoatmosphericagentsandinplaceswith
fumes,smokeorcorrosiveand/orabrasivedust,withtheriskofreorexplosionandinanycasewhere
theuseofanti-deagratingcomponentsareprescribed.
General safety regulations
The slicing machine must be used only by personnel who has carefully read the contents of this man-
ual.Theoperatorsmustbeover18yearsofage,inperfectmentalandphysicalconditions,havethe
rightattitudeandcapacity(withthenecessaryknowledgeformanoeuvringandnormalmaintenanceof
simplemechanicalandelectricalcomponents).
Forasafeuseofthemachinefollowtheinstructionsbelow:
• Install the machine according to the instructions in the paragraph “Installation”
• Installthemachinesothatitisfarfrompeoplewhomustnotuseit,especiallychildren
• Do not be distracted while using the machine
• Donotwearlooseclothingoropensleeves,ifnecessaryuseheadgeartokeephairoutofthe
way
• Do not let anyone come close to the machine while in use
• Donotremove,coverorchangetheplatesthatareonthemachineand,iftheyaredamaged,
replace them immediately
• Donotremovetheprotectivedevicesanddonotchangeorexcludethemechanicalprotective
devices
• Onlyslicepermittedproducts;donottrytosliceanyproductsthatarenotallowed
• Theareaaroundthemachine,wherethefoodislaidandtheoorwheretheoperatorworks
must always be kept clean and dry
• Do not use the machine as a support surface and do not place any object on it that does not per-
tain to normal cutting operations

• Immediatelystopthemachineandcallthetechnicalassistanceserviceinthecaseofanomalous
function,suspectofbreakages,incorrectmovements,unusualnoises,etc.
• Alwaysuseglovesthatareresistanttocuttingandtearingforthecleaningandmaintenance
operations
• Thegoodstobecutaretobeplacedonandremovedfromtheslidingoverplateonlywhenthe
plateiscompletelyretracted(farfromtheblade)andthecarriageallthewaytowardstheopera-
tor
• No cutting accessories are allowed unless supplied by the manufacturer
• Foranyextraordinaryintervention(beltreplacement,bladereplacement,etc.)pleasecontactthe
manufacturer or authorised assistance personnel
GUARANTEE AND MANUFACTURER’S RESPONSIBILITY
Theguaranteeofagoodfunctionandacompleteconformityofthemachines,thataretobeusedac-
cordingly,dependsonthecorrectapplicationoftheinstructionscontainedinthismanual.
Themanufacturerdeclinesalldirectandindirectresponsibilityderivingfrom:
• Not following the instructions in the manual
• Personsusingthemachinewhohavenotreadandunderstoodthecontentsofthismanual
• Usingthemachinesothatitdoesnotconformtospecicregulationsinforceinthecountryof

DESCRIPTION
UNPACKING
Thisslicerwasinspectedbeforeleavingthefactory.Thecarrierassumesfullresponsibilityforthe
safedeliveryuponacceptanceoftheshipment.Checkforpossibleshippingdamageimmediatelyafter
receipt.
Iftheslicerisfoundtobedamaged,completethefollowingsteps:
1. Carriermustbenotiedwithin5businessdaysofreceipt.
2. Carrier'slocalterminalmustbenotiedimmediatelyupondiscovery(notetime,date,andwho
wasspokento),andfollowupandconrmwithwrittenorelectroniccommunication.
3. All original packing materials must be kept for inspection purposes.
4. Theslicercannothavebeenmoved,installed,ormodied.
5. NotifyVulcanCustomerServiceimmediatelyat800-814-2028.
Checkthatthepackagingisunopenedandundamaged;otherwise,immediatelyinformtheforwarding
agent or the area agent.
To take the machine out of the packaging proceed as follows:
• Cutandremovetheplasticstraps
• Cutthecardboardboxatthebasewhichisattachedtothepallet
• Liftandremovethecardboardbox;takeoutthepolyethylenebagswiththemachineywheel
and rubber feet
• Loosenandremovethetwoscrewsthatattachthemachinetothepallet

Supply of machine and support column
Themachineissuppliedwithalsotwowashersandtwobolts,puttogetherwiththefeet.
1. Lift the machine carefully and pay attention to insert the rub-
berholedfeetinordertohavethesameshapeofthepedestal
plate(markedwiththearrow)withthesameshapeofthe
machine.
2. Place the machine on the support column trying to put the
holed rubber feet in correspondence of the holes on the plate.
3. Adjust the position on the column regulating the height of the
foot E.
4. Checkthatthemachineiscorrectlysettledonthecolumn,
then lock the machine in place by inserting the screws in the
holes.
5. Eliminateallthepackaging(straps,cardboard,polyurethane
foamorpolystyrene,polyethylenebags,etc.)

Thepackagingcomponents(plasticstraps,cardboard,polyurethanefoam)canbethrownawaywith
normalsolidwastesandthereforethereisnodifcultyindisposingofthem.
Howeveritisadvisabletodisposeofproductsseparately(differentialcollecting)inconformitywith
the regulations in force for adequate recycling.
Donotdiscardthepackagingproductsintheenvironment!
ASSEMBLY
Supply of machine only:
1. Lift the machine carefully and insert the four similar
rubber feet in the lodgings in the base.
2. Put under the head of the machine the other foot (dif-
ferentfromtherubberfeet)screwingitinthelodging
in the head.
3. Put the machine in its place of installation.

Assembly of the ywheel:
1. Movethemachinecarriageallthewaytowardstheoperator.
2. Takeoutthetaperpinfromtheywheelshaft.
NOTE: Hammerthepinatthetaperedend(smallerdiameter).
3. Inserttheywheelsothatthemaneuveringhandleisatthetopandtotheleft,asshowninthe
gure,comparedtotheholeforthetaperpin.
4. Checkthecorrectcorrespondenceoftheywheelshaftsleeveholes.
5. Insertthepinintothesleeveasshowninthegurewiththetaperedend(smallerdiameter)
towardsthesleeveitself.
6. Hammertheoppositeendofthepin(largerdiameter)insertingitalltheway.

GENERAL DESCRIPTION
Theslicingmachinehasbeendesignedandmadetooffermaximumsafetywheninuse,duringclean-
ingandordinarymaintenance;maximumhygienefromtheuseofinoxidisablematerialsoradequately
protectedagainstoxidisationtogetherwithanattentivedesignofallthepartsthatcomeintocontact
withfood;maximumcuttingprecisionandcapacitytogetherwithsturdinessandreliabilityofthestruc-
ture.
Themachineisessentiallymadeupofabasethatholdsacircularbladethatisverticallymountedanda
slidingcarriageonbars,paralleltothecuttingedgeoftheblade,whichinturnholdsafoodplate.
Thefoodplateismadeupofabaseplateandanoverplatewhichslidesatrightanglestotheedgeof
thebladeforslicingthefood;theoverplatealsohasanappropriateself-stoppingdevice,whichcanbe
regulatedinheight,tokeeptheproductinitsproperplaceduringcuttingoperations(foodpress).
Carriagemovementandbladerotationarecompletelymanual;byactivatingrotationoftheywheel
with the special handle the carriage is put into motion and at the same time with a chain transmission
the blade is turned.
Theproductiscutduringtheforwardmovementofthecarriage,paralleltotheblade;thethickness
ofthesliceisregulatedbyamechanicaldevicewhichisautomaticallystartedeverytimethecarriage
comesback,makingtheslidingoverplatetransversallytowardstheblade,withavaluewhichisprede-
termined by the graduated handwheel.
Allthecomponentsofthemachinearemadeofalightaluminiumalloy,instainlesssteelandplasticfor
food products as according to the sanitary regulations in force.
Themachinehasasharpenerwhichisextremelyeasyandsafetouse.
Thefoodplate,sharpenerandbladecovercanberemovedforcleaning.

DONOTusethemachineifyouarenotinperfectpsycho-physicalconditionandDONOTletanyone
comenearduringuse;concentratewhenloadingandcuttingtheproduct;payattention!
Onlycutproductswhichareallowed;DONOTtrycuttingproductswhichareforbidden.

TIVEGLOVESWHICHARERESISTANTTOCUTSANDTEARS.

INSTALLATION
INSTALLATION OF MACHINE
Ifasupportcolumnisnotused,installthemachine
onasurfacewhichislevel,dryandsuitableforthe
weight of the machine plus the food to be sliced.
Check that there is nothing that can get in the way of
theywheel,carriagemovementandfoodloading.
MANEUVERING FLYWHEEL
Theywheel(1)turnedclockwiseallowsthecar-
riagetobemovedwiththefoodplatewithsimulta-
neous blade rotation.
REGULATING KNOB FOR SLICE THICK-
NESS
The thickness of the slice is regulated by turning
thegraduatedscaleknob(2)clockwise.
OVERPLATE ADVANCE HANDWHEEL
Thehandwheel(3)allowstheoverplatewiththe
product to be brought quickly near to the blade after
loading it or taken away from the blade after cut-
ting or for small regulations.

USING THE SLICING MACHINE
LOADING THE GOODS
1. Usingtheywheel(1)bringthecarriage(2)allforward(towardstheoperator).
2. Pullbacktheslidingoverplate(3)completely(awayfromtheblade)usingthehandwheel(4).
3. Placethefoodtobeslicedontheoverplateandblockitwiththefoodpress(5)regulatingthe
height as well.
4. Regulatethethicknessoftheslicebypullingandrotatingtheknob(6)atthesametime,gradu-
atedfrom0to16.
5. Bringtheoverplatewiththegoodstowardsthebladebyusingtherapidadvanceleverorthe
handwheel.
CUTTING THE GOODS
1. Turntheywheelclockwise(donotturnitcounterclockwise,thiscouldseriouslydamagethe
machine).
2. Duringtheforwardmovementofthecarriage(awayfromtheoperator)thegoodswillgointo
thebladeandtheslice,guidedbytheslicedeector,willfallontotheplatebelow.
3. Duringthereturnmovementofthecarriage(towardstheoperator)themechanicaldevicewhich
makestheoverplateadvancetransversallytowardsthebladewillbeputintomotion,itsvalue
pre-determinedwiththeslicethicknessregulatingknob.

CLEANING THE SLICING MACHINE
GENERAL INFORMATION
Themachinesmustbeproperlycleanedatleastonceaday,ifnecessaryevenmore.Ifthemachines
havenotbeenusedforawhiletheymustbecleanedbeforeuseaswell.

Dangerofcutting!Useprotectivegloveswhichareresistanttocuttingandtearingandconcentrateon
thejobathand.PAYCAREFULATTENTION!
1. Opentheslicedeector(1).
2. Takeoutthecontainer(2).
3. Loosentheknob(3)andliftthesliding
overplate(4)withitsfoodpressarm.
4. Removethebladecover(5).
5. Removethesharpener(6),raiseitusing
the knob on the top.
Cleanallthedisassembledparts,themachinebody,etc.onlyusinghotwaterandabiodegradable
foamingdetergentfordishesatatemperatureofnolowerthan+30°Cusingasoft,spongyclothanda
nylon brush if necessary for the plate and the sharp food press.
Rinse well with a lot of hot clean water only and dry with a soft cloth or a spongy material.

DO NOT clean the machine with jets of water or steam or similar.

MAINTENANCE AND REPAIRS
GENERAL INFORMATION
The operator is allowed to carry out the following maintenance:
• Bladesharpening,periodically;theintervalandlengthofthesharpeningobviouslydependon
theuseofthemachine(worktimesandtypeofproductused).
• Lubricationofthecarriageguidebarsandoverplate:weekly.
• Adjustmentofthebladedrivechain:asnecessary,seetherelativeparagraph.
• Adjustmentofthebevelgearpair:asnecessary,seetherelativeparagraph.
Maintenancetobecarriedoutexclusivelybypersonnelauthorisedbythemanufacturerisasfollows:
• Replacing the blade
• Replacing the sharpener grindstones
• Replacing the chain
• Repairingthestructuralparts,repairingand/orreplacingcomponentsunderthebase
SHARPENING THE BLADE
Proceed as follows as soon as it is noticed that there is less cutting capacity:

Dangerofcutting!Useprotectivegloveswhichareresistanttocuttingandtearingandconcentrateon
thejobathand.PAYCAREFULATTENTION!
1. Opentheslicedeector(1).
2. Clean the blade with denatured alcohol or hot water.
3. Withtheknob(2)raisethecoverofthesharpener,turnit180°andloweritagain.

4. Startthemachine(onlybladerotation).
5. Movethelever(3)fromthe“0”positiontothe“sharpening”positionandholditinthisposition
for10-15seconds.
6. Movethelever(3)tothe“burr”positionfor2-3secondstoremovethesharpeningburr.
7. Puttheleverbacktothe“0”positionandstoptheblademovement.
8. Raisethecoveragain,turnit180°andputitbacktoitsoriginalposition.
9. Clean the blade and the machine.
NOTE: Donotinsistmorethan2-3secondswiththeburringoperationsoastoavoiddamageto
the edge of the blade.
LUBRICATING THE GUIDE BARS OF THE CARRIAGE AND OVERPLATE
• After each cleaning operation of the machine
putafewdropsofoilinthehole(1)ofthe
plate(2).
• Putafewdropsofoilalongtheslidingbar(3)
of the carriage.
• Turntheywheelbriey.
NOTE: OnlyusewhiteVaselineoil.Donot
usevegetableoils.

ADJUSTING THE BEVEL GEAR PAIR
Ifthereistoomuchplayintheywheelatthestartofrotationproceedasfollowstoeliminateit:
1. Removethecover(1)usingascrewdriver.
2. Tightenthenut(2)untilallplayiseliminated.
3. Replacethecap(1).
DISMANTLING THE SLICING MACHINE
The machines are made up of:
• Aluminium alloy structure
• Insertionsandvariousinstainlesssteel
• Electricpartsandwires,etc.
• Electric motor
• Plasticmaterials,etc.
Ifdisassemblyanddismantlingaretobecarriedoutbyathirdparty,onlyconsultrmsthatareautho-
risedinthedemolitionoftheabovementionedmaterials.Ifyoucarryoutthedismantlingyourselfthe
materialsmustbeseparatedaccordingtotypeandconsultaspecialisedrmfortheirdisposal.Always
abide by the regulations in force in your country.
ADJUSTING THE CHAIN
If you should hear a ticking noise when using the ma-
chine check the tension of the blade chain as follows:
1. Loosenthetwonuts(1)whichholdthehead
(2).
2. Raisethehead(2)untiltherequiredtension
of the chain is obtained.
3. Tighten the nuts and check.
