1. INTRODUCTION
1.1. PURPOSE OF THE MANUAL
This publication contains all information neces-
sary for the installation, use and maintenance of
manual, circular blade ywheel slicer machines
for use with foodstuffs, Model Tribute.
The purpose of this manual is to allow users,
especially end users, to take all precautions
and prepare all human and material resources
needed for safe and durable use of machines.
1.2. STORING THE MANUAL
This manual should be delivered to the person
responsible for the use and maintenance of
machines who will provide for its storage in a
protected and dry location where it will remain
available for consultation.
It is advisable to also keep a copy on le.
In the event of an exchange of information with
the manufacturer or with authorised service per-
sonnel, refer to ID plate data and to the ma-
chine serial number.
This manual must be kept throughout the life of
the machine and if necessary (e.g.: damage that
even partially affects consultation, etc.), the user
must purchase another copy, requested solely
from the manufacturer.
In the event of sale of the machine, the user is
asked to please inform the manufacturer of the
address of the new owner.
1.3. INTENDED USE OF MACHINES
The intended machine use and provided con-
gurations are the only ones permitted by the
manufacturer. Do not attempt to use machines in
a manner not in accordance with the instructions
provided.
Machines are intended solely for cutting food
products according to the type and size limits
indicated in the following paragraphs.
The manufacturer declines any liability arising
from improper use or use by personnel who has
not thoroughly read or understood the contents
of this manual, any modications and/or repairs
carried out independently by the end user, use
of non-original parts or parts that are not spe-
cic to the machine model.
Promptly contact the manufacturer or an au-
thorised customer service centre citing the
paragraph number of the topic that interests
you in the event of doubts or for clarication.
2. GENERAL
2.1 MACHINE LIMITS,
SAFETY REGULATIONS
This machine has been designed and construct-
ed to slice foodstuffs according to the type and
size limits indicated in paragraphs 3.2, 3.3 and
3.4.
Environmental conditions of machine use
The operating environment must have the follow-
ing features:
- temperature..............................from -5 °C to +40 °C
- max relative humidity................................................. 95%
The machine cannot be used in open places
and/or in places exposed to the elements or in
environments with vapours, fumes or corrosive
dust and/or abrasives, with risk of re or explo-
sion and in any case in locations where the use
of explosion-proof equipment is required.
General safety regulations
The slicer must be used only by personnel who
have carefully read the information contained in
this publication.
Only persons over the age of 18, in perfect
psychological and physical conditions and with
proven ability and skills (with the knowledge
necessary for normal use and maintenance of
simple mechanical and electrical components)
can operate the machine.

Comply with the following instructions for
safe use:
- Install the machine in compliance with instruc-
tions contained in the ‘installation’ section.
- Install the machine in a location outside the
reach of any persons not involved in opera-
tions relating to its use, especially children.
- Concentrate when using the machine; take
care not to become distracted!
- Do not wear loose clothing or clothing with
open sleeves, use appropriate headgear to
hold back hair, if necessary.
- Do not allow anyone to approach during
product cutting operations.
- Do not remove, cover or change plates af-
xed to the machine body and promptly re-
place them in the event they become dam-
aged.
- Do not remove guards and do not change or
exclude mechanical protections.
- Only slice permitted type products. Do not at-
tempt to cut any prohibited type products.
- Always keep the sliced product support area,
the area around the machine and the opera-
tor oor level clean and dry.
- Do not use the machine as a support surface
and do not rest any foreign objects not relat-
ed to normal cutting operations upon it.
- Immediately shut down the machine and re-
quest assistance from authorised service per-
sonnel in the event of malfunctions, suspect-
ed breakdowns, incorrect movement, unusual
noise, etc.
- Always use cut and tear resistant gloves for
cleaning and maintenance operations.
- Place and remove the product to be sliced on
the sliding feed plate only when the plate is
fully retracted (far from the blade) and the
trolley is moved completely toward the oper-
ator.
- The use of cutting accessories not supplied by
the manufacturer is not permitted.
- Contact the manufacturer or authorised ser-
vice personnel for any special maintenance
operations (chain, blade, etc. replacement).
2.2. WARRANTY AND MANUFACTURER
RESPONSIBILITY
Guarantee of smooth operation and full com-
pliance of machines for the service in which
they are intended is directly linked to correct
application of the instructions contained in this
manual.
The manufacturer disclaims any liability result-
ing from direct and indirect:
- failure to follow instructions contained in
the manual;
- use by any personnel who has not read and
understood the contents of this manual;
- use not in compliance with specic regula-
tions in force in the place of installation;
- unauthorised modications and/or repairs
carried out on the machine;
- use of accessories not supplied by the man-
ufacturer or use of non-original spare parts;
- exceptional events.
Transfer of the machine without its manual auto-
matically voids the manufacturer’s responsibility.
If the machine is sold to a secondary user in an-
other European Union language country, it will
be the responsibility of the primary user to pro-
vide a copy of this manual translated faithfully
and correctly in the language of the country in
which the machine will operate.
In the event of machine transfer, the primary
user is also asked to inform the manufacturer of
the address of the new user so that they can be
reached with any information deemed essential.
The original text of this publication, written in
Italian, shall be the sole reference for resolution
of any disputes related to the interpretive trans-
lation in European Union languages.

2.3. USER OBLIGATIONS
In order to benet from the manufacturer’s
warranty, the user must scrupulously observe the
instructions given in this manual and in particular:
- always operate within the limits of use of the
machine;
- always perform constant and diligent
maintenance;
- assign use of the machine to capable,
appropriately trained personnel who have
read this manual.

3.3 PRODUCTS THAT CAN BE SLICED
The following products can be sliced:
- all types of cold cuts (raw, cooked, smoked);
- meat without bones (raw or cooked at a tem-
perature of no less than +3°C);
- bread and cheese (obviously types that can
be sliced such as Gruyère, Fontina cheese,
etc.)
3.4 PRODUCTS THAT CANNOT BE SLICED
The products that cannot be sliced because they
can cause serious damage to property and per-
sons are as follows:
- frozen foodstuffs;
- deep-frozen foodstuffs;
- foodstuffs with bones (meat and sh);
- vegetables in general;
- any other type of product that can be sliced
but is not for food use.
CAUTION: Do not attempt to cut any
prohibited type products
4. DESCRIPTION
4.1 OPENING PACKAGING
Check that delivery packaging is intact. If not,
promptly inform the shipper or area agent.
To remove the machine from packaging:
- open the cardboard box from the top side;
- remove the casing protecting the machine.
WARNING:
The packaging components (cardboard box,
spacers, etc.) are products comparable to
municipal solid waste and therefore can be
disposed of without difculty.
It is however advisable to dispose of products
separately (waste separation) in accordance
with current recycling regulations.
DO NOT DISPOSE OF PACKAGING
PRODUCTS IN THE ENVIRONMENT!

4.3 GENERAL DESCRIPTION
This slicer has been designed and built to pro-
vide maximum safety during use, cleaning and
routine maintenance. Maximum hygiene is ob-
tained with the use of stainless materials or
materials that have been otherwise adequately
protected against oxidation together with the
careful design of all those parts that may come
into contact with products to be sliced. Extreme
cutting precision and capacity together with
structural robustness and reliability.
The machine is essentially composed of a base
supporting a circular blade set vertically and a
sliding trolley on suitable guides parallel to the
blade, which in turn supports a product-holder
plate.
The product-holder plate itself is composed of a
base plate and a feed plate that slides orthog-
onally with respect to the blade for the product
being sliced. The feed plate is also provided
with a height-adjustable self-locking device to
keep the product in the necessary position dur-
ing cutting (top clamp).
Trolley movement and blade rotation are fully
manual. Activate rotation using the ywheel via
the corresponding handle and a lever will move
the trolley and, at the same time, a chain return
will provide blade rotation.
Product cutting is carried out during the forward
stroke of the trolley, parallel to the blade. The
thickness of the slice can be adjusted by means
of the mechanical device which is automatically
activated upon each return stroke of the trolley,
moving the sliding feed plate with the product
in the transverse direction, toward the blade, at
a value pre-set using the corresponding gradu-
ated hand wheel.
All machine components are made of light alu-
minium alloy, in stainless steel and in plastic ma-
terials for food use in compliance with sanitary
regulations in force.
The machine is equipped with a sharpener built
for ease of use and safety.
The product-holder plate, sharpener and ngers
guard can be removed for cleaning.
4.3.1 Risks during use
DO NOT use the machine if you are not in
perfect psychological and physical conditions
and DO NOT allow anyone to approach the
machine during use. Use great care when
loading and cutting products and take care
NOT to become distracted!
Only slice permitted type products. DO NOT
attempt to cut any prohibited type products.
ALWAYS USE CUT AND TEAR RESISTANT
GLOVES DURING CLEANING, LUBRICATION,
BLADE SHARPENING OPERATIONS.

5. INSTALLATION
5.1 MACHINE INSTALLATION
If not using a support column (optional), install the
machine on a level, dry surface that is suitable to
support the weight of the machine itself plus the
product to be sliced. See paragraph 3.1.
Ensure that there are no impediments to y-
wheel movement, trolley stroke or the loading
of product for slicing.
5.2 DESCRIPTION OF CONTROLS
5.2.1 Using the Flywheel
Clockwise ywheel (1) rotation causes trolley
movement with the product holder plate and,
simultaneously, blade rotation.
5.2.2 Slice thickness regulating knob
Slice thickness can be adjusted by moving for-
ward the lever (2) on the graduated scale. Ad-
justment range: see paragraph 3.2.
5.2.3. Feed plate forward hand wheel
This hand wheel (3) allows you to quickly move
the feed plate with the product toward the
blade after its loading, or to move it away af-
ter cutting operations or small movements for
adjustment.
5.2.4 Feed plate fast forward lever
This lever (4) allows you to quickly move the
feed plate with the product toward the blade
after its loading, or to move it away after cut-
ting operations, moving it downward and keep-
ing it in position.
This operation is signicantly faster than when
carried out with the hand wheel (3).

6. SLICER USE
6.1 LOADING PRODUCTS
- Activate the ywheel (1), bring the trolley (2)
fully forward (toward the operator).
- Completely reverse (away from the blade)
the sliding feed plate (3) using the hand
wheel (4) or the fast forward lever(5).
- Place the product to be sliced on the sliding
feed plate and lock it in using the top clamp
(6), conveniently adjusting its height.
- Arrange the desired slice thickness by sliding
the lever (7) with graduation from 0 to 10.
- Move the feed plate with product forward
(toward the blade), using the fast forward le-
ver or the hand wheel.
6.2 CUTTING PRODUCTS
- Activate the ywheel, having it turn clockwise
(do not turn the ywheel anti-clockwise as re-
verse ywheel rotation can seriously damage
the machine).
- During forward trolley stroke (away from the
operator), product will enter into the blade
and slices, guided by the slice protector, will
be removed and will fall on the meat table.
- During return trolley stroke (toward the oper-
ator), the mechanical device which moves the
feed plate in the transverse direction toward
the blade is activated at a value pre-set using
the slice thickness regulating knob.

6.3 CLEANING THE SLICER
6.3.1 General
The machine must be thoroughly cleaned at
least once a day or more frequently if neces-
sary. It must be cleaned before use after a long
or short long period of inactivity.
CAUTION: Risk of cutting!
Use cut and tear resistant gloves and perform
all operations with great care.
DO NOT BECOME DISTRACTED!
- Remove the tray (1).
- Loosen the knob (2) and lift the sliding feed
plate (3) with its top clamp arm.
Clean all dismantled parts, the machine body,
etc. using only hot water and a biodegradable
foaming detergent for dishes at a temperature
of no lower than +30 °C, using a soft, spongy
cloth and, if necessary, a nylon brush for sharp
plate and top clamp areas. Rinse solely with
warm water and dry with a soft, spongy cloth.
CAUTION: DO NOT clean the machine
with jets of water or steam or any similar
methods.

7. MAINTENANCE
AND REPAIRS
7.1 GENERAL
Maintenance operations that operators are per-
mitted to perform:
- blade sharpening: periodically. Frequency
and duration of sharpening obviously de-
pends on equipment use (operating time and
product processed);
- trolley and feed plate sliding guide
lubrication: weekly.
Operations to be entrusted solely to authorised
manufacturer service personnel:
- blade replacement, sharpener grinding
wheel replacement, chain replacement;
- repairs of structural parts, repair and/or re-
placement of area below the base.
7.2 BLADE SHARPENING
Proceed as follows immediately after a de-
crease in cutting capacity is noted:
CAUTION: Risk of cutting!
Use cut and tear resistant gloves and
perform all operations with great care.
DO NOT BECOME DISTRACTED!
- loosen the sharpener locking knob (1);
- lift the sharpener and rotate it 180°;
- lower the sharpener back down with care; the
blade will automatically centre between the
two grinding wheels;
- re-lock the knob (2);
- rotate the ywheel and simultaneously press the
button for approximately 10-15 seconds (3);
- stop rotation and verify in the backlight that a
slight burr has formed on the blade edge;
- set the ywheel back into rotation and simulta-
neously press the button for 2-3 seconds (4);
- return the sharpener to its original position.
NOTE: Do not excessively force (more than
2-3 seconds) the deburring operation
(4)
to
prevent damaging spring-back of the blade
edge.

7.3 LUBRICATING THE
TROLLEY AND FEED
PLATE SLIDING GUIDES
- Put some drops of oil over the
bar (1) and in the gear wheel
junction and the slice thickness
regulating knob (2);
- put some drops of oil in the holes
(3 and 4);
- put some drops of oil in points (6
and 7);
- put some drops of oil in the
ywheel/slicer body junction (5);
- briey activate the ywheel.
NOTE: USE WHITE VASELINE
OIL ONLY. DO NOT USE
VEGETABLE OILS.

8. SLICER DEMOLITION
Machines are composed of:
- aluminium alloy structure;
- stainless steel inserts and various components;
- plastic materials, etc.
When commissioning third parties to perform
dismantling and demolition, only businesses au-
thorised to dispose of these materials should be
employed.
When demolishing without outside assistance,
sort the various types of material and hand over
to authorised businesses for disposal.
Always comply with the current legislation of the
country in which the slicer is utilised.
CAUTION: Always consult the manufacturer
or authorised service personnel as regards
removal and disposal of the blade and sub-
sequent cutting edge disposal so that this can
take place in complete safety.
DO NOT DUMP SCRAP COMPONENTS IN
AREAS WHERE ACCESS IS NOT PERMITTED
(BARRIERS OR SIGNS) AS THEY REPRESENT
A SERIOUS PERSONAL HAZARD,
PARTICULARLY FOR CHILDREN AND
ANIMALS. ALL RESPONSIBILITY FALLS ON
THE OWNER.
