Introduction
The Concetto Evo model falls under the super-automatic category, it has a capacitive back-lit
keyboard with color icons, a 3.5” HD color display, it offers the possibility of a Cup warming boost
unit (sold as an option). Also, it offers the ability of programming 12 different beverage selections
or recipes. This machine features the capability of dispensing coffee, hot water, and steam at the
same time.

Getting the machine out of the box
Removing the cardboard box.
Remove the screws that hold the machine at the bottom of the pallet, by using a metric Allen
wrench number 6
Important: remember to keep all the pieces that come in the box when unpacking because we
will need to put each piece back at the time of repackaging
When receiving the Concetto Evo machine, it comes in a cardboard box attached to a wooden
pallet. Special care must be taken when handling the appliance to avoid causing damage to the
appliance and people.
When handling the appliance, there is a risk of hands and/or feet being crushed or getting
splinters from the wood: use gloves and proper work shoes.

Tools needed:
•Phillips screwdriver # 1
•10 mm wrench tool, to adjust the grinders (included in the bag of accessories)
•Pair of long nose pliers
•Allen wrench # 6
•An electronic scale capable of reading up to the decimal point.
•A measuring cup.
•Coffee beans
Location of the screws
Install the 4” legs in locations where to be
compliant with NSF certification
requirements, is a must.
The idea is to have to have enough clearance
from the surface on which the machine is
installed to facilitate the cleaning.
In places where we do not need to meet these
standards, install the 2” legs.
Make sure to install the machine at least 8” from
the wall.
Lift the pallet to remove the fixing bolts. Start by
removing two bolts on one side of the pallet
then, turn the machine around and remove the
other two bolts.
Remove the machine from the pallet and install
instead of the bolts, the legs by screwing-in the
threaded portion of the bolt ofeach leg andtheir
spacer.
Install the appliance on a sturdy surface and
level it by adjusting the height of the feet.

Coffee bean hopper
•Next, remove the 2plastic nuts that hold the Drain fitting tray in place.
•Now, we will need to remove a back plate (see fig below) by removing the 2 copper nuts
located diagonally on each end.
In case you need to remove one or both coffee
bean hoppers proceed as follows:
Remove cover (H)
Use the grinder adjustment tool (C) to remove the
2 metal bolts (B) that hold the bean hopper in
place.
Make sure that the lever that blocks the coffee
chute is in the close position.
Remove coffee bean hopper.

Back plate
•Next, we will need to remove a bottom plate by removing two wing nuts located on each
end (see fig below). Detach the two rubber protections. Use the two indentations to feed
the electrical cord and to pass through it the plastic drainpipe, if you choose to connect
directly to a drain. Should you choose not to connect directly to a drain, the residual water
will be collected in the black drip tray. Replace the two wing nuts.
•Now we have access to the 3/4” water inlet valve.

Connecting to a water network
Water connection options:
•Standard water connection 3/4“fitting (1-8 bar) water supply
•Optional water supply pump/independent water tank kit.
Use a ¾” pipe fitting connector to connect to the main water supply. If needed, use a 90° fitting
elbow to feed the water inlet valve.
The water network must provide a pressure ranging between 0.15 MPA to 0.8 MPA (1.5 to 8
bars). The water hose must be certified according to the IEC 61770 standard.
The water network must provide drinking water
with a hardness not lower than 8 ºF.
The machine should be supplied with water
treated with a descaling device, particularly in
case of water with a high content ofcalcium and
magnesium salts (hard water).
Connect a drainpipe to the fitting and fix it with
a serrated clamp.
Connect the machine to the drinking water
network through the fitting (using tube andfitting
made of materials suitable for food).

Calibrating the grinders
The espresso machines come with factory pre-set parameters and calibration; however,
depending on the characteristics of coffee beans in use, some adjustments might be needed.
To calibrate the grinders, we will need the
following:
•An electronic scale capable of reading
up to the decimal point.
•A measuring cup.
•10 mm wrench tool, to adjust the
grinders (included in the bag of
accessories).
•Coffee beans in the hoppers.
Remove the grill and the bottom
drip tray.
Slide down the Cappuccinatore
and open the front door.
Remove the connector of the
coffee brewer.
Press on the black lever and
remove the brewer unit.
Using the 10 mm wrench adjustment
tool supplied, rotate the knob counter-
clockwise to set a coarser grind (+)
(the notch moves to a higher value),
or
Rotate the knob clockwise to set a finer
grind (-) (the notch moves to a lower
value).

There are two parameters that we need to set: the granulometry of the coffee grinds (coffee
grain particle size) and the amount of coffee grinds served.
•The granulometry is set by manually regulating the distance between the grinder blades.
•The amount of coffee is set by adjusting the grinder activation time settings via software.
If we brew coffee that is ground too coarse, the coffee can be under-extracted (weak), and less
flavorful. If the coffee is ground too fine however, the coffee can be over-extracted and bitter.
Small changes in grind size can drastically affect the taste of our final brew.
Depending on our coffee recipes and the type of coffee bean being used, we can determine the
amount of coffee used for every single beverage.
It is very important to understand that the proper kind of coffee grains (expresso coffee) must be
used with this machine.
We begin by setting our preferences for the espresso drink as this will be the base for other
beverage selections. When we go into the settings for the espresso, we can see the factory
settings for this beverage set at a standard value of 60. This is an “absolute value” which has a
linear correlation with the time that the grinder will be enabled to work. The higher the value, the
more time the grinder will work, and more amount of coffee will be served.

Hot water mixing
Select menu option
1.1.2 Grinder 1 setting.
Once entering these settings:
Press on the espresso key and a certain
amount of coffee will be served.
Collect it and weight it, to see how many
grams of coffee grinds are served.
If we want more coffee, increase this
value and weight it again.
We will repeat thisprocess until we obtain
the amount of coffee that we need for our
recipe (between 9 and 10 gr).
In our tests, the value for the grinder
setting was set at 105. Results may vary,
depending on the characteristics of the
coffee beans used.
We need to activate the hot water mixing
to be able to pour hot water and coffee
alternatively through the dispenser.
Select menu option 18,Hot water.

Once the size of our coffee grinds has been defined to our satisfaction, the rest of the
adjustments are done via software. We can now start building our recipes for our different
beverages.

At the same time, we can evaluate the
coarseness of the coffee grind. If is not
up to our satisfaction, we will need to
adjust it.

Beverage Set-up:
To enter the setup of the recipes for the different beverages, access the technical menu by
entering the password 1,2,3,4, then, press enter.
The operations require to change the parameters in this menu are the same for any given menu.

Nettoyage du Cappuccinatore
The Cappuccinatore must be clean every day it’s used, to avoid the solidification of deposits. All
removable parts must be washed and rinse with the recommended cleaning products.
To clean each part of the Cappuccinatore group
separately, remove:
•the top protection cover, by pulling it
outwards.
•remove the Cappuccinatore, by
pulling it outwards;
•the fork;
•the crema adjusting lever.
•the temperature adjusting lever,
•the Cappuccinatore body cap;
•the fitting connecting the suction tube
to the body of the
•Cappuccinatore;
•the milk dispensing spout.
•the milk suction hose.

Cleaning of the milk circuit
To perform a cleaning cycle of the milk circuit, the milk suction hose must be introduced into a
container with lukewarm water and detergent.
The water must not be hot!
Press on the Milk key and wait for the water distribution to finish.
Recommended detergent tablets
Recommended liquid detergent
We recommend this detergent for the fully
automated machines such as the
Concetto Evo espresso machine. These
tablets dissolve in hot water.
Each package contains: 100 tablets (the -
equivalent of 5 litres of liquid detergent).

Recommended this liquid detergent for all
fully automatic machines. How to use:
1 dose (50ml) of product in 1 litre of water.
Each pack contains enough liquid for 20
washes.
