The appliance must only be used for the purpose it was designed for and may
become unsafe if used for any other purpose. Operators should be trained.
The room where this trolley is used must be dry, clean with temperatures
between 3°C and 26°C and with a maximum relative humidity of 60%.
This unit is for indoor use only and has an IPX4 rating.
Prior to ANY service calls please:
• Consult manual for basic fault-finding advice
and information required to place the call
• Check warranty/maintenance terms and conditions
To ensure the best results from this unit please take the time
to read and follow all safety, installation and maintenance
guidelines carefully before proceeding to install. Keep this
manual in a safe place for future consultation.

1: Installation
2: Manoeuvring Trolley
Always ensure appliance has been unplugged and cable
coiled safely. Push the trolley where possible, avoid pulling.

• Higher push forces and neutral body
postures are assumed when pushing,
as apposed to pulling. Pulling can
limit the direction of travel vision,
can twist the back and neck and
require high forces at the shoulder.
• Pulling increases the risk of foot
and ankle injury from the trolley
riding up during transfers.
• Proper footwear should be worn.
• To ensure a good grip stand with the
legs at shoulder width. Stagger legs
to get the trolley in motion.
1. Carefully remove all packaging and plastic coatings
from the appliance and dispose in a responsible manner.
2. Check for damage. Please note that in compliance with E&R Moat
warrant conditions, any defects must be reported within 3 days of delivery.
3. Ensure all shelves are in position.
4. Always ensure unit is clean before operation.
For further details see section 6.
5. Place the appliance in its intended location - on a flat,
level surface and apply trolley brakes.

1. For safety reasons during transport, place
all the food inside the compartments.
2. Ensure that the power cables are secure and
that the tray rail and side shelves are down.
3. Always push the Trolley using the “rails” at the control side of the Trolley.
The swivel castors are located at this end and this gives maximum
maneuverability.
4. Make sure all items on the trolley are well secured.
5. Always try to avoid collisions with obstacles, doors, walls and pedestrians.
6. Take care when moving through doorways and elevator doors.
7. Where possible lock elevator doors in the open
position when loading on or o the elevator.
8. On arrival at the service point, position in an appropriate location do not
cause to obstruction.
9. Apply the brakes. Plug in the power cable.

2.1: Folding Trayslide & End Shelves
Please ensure care is taken when operating the trayslide. Please lift/
lower using the cut out provided and take care not trap the mains
cable. Trayslide and end shelves should be lowered when mobile.
Please note: Some accessories or options are
factory fit only and may not be possible to retrofit.

2.2: Waste Bag
2.3: Tow Hitch
• Do not tow outside or over rough or uneven
surfaces, including expansion joints.
• The towing attachment has been designed
to be used in conjunction with a towing hitch.
• A maximum of two trollies at a time can be towed
at a maximum speed of 4km/2.5 miles per hour.
• The cassette dolly can also be fitted with a tow bar.
• Align the front of the trolley with the rear of the towing hitch.
• Lower and locate the tow arm ring onto the towing pin of the towing hitch.
• Secure the safety pin on the towing hitch.
• Reduce speed when negotiating corners and inclines.
• When uncoupling, ensure the floor is flat and even.
• Remove the safety pin. Press the tow bar down,
swing it sideways to the upright position and set free.

3: Initial Set-Up
This equipment is designed to be operated by suitably
qualified persons. It is the responsibility of the Supervisor
or equivalent to train users, provide suitable P.P.E., show
the mains isolating switch location, and inform users
that parts may become hot, causing injury if touched.
1. Plug in appliance and establish
power. The stand-by screen will
now be displayed.
2. Select to access the main display
screen. Simply select buttons using
the touch-screen display.
At this stage the LED gantry
operating lights will have illuminated
blue and, if your model has one, the
refridgerator will begin its cycle.
4. To set the unit ID number, select the
number under . The number
pad will re-appear, allowing you to
enter a new ID number.
5. Simply input the new unit ID
(e.g. 25) and select Ent .
3. Select SET-UP MENU. You will
now be prompted to enter the
4-digit administrator passcode
before being able to proceed.
The default passcode is 1234.
It is recommended that this is
restricted and kept safe
by the site responsible person.

3.1: Setting & Locking Program Options & 7-Day Timer
1. Simply select and input the required
temperature and time for each oven
zone (for more information on oven
zones see section 5.8).
2. If you wish to program a 7-day timer,
select the in-put boxes under HOUR/
MIN to set the exact time you want
the cycle to begin each day. In the
example provided above we have chosen a 1 hour and 30 minute long
cycle for program 1. Beginning at 4:00 at 160C.
3. To save these settings as a pre-set program simply select a program slot
(1, 2 or 3) to overwrite.
4. Select AVE . This has saved your changes for the currently selected
program. Changes will not be displayed from the current screen once
another program is selected. Changes will be seen from the program
selection menu. Set all 3 programs, saving each as you go. Always
ensure you save your settings before returning to the main menu screen.
5. To return to main menu screen, select ETU .
If times for each oven zone vary then they will turn on at
appropriate times to ensure all food is ready at the same
time. In the example shown zone 1 is set for 100 mins and
zone 2 is set for 90 mins. Therefore zone 2 will turn on 10
mins after zone 1 to ensure food in both zones are ready
to serve at the same time. The same goes for zone 3.

Green indicates that the unit
is in use. Meaning either a
regeneration, pre-heat, boost
or cleaning cycle is currently
in process.
Flashing green indicates cycle
is over. Buzzer will also sound.
Flashing red indicates
oven doors are open.
Keep doors closed
when possible.
Blue indicates oven
is not being used.
Where specified, the refrigerator
will still be in use if not switched o.

5: Operation
1. Select REGEN button from
the HOME screen.
2. Selecting PRE-HEAT, will pre-heat the
oven for 30 minutes to prepare for
regeneration cycle. This feature is for
manual use only.
At the end of the preheat cycle a
buzzer will sound and the operating
lights will flash green.
To end press PRE-HEAT, once more.
3. Current oven temperatures are
displayed in red. Current refrigerator
temperature is displayed in blue.
Refrigerator temperature is non-
adjustable but can be switched o
temporarily by selecting the blue temperature
display. Fridge is active on start up.
When oven doors are open, operating
lights will flash red. Keep doors fully
closed whenever possible.
4. The count-down timer is displayed in green
and the total regeneration cycle time is
displayed to it’s right. The timer will begin to
count-down once a regenaration cycle has
started and the lights will illuiminate green.
5. At the end of the heating cycle a buzzer will sound and the
operating lights will flash green. Indicating food is ready.

Select cancel to stop buzzer. The operating lights will now turn blue.

6. If you wish to activate auto mode (7-day timer), go to section 5.1.
If you wish to begin a pre-set regeneration cycle, go to section 5.2.
If you wish to manually operate the oven, go to section 5.3.
5.2: Automatic Mode (Activating 7-Day Timer)
5.1: Semi-Auto Mode (Pre-set on the Spot)
1. To begin one of the three previously set
regeneration cycles immediately, simply
select the pre-set program you wish to use.
1. To set the unit in auto mode, return to the
set-up screen.
2. Then, ensuring the AUTO button is not active, select START.
The chosen program will now begin it’s cycle immediately.
2. Rrefer to section 3.1 for set-up instructions.
3. Select Aut to activate 7-day Timer
operation.
You will notice that the stand-by &
regen screen both now display a
prompt that the unit is in automatic
mode as shown.
The oven will now automatically begin
the pre-set regeneration at the time
specified previously. See section 3.1 if
you have not yet programmed each
pre-set or the 7-day timer.
4. To deactivate the 7-day timer operation,
return to set-up screen and select o .

4. Select HACCP to use the food probe.
For instructions on how to use the food probe see section 5.5.
5. After use, select RETUR on each page
until you are returned to the HOME screen.
5.3: Manual Operation
1. As long as a pre-set program has not been
selected, the user may be able to input new
temperatures and run times manually by
tapping on boxes right of current temperatures.
1. Once the current regeneration cycle has ended, the user may
select BO to add an extra 10 minutes of regeneration.
Boost can be ended by selecting BOOST OFF at any time.
This feature is useful if food temperature is below required levels.
At the end of the heating cycle a buzzer will sound and the
operating lights will flash green to indicate the food is ready.
The buzzer will soon stop and the lights will turn back to blue.
The hot-top will now automatically come on ready to serve.
2. If required, at this point the HOL feature can be selected to hold the
food at 90C until selected again. Whilst in HOLD mode the operating
lights will turn green and the hot-top will become inactive.
5.4: Next Steps
2. It is possible to switch o any of the three oven zones by setting them
to 0C. This feature is beneficial for reduced culinary loads and will
help reduce energy consumption. Please note that the fan motors will
continue to run. We recommend that top zone (zone 1) is always used.
Changes will take aect when REGEN is selected.
3. When it is time to serve, select GANTRY to turn on
gantry lights. The hot-top can be switched on/o by
selecting HOT-TOP OFF. Gantry lights can be turned
on/o at any time however the hot-top may only
be turned on while the operating lights are blue.

6. Now select STANDBY to switch unit o. Standby will not stop
unit whilst the 7-day timer is active. It will stop however whilst
using unit on sem-auto mode.
Allow unit to cool before cleaning. For cleaning
recommendations and cleaning cycle instructions, see section 6.
5.5: Using the Food Probe
The food probe should be thoroughly washed and
sanitized before/after use. It is the responsibilty of the user
to ensure periodic calibration checks of the food probe.
It is recommended that this process is carried out at
frequent intervals and checked before records are deleted.
1. When you wish to use the food probe
simply select HAC . The H.A.C.C.P. food
probe feature can also be accessed
from the HOME screen. The following
screen should now be displayed:
2. Before proceeding, insert
USB to screen display.
3. Carefully insert probe into centre of food, then select a food
choice from the chart that matches the food you have probed.
Allow reaction time for the temperature to display on-screen.
4. The icon will display temperature reading and
change colour to indicate a pass or fail. Green
for temperatures above 75°C (85°C Scotland),
indicating a pass. Red for temperatures below
75°C (85°C Scotland), indicating a fail.
5. Select save once desired
temperature has been achieved.
Repeat process until complete.
6. To download HCCP information, select DOWNLOAD.
The data will be stored on the inserted USB as a .CSV file-type.

1. Open door and pull the tray
out gently, load plates as
required starting from the
rear & working forward.
2. Once loaded, push the tray
back in and close the door.
3. Switch the plate warmer and
the regen cycle on at the
same time to allow the plates
enough time to heat up.
Temperature is preset at 55°C.
4. Removal is the
reverse of loading.
5.6: Using Platewarmer (V2GPR)
Proper heat protection gloves must be used
& care taken when removing the hot plates.

1. Select [Chill].
The “chill screen” will now be
displayed on the touchscreen as
shown.
2. Select START to begin chill function
within the main chamber. As long
as the oven chamber temperature
is below 45°C, the chill process will
begin.
3. A “High” warning will display if
chamber temperature is above 45°C
and the chill function will cease until
the chamber drops below 45°C.
Allow approximatly 30 minutes to cool
chamber from 45°C. The temperature
will cycle between 2°C and 5°C.
The fridge also functions normally
during chillogen cycle. Chilling is best
achieved overnight.
4. Press [St to stop chill cycle.
Press to return to main screen.

5.8: Using Double Oven (V2GG)
1. When selecting Regen Programs
1, 2 or 3, the window shown in
screenshot 3 will appear.
Select left, right or both ovens as
required. Press [Retu to return.
2. Each oven has a seperate pre-
heat, boost and hold switch.
Oven operation is similar to V2GR
with the following dierences:
1. Input required temps & times.
2. Select left, right or both ovens.
3. Select program number 1, 2 or 3.
4. Wait 3 seconds then de-select
program to save. (Screenshot 2 shows
left oven and program 1 selected).

Do not use a water jet or pressure spray to clean
this appliance. Ensure appliance is switched o
& plugs are disconnected before cleaning.
1. Disconnect trolley from mains and wait until appliance has cooled.
2. Wipe clean using hot, soapy water and soft, non-abrasive cloth.
3. Wipe dry using a clean cloth. Do not use scouring pads or abrasive
cleaners of any type. Shelving and select inner panels can be
removed to allow a deeper internal clean. Ensure all panels and
fixings are replaced after cleaning operation.
4. Refrigeration compartment should be washed and then dried with
a cloth after each service.
5. Wipe down sneeze screen and glass top with a damp, clean cloth.
6: Cleaning
1. Put a pan in the oven. containing ½
litre/2 cups water and mild detergent.
For V2GG models place a pan in
both ovens.
2. Close the oven door(s) and start the
cleaning cycle. To start cleaning
cycle, select the “Clean Cycle”
option from the main menu.
3. The operating lights will now
illuminate green to indicate the
cycled has begun and is in process.
4. Screen will change to confirm
selection (as shown below) and
cleaning cycle will begin. The
cleaning cycle parameters are preset
to operate for 45-minutes at 90°C.
