Before usi g the applia ce, carefully remove the special protective film over the stai less steel
parts, without leavi g a y glue residue o the surfaces. If ecessary, remove the residue at o ce

Check the place where the applia ce will be i stalled to e sure that the passages (doors a d

The ove must be supplied with softe ed dri ki g water with a hard ess value of 0.5 to 5°F
(It is obligatory to use water softe er to reduce the formatio of scali g i side the boiler). The
water pressure must be i the ra ge of 150 to 250 kPa (1.5 – 2.5 bar). If the water pressure
exceeds 2.5 bar, i stall a pressure reducer device upstream. If the pressure is below 1.5 bar, use
a pressure pump to i crease the level.
The co ectio to the water supply is do e usi g the ¾” threaded sole oid valve o the
back (at the bottom) of the applia ce (see fig. 1), fitti g a mecha ical filter with a cut-off cock
(before co ecti g the filter, allow a certai amou t of water to flow out i order to remove

A drai pipe (see Fig. 1) comes out from the rear of the applia ce, to drai the ove cavity. This
pipe must be co ected up to a pipe made to resist steam temperatures (90°C-100°C) with a
i ter al diameter of 30 mm (DN 30). To preve t choki g, it is best to use a rigid pipe a d make
sure there are o "elbow" be ds a ywhere alo g the drai li e.
Furthermore, the drai li e must slope dow (mi imum slope 5%) alo g its full le gth (the
le gth i questio is from the applia ce's drai pipe to the drai poi t a d must ot exceed 2
metres). The drai li e must ru i to a ope floor drai (Fig.2). I additio , there must be a
free air gap of at least 25 mm (dista ce betwee the drai li e comi g from the applia ce a d
the fu el o the drai sta dpipe). Whatever the case, i order to comply with curre t hygie e
sta dards, the li e co ected to the applia ce's drai pipe must ot come i to direct co tact
with the drai poi t. It is advisable to i clude a suitable trap i the li e co ecti g the
applia ce's drai outlet to the grey water waste system, thus stoppi g the steam comi g back
out of the drai .

dish.
The cooki g chamber temperature ca be set betwee 50°C a d 270°C.
The fact of usi g a hot-moist climate i side the cooki g chamber with variable temperature a d
moisture levels, is the most co ve ie t a d efficie t way of cooki g: cooki g times are reduced,
the surface of the foods remai s soft a d does ot form a crust, there is little weight loss a d
the fatty mass is reduced.
The special hot-moist climate at low temperatures is ideal for re-co ditio i g food.

The temperature ca be set i side the core of the food to be cooked, usi g the special
eedle core probe that is supplied with the ove . The probe must be pushed i to the ce tre of
the food i the thickest part, avoidi g the bo es. Place the food i side the cooki g chamber
a d pull out the thermal probe lead a d close the ove door. The probe plug must be plugged
i to the special socket (see Fig. 1) at the bottom of the co trol pa el. Press the push butto
to select the core cooki g temperature (led alight o ) betwee 0°C a d 100°C usi g k ob
o. “2”, the temperature is show o the temperature display.
Whe a cooki g cycle is started with a core probe stage i cluded (the time display shows the
wordi g “Prob”), whe the set temperature is reached i side the food the cooki g cycle passes
o to the ext stage o matter what time has bee set. If the core probe is activated withi a y
of the four stages, with the other three deactivated, the cooki g cycle fi ishes automatically
whe the set temperature i side the food is reached, o matter what time has bee set.
Cooki g with the core probe ca be graduated over the four stages (for very delicate
cooki g) a d, for each stage, the temperature a d the climate i side the cooki g chamber ca
be set besides the temperature i side the food.
As the thermal probe is a eedle which ca easily be removed or broke , we advise setti g
the cooki g time for the stage that it is used i .
If the probe is co ected a d operati g, the stage fi ishes whe the set temperature is
reached; otherwise, if the probe is ot co ected or is broke , the stage fi ishes at the set time.

i termitte tly for 10 seco ds, the time display shows the flashi g message “Prob” a d the
