These appliances have been CE-marked on the basis of compliance with the ow Voltage and EMC
Directives for the voltages stated on the Data Plate.
IMPORTANT
The appliance MUST ONLY be installed by a c mpetent pers n in c mpliance with the Installati n and
Servicing Instructi ns and Nati nal Regulati ns in f rce at the time. Particular attenti n MUST be paid t the
f ll wing:
Gas Safety (Installation and Use) Regulations.
Health and Safety at Work Act.
Furtherm re if a need arises t c nvert the appliance f r use with an ther gas, a c mpetent pers n must be
c nsulted. Th se parts pr tected by the manufacturer MUST NOT be adjusted by the user.
Regular servicing by a qualified pers n is rec mmended t ensure the c ntinued safe and efficient
perf rmance f the appliance. Users sh uld be c nversant with the appr priate pr visi ns f the Fire
Precauti ns Act and the requirements f the Gas Safety Regulati ns

This equipment is designed FOR PROFESSIONAL USE ONLY and be perated by QUALIFIED pers ns. It is
the resp nsibility f the supervis r r equivalent t ensure that the user wears SUITABLE PROTECTIVE
CLOTHING. Attenti n sh uld als be drawn t the fact that s me parts f the appliance will, by necessity,
bec me VERY HOT and c uld cause burns if t uched accidentally.
PREVENTATIVE MAINTENANCE CONTRACT
In rder t btain maximum perf rmance fr m this unit we w uld rec mmend that a Maintenance C ntract be
arranged with AFE SERVICELINE. Visits may then be made at agreed intervals t carry ut adjustments and
repairs. A qu tati n f r this service will be given up n request t the c ntact numbers bel w.

SECTION 1 - GENERA DESCRIPTION
The bratt pans are therm statically c ntr lled t
maintain desired temperatures. Safety features
include a flame-failure cut- ff device and a high
temperature limit device t cut ff gas t main burner
if pan temperature g es t high. A tilt-switch t shut
ff gas t main burner if pan is m ved even slightly
fr m fully l wered p siti n is als fiited as standard.
A red light indicates electricity supply t appliance is
n. This is required t perate the c ntr ls.
The pan is made f cast-ir n t retain an even
temperature.
On G2962/G2994 m dels, the pan tilting mechanism
is perated by the fr nt handwheel. The handle can
be st red away when n t in use by pulling away fr m
wheel and f lding in t ward centre.
On G2965/G2995 m dels, the tilting mechanism is
perated by f t bell ws which in turn activates an
electric actuat r. The bell ws can be f lded away
when n t in use.

Controls
The unit is fitted with the f ll wing:
Mains Indicator amp (RED)
This is l cated n c ntr l panel. The red ne n will
gl w c ntinu usly when mains electricity has been
switched n and current is being supplied t unit.
Indicator amp (AMBER)
L cated n c ntr l panel next t red ne n. The amber
ne n will gl w c ntinu usly when user therm stat has
been set and heat is being supplied t pan. Ne n will
g ut when selected temperature has been reached
and heat cut back. Therm stat will cycle n and ff t
maintain temperature. This indicated by ne n g ing
n and ff.
Multi-Functional Gas Control
This is l cated behind b tt m fr nt dr p-d wn d r
and c mbines burner ON and OFF push butt ns,
flame failure device and gas g vern r.
The push butt ns are identified by their symb ls
(see Figure 2 bel w).

Piezo Unit
This is l cated al ngside multi-functi nal c ntr l
behind b tt m fr nt dr p-d wn d r and is a push
butt n piez spark type which d es n t require a
battery (see Figure 2).
User's Thermostat
This is l cated n fr nt c ntr l panel and has a
variable temperature range up t 190
Cwhen
medium depth frying (see Figure 3).

High Temperature imit Device
This is fact ry pre-set and is n t accessible t
perat r. In event f user therm stat failure,
the high temperature limit device will shut- ff gas t
b th main and pil t burners.
Sh uld this device perate and theref re, render the
unit unusable. The appliance sh uld be serviced by a
qualified engineer.

A safety tilt switch perates when pan is raised fr m
fully h riz ntal p siti n t shut ff gas t main burner.
If main burner c mes n r remains n when pan is
raised, the unit sh uld be serviced by a qualified
engineer.
Tilt Operation (G2962 and G2994 only)
Use handwheel n fr nt c ntr l panel t raise and
l wer pan.
Tilt Operation (G2965 and G2995 only)

Foot Bellows
Tw f t bell ws are l cated n a swinging arm under
unit f r raising r l wering pan. Pressure n either
bell ws sends a signal t a pneumatically perated
micr switch which in turn perates lifting device.

Electric Operations (see Figure 5)
The bell ws are marked UP and DOWN and are
l cated bel w unit. The f t bell ws sh uld be swung
ut t the fr nt and all wed t dr p t the fl r.
The change- ver switch sh uld be set t tilt and pan
canthenberaised rlweredbypressingthe
appr priate bell w.
Light pressure is sufficient t perate the bell ws.
Pressure sh uld be rem ved fr m the UP bell w
when pan is fully raised and fr m the DOWN bell w
when fully l wered. Maintaining pressure under such
circumstances can cause excessive clutch wear.
When tilting pan t empty, watch that c ntents p ur
fr m the lip and st p raising t stall p uring. P uring
can be st pped by slightly l wering the pan.
The mechanism is fitted with a thermal verl ad.
Excessive raising and l wering will cause this t cut
ut. The verl ad is self re-setting and the
mechanism will be perati nal within appr x.
1 minute. The verl ad sh uld n t cut ut during
n rmal perati n f the mechanism.
Hand Operation (See Figure 6)
The unit is equipped with a means f raising r
l wering pan by hand in the event f an electrical
failure f the tilting mechanism.
A handle is l cated behind the dr p d wn d r and
this sh uld be inserted al ng the tube l cated t the
RH side behind d r. Once handle engages in clutch,
anti-cl ckwise r tati n will raise and cl ckwise l wer
the pan.
This meth d f tilting is nly intended f r use in an
emergency and because f the high gearing, is sl w.
Note
: Electric tilting is n t p ssible with dr p d wn
d r pen.

SECTION 2 - IGHTING and OPERATION
IGHTING INSTRUCTIONS
The gas c ntr l valve is fitted with a safety interl ck.
After pressing the OFF butt n n c ntr l, a peri d f
3 minutes will elapse bef re it is p ssible t light
burner.
Warning
: If pil t flame is extinguished either
intenti nally r therwise, NO ATTEMPT sh uld be
made t relight gas until at least 3 minutes have
elapsed.
1. Switch ON electricity supply t pan. Ensure pan is
fully l wered. On G2965/95 m dels nly,
set change ver switch t heat.
2. Press and h ld gas c ntr l pil t butt n in while
repeatedly pressing and releasing igniter butt n
until pil t lights. Check thr ugh sight h le.
3. Keep pil t butt n pressed in fully f r a further
20 sec nds bef re release. Pil t sh uld remain lit
but if it g es ut, push gas c ntr l OFF butt n in
and wait f r three minutes. Repeat fr m Step 2.
4. Push gas c ntr l main burner butt n t right.
5. Set therm stat t desired setting. Main burner will
n w light

Note:
PAN MUST BE IN FULLY LOWERED POSITION
BEFORE ATTEMPTING TO LIGHT APPLIANCE.
SECTION 3 - COOKING HINTS
Therm stat must be switched ON bef re main burner
will light fr m pil t.
Seasoning The Pan
Put 12.5mm t 25mm salt in pan, bake at medium t
medium high, 4 r 5 settings f r 20 t 25 minutes.
Pan sh uld be left with salt in until c l bef re
rem val.
Dress with il. Heat t burn il in then re- il. This will
f rm a skin n pan which sh uld n t need sc ured but
filled with warm water and b iled up, emptied ut and
rinsed with clean warm water then re- il pan and
stainless steel rim.
This sh uld be repeated any time the skin is br ken.
Note
C ld water sh uld never be p ured directly nt a h t
pan surface as this c uld cause the casting t crack.
Always use warm water.
Using the Bratt Pan
The bratt pan can be used f r vari us c king
meth ds. F r example:-
Therm stat settings are 1 (95
C) t 5 (195
C).
The setting is dependent n many fact rs, ie.
V lume f f d, temperature f the f d item(s) and
pers nal preference.
Deep Frying (Oil depths of 40mm and above)
Maximum depth f il which can be used in this
appliance is 50mm.
G2962 and G2965 - 14 litres (maximum)
G2994 and G2995 - 21 litres (maximum)
Set c ntr l t 4 r 5 until desired temperature is
reached. Use f a hand-held temperature pr be is
advantage us when deep frying in a bratt pan.
It is imp rtant that care is taken when using such a
large pen pan which c ntains h t il that may
splash.
Griddling and Shallow Frying
(Oil depth of 6mm and less)
Set c ntr l t preferred setting and all w t heat up.
When ne n g es ut, temperature has been reached.
Note for frying
Leave pan lid pen t all w steam t escape.
Boiling
Maximum depth f fluid which can be safely used in
this appliance is 75mm.
G2962 and G2965 - Maximum of 21 litres
G2994 and G2995 - Maximum of 32 litres

Simmering and Stewing
P ur liquid int pan. Set c ntr l t 5 and bring t b il.
Turn d wn t simmer, actual setting will depend n
v lume and density f what is being c ked.
General - All Models
The pan sh uld be c vered when n t being used.
The lid sh uld als be cl sed when b iling, simmering
r stewing. This has vari us advantages:
It keeps food safe from foriegn bodies.
It will retain flavour.
It will shorten cooking times.
The lid sh uld n t be d wn when frying, as it is
imp rtant that steam is all wed t escape.
The pan sh uld NEVER BE OVERFILLED and an
all wance sh uld always be made f r expansi n and
f aming f the f d being c ked.
G2962 and G2994
When tilting pan t empty, turn tilting handle sl wly
and watch that pan c ntents p ur fr m p uring lip.
When handle is n t being used, hinge it back int
recessed p rti n f handwheel by pulling f rward
slightly then hinging t the recess.
High Temperature imit Device
The pan is fitted with a high temperature limit device
which is designed t shut ff the burner if perating
therm stat fails r if the pan verheats. This may als
trip if the therm stat is set t high f r shall w frying
r with a dry pan. If this device trips, the pan must be
checked by an engineer.
SECTION 4 - C EANING
TURN OFF ELECTRICITY SUPPLY TO UNIT
All w appliance t c l bef re cleaning c mmences.
The stainless steel external b dy f the appliance
sh uld be cleaned with s apy water as ften as
necessary. Rinse with clean warm water and dry ff.
T retain the finish f the stainless steel, this sh uld
be d ne by rubbing in the directi n f the grain finish.
The pan interi r sh uld be cleaned at the end f each
day, rinsed with warm water, dried ff and lightly iled
using a g d quality vegetable c king il.
NEVER HOSE DOWN THE APPLIANCE.
