OFF HEAT TILT
SECTION 1 - GENERA DESCRIPTION
The bratt pans are therm statically c ntr lled t
maintain desired temperatures. Safety features
include a high temperature limit device t cut ff
p wer t the elements if pan temperature g es t
high. A tilt-switch t shut ff p wer t elements if pan
is m ved even slightly fr m fully l wered p siti n is
als fitted as standard.
A red light indicates electricity supply t unit is n.
The pan is made f cast-ir n t retain an even
temperature.
On E2962/E2994 m dels, the pan tilting mechanism
is perated by the fr nt handwheel. The handle can
be st red away when n t in use by pulling away fr m
wheel and f lding in t ward centre.
On E2965/E2995 m dels, the tilting mechanism is
perated by f t bell ws which can be f lded away
when n t in use. The bell ws in turn activate an
electric actuat r.

SECTION 2 - CONTRO S and OPERATION
Controls
The unit is fitted with the f ll wing:
Mains Indicator amp (RED)
This is l cated n c ntr l panel. The red ne n will
gl w c ntinu usly when mains electricity has been
switched n and current is being supplied t unit.
Indicator amp (AMBER)
L cated n c ntr l panel next t red ne n. The amber
ne n will gl w c ntinu usly when user therm stat has
been set and heat is being supplied t pan. The ne n
will g ut when selected temperature has been
reached and heat cut back. The therm stat will cycle
n and ff t maintain temperature. This indicated by
the ne n g ing n and ff.
User's Thermostat
This is l cated n fr nt c ntr l panel and has a
variable temperature range up t 190
Cwhen
medium depth frying (see Figure 3).

High Temperature imit Device
This is fact ry pre-set and is n t accessible t
perat r. In event f user therm stat failure
(i.e. that perated by RH c ntr l kn b) the high
temperature limit device will shut ff p wer t the
elements.
Sh uld this device perate and theref re, render the
unit unusable. The appliance sh uld be serviced by a
qualified engineer.
Tilt Switch
A safety tilt switch perates when pan is raised fr m
fully h riz ntal p siti n t shut ff p wer t elements.
If elements c me n r remain n when pan is raised,
the unit sh uld be serviced by a qualified engineer.

Foot Bellows
Tw f t bell ws are l cated n a swinging arm under
unit f r raising r l wering pan. Pressure n either
bell ws sends a signal t a pneumatically perated
micr switch which in turn perates lifting device.

Electric Operations (see Figure 5)
The f t bell ws is marked UP and DOWN and is
l cated bel w the unit. This sh uld be swung ut t
the fr nt and all wed t dr p t the fl r.
The change- ver switch sh uld be set t tilt and the
pan can then be raised r l wered by pressing the
appr priate bell ws.
Light pressure is sufficient t perate the bell ws.
Pressure sh uld be rem ved fr m the UP bell ws
when the pan is fully raised and fr m the DOWN
bell ws when fully l wered. Maintaining pressure
under such circumstances can cause excessive
clutch wear.
When tilting the pan t empty, watch the c ntents
p ur fr m the lip and st p the raising t stall p uring.
P uring can be st pped by slightly l wering the pan.
The mechanism is fitted with a thermal verl ad.
Excessive raising and l wering will cause this t cut
ut. The verl ad is self re-setting and the
mechanism will be perati nal within appr x.
1 minute. The verl ad sh uld n t cut ut during
n rmal perati n f the mechanism.
Hand Operation (See Figure 6)
The unit is equipped with a means f raising r
l wering the pan by hand in the event f an electrical
failure n the tilting mechanism.
A handle is l cated behind the dr p d wn d r and
this sh uld be inserted al ng the tube l cated t the
right hand side behind the d r. Once the handle
engages in the clutch anti-cl ckwise r tati n will raise
and cl ckwise l wer the pan.
This meth d f tilting is nly intended f r use in an
emergency and because f the high gearing, is sl w.
N.B. Electric tilting is n t p ssible with the dr p d wn
d r pen.

USING THE APP IANCE
Bef re elements will heat, therm stat and energy
regulat r must be switched ON.
Seasoning the Pan
Put 12.5mm t 25mm f salt in pan and bake the
dep sit at medium high (Setting 4 r 5 n b th
c ntr ls) f r 20 t 25 minutes. The pan sh uld be left
with the salt in it until it c ls bef re rem ving salt.
Dress pan with il and heat t burn in bef re re- iling.
This will f rm a skin n pan which sh uld n t need t
be sc ured. T c mplete treatment, fill pan with warm
water and b il. Empty c ntents and rinse with clean
warm water. Re- il pan and stainless steel rim.
This sh uld be repeated any time the skin is br ken.
Note
C ld water sh uld never be p ured directly nt a h t
pan surface as this c uld cause the casting t crack.
Always use warm water.

SECTION 3 - COOKING HINTS

Using the Bratt Pan
The bratt pan can be used f r vari us c king
meth ds. F r example:-
Therm stat settings are 1 (95
C) t 5 (195
C).
The setting is dependent n many fact rs, ie.
V lume f f d, temperature f the f d item(s) and
pers nal preference.
Deep Frying (Oil depths of 38mm and above)
Maximum depth f il which can be used in this
appliance is 50mm.
E2962 and E2965 - 14 litres (maximum)
E2994 and E2995 - 21 litres (maximum)
Set c ntr l t 4 r 5 until desired temperature is
reached. Use f a hand-held temperature pr be is
advantage us when deep frying in a bratt pan.
It is imp rtant that care is taken when using such a
large pen pan which c ntains h t il that may
splash.
Griddling and Shallow Frying
(Oil depth of 6mm and less)
Set c ntr l t preferred setting and all w t heat up.
When ne n g es ut, temperature has been reached.
Note for frying
Leave pan lid pen t all w steam t escape.
Boiling
Maximum depth f fluid which can be safely used in
this appliance is 75mm.
E2962 and E2965 - Maximum of 21 litres
E2994 and E2995 - Maximum of 32 litres

Simmering and Stewing
P ur liquid int pan. Set c ntr l t 5 and bring t b il.
Turn d wn t simmer, actual setting will depend n
v lume and density f what is being c ked.
General - All Models
The pan sh uld be c vered when n t being used.
The lid sh uld als be cl sed when b iling, simmering
r stewing. This has vari us advantages:
It keeps food safe from foriegn bodies.
It will retain flavour.
It will shorten cooking times.
The lid sh uld n t be d wn when frying, as it is
imp rtant that the steam is all wed t escape.
The pan sh uld NEVER BE OVERFILLED and an
all wance sh uld always be made f r expansi n and
f aming f the f d being c ked.
G2962 and G2994
When tilting pan t empty, turn tilting handle sl wly
and watch that pan c ntents p ur fr m p uring lip.
When handle is n t being used, hinge it back int
recessed p rti n f handwheel by pulling f rward
slightly then hinging t the recess.
High Temperature imit Device
The pan is fitted with a high temperature limit device
which is designed t shut ff p wer t elements if
perating therm stat fails r if pan verheats.
This may als trip if therm stat is set t high f r
shall w frying r when pan is dry. If device trips, the
pan must be checked by an engineer.
SECTION 4 - C EANING
TURN OFF ELECTRICITY SUPPLY TO UNIT
All w appliance t c l bef re cleaning c mmences.
The stainless steel external b dy f the appliance
sh uld be cleaned with s apy water as ften as
necessary. Rinse with clean warm water and dry ff.
T retain the finish f the stainless steel, this sh uld
be d ne by rubbing in the directi n f the grain finish.
The interi r f the pan sh uld be cleaned at the end f
each day, rinsed with warm water, dried ff and lightly
iled using a g d quality vegetable c king il.
NEVER HOSE DOWN THE APPLIANCE.
