These appliances have been CE-marke on the basis of compliance with the Low Voltage an EMC Directives
for the voltages state on the Data Plate.

The appliance must only be installed by a competent person in compliance with the regulations in
force at the time.

SECTION 1 - GENERA DESCRIPTION
The bratt pans are thermostatically controlle to
maintain esire temperatures. Safety features
inclu e a high temperature limit evice to cut off
power to the elements if pan temperature goes too
high. A tilt-switch to shut off power to elements if pan
is move even slightly from fully lowere position is
also fitte as stan ar .
A re light in icates electricity supply to unit is on.
The pan is ma e of cast-iron to retain an even
temperature.
On E2962/E2994 mo els, the pan tilting mechanism
is operate by the front han wheel. The han le can
be store away when not in use by pulling away from
wheel an fol ing in towar centre. Refer to Figures 1
an 2.
On E2965/E2995 mo els, the tilting mechanism is
operate by foot bellows which can be fol e away
when not in use. The bellows in turn activate an
electric actuator. Refer to Figures 1 an 2.

SECTION 2 - CONTRO S and OPERATION
Controls
The unit is fitte with the following:
Mains Indicator amp (RED)
This is locate on control panel. The re neon will
glow continuously when mains electricity has been
switche on an current is being supplie to unit.
Indicator amp (AMBER)
Locate on control panel next to re neon. The amber
neon will glow continuously when user thermostat has
been set an heat is being supplie to pan. The neon
will go out when selecte temperature has been
reache an heat cut back. The thermostat will cycle
on an off to maintain temperature. This in icate by
the neon going on an off.
User's Thermostat
This is locate on front control panel an has a
variable temperature range up to 190
o
Cwhen

High Temperature imit Device
This is factory pre-set an is not accessible to
operator. In event of user thermostat failure
(i.e. that operate by RH control knob) the high
temperature limit evice will shut off power to the
elements.
Shoul this evice operate an therefore, ren er the
unit unusable. The appliance shoul be service by a
qualifie engineer.
Tilt Switch
A safety tilt switch operates when pan is raise from
fully horizontal position to shut off power to elements.
If elements come on or remain on when pan is raise ,
the unit shoul be service by a qualifie engineer.
Tilt Operation (E2965 and E2995 only)

Foot Bellows
Two foot bellows are locate on a swinging arm un er
unit for raising or lowering pan. Pressure on either
bellows sen s a signal to a pneumatically operate
microswitch which in turn operates lifting evice.

Electric Operations (see Figure 5)
The foot bellows is marke UP an DOWN an is
locate below the unit. This shoul be swung out to
the front an allowe to rop to the floor.
The change-over switch shoul be set to tilt an the
pan can then be raise or lowere by pressing the
appropriate bellows.
Light pressure is sufficient to operate the bellows.
Pressure shoul be remove from the UP bellows
when the pan is fully raise an from the DOWN
bellows when fully lowere . Maintaining pressure
un er such circumstances can cause excessive
clutch wear.
When tilting the pan to empty, watch the contents
pour from the lip an stop the raising to stall pouring.
Pouring can be stoppe by slightly lowering the pan.
The mechanism is fitte with a thermal overloa .
Excessive raising an lowering will cause this to cut
out. The overloa is self re-setting an the
mechanism will be operational within approx.
1 minute. The overloa shoul not cut out uring
normal operation of the mechanism.
Hand Operation (See Figure 6)
The unit is equippe with a means of raising or
lowering the pan by han in the event of an electrical
failure on the tilting mechanism.
A han le is locate behin the rop own oor an
this shoul be inserte along the tube locate to the
right han si e behin the oor. Once the han le
engages in the clutch anti-clockwise rotation will raise
an clockwise lower the pan.
This metho of tilting is only inten e for use in an
emergency an because of the high gearing, is slow.
N.B. Electric tilting is not possible with the rop own
oor open.

USING THE APP IANCE
Before elements will heat, thermostat an energy
regulator must be switche ON.
Seasoning the Pan
Put 12.5mm to 25mm of salt in pan an bake the
eposit at me ium high (Setting 4 or 5 on both
controls) for 20 to 25 minutes. The pan shoul be left
with the salt in it until it cools before removing salt.
Dress pan with oil an heat to burn in before re-oiling.
This will form a skin on pan which shoul not nee to
be scoure . To complete treatment, fill pan with warm
water an boil. Empty contents an rinse with clean
warm water. Re-oil pan an stainless steel rim.
This shoul be repeate any time the skin is broken.
Note
Col water shoul never be poure irectly onto a hot
pan surface as this coul cause the casting to crack.
Always use warm water.
SECTION 3 - COOKING HINTS
Thermostat must be switche ON before power is
supplie to elements.

Using the Bratt Pan
The bratt pan can be use for various cooking
metho s. For example:-

Thermostat settings are 1 (95

The setting is epen ent on many factors, ie.
Volume of foo , temperature of the foo item(s) an
personal preference.
Deep Frying (Oil depths of 38mm and above)
Maximum epth of oil which can be use in this
appliance is 50mm. Refer to Figure 7.
E2962 and E2965 - 14 litres (maximum)
E2994 and E2995 - 21 litres (maximum)
Set control to 4 or 5 until esire temperature is
reache . Use of a han -hel temperature probe is
a vantageous when eep frying in a bratt pan.
It is important that care is taken when using such a
large open pan which contains hot oil that may
splash.
Griddling and Shallow Frying
(Oil depth of 6mm and less) (Refer to Figure 7)
Set control to preferre setting an allow to heat up.
When neon goes out, temperature has been reache .

Boiling
Maximum epth of flui which can be safely use in
this appliance is 75mm.
E2962 and E2965 - Maximum of 21 litres
E2994 and E2995 - Maximum of 32 litres

General - All Models
The pan shoul be covere when not being use .
The li shoul also be close when boiling, simmering
or stewing. This has various a vantages:
It keeps food safe from foriegn bodies.
It will retain flavour.
It will shorten cooking times.
The li shoul not be own when frying, as it is
important that the steam is allowe to escape.
The pan shoul NEVER BE OVERFILLED an an

When tilting pan to empty, turn tilting han le slowly
an watch that pan contents pour from pouring lip.
When han le is not being use , hinge it back into
recesse portion of han wheel by pulling forwar
slightly then hinging to the recess.
High Temperature imit Device
The pan is fitte with a high temperature limit evice
which is esigne to shut off power to elements if
operating thermostat fails or if pan overheats.
This may also trip if thermostat is set too high for
shallow frying or when pan is ry. If evice trips, the
pan must be checke by an engineer.
SECTION 4 - C EANING
TURN OFF ELECTRICITY SUPPLY TO UNIT
Allow appliance to cool before cleaning commences.
The stainless steel external bo y of the appliance
shoul be cleane with soapy water as often as
necessary. Rinse with clean warm water an ry off.
To retain the finish of the stainless steel, this shoul
be one by rubbing in the irection of the grain finish.
The interior of the pan shoul be cleane at the en of
each ay, rinse with warm water, rie off an lightly
oile using a goo quality vegetable cooking oil.
NEVER HOSE DOWN THE APPLIANCE.
