General hints:
Only technicians, who are trained on Rational units, shall execute any service.
Always observe local rules and regulations!
All maintenance work must be done according to the valid laws and regulations applicable.
The unit must be tested to electrical safety (and gas safety if applicable) and manufacturer speci-
cations aer every repair or maintenance work.
Isolate the appliance from mains supply before opening the appliance
When working with chemicals, i.e. agressive cleaning materials always wear protective clothing,
goggles and gloves!
Please observe the information of the material safety data sheets!
Aer maintenance / repair the appliance must be checked for electrical
safety in accordance with your national, state and local requirements!
Whenever working on any gas component like:
Gas valve, gas blower and / or changing connected type of gas a detailed ue gas analysis MUST
be done using adequate CO and CO2 measuring equipment!
This shall ONLY be done by trained technicians!
Always check appliance for possible gas leakages!

The unit will only function properly, when all components are designed correctly and the installation is done ac-
cording to the manufacturers instructions.
Therefore during maintenance and troubleshooting it is mandatory to observe all components together with the
connected services such as electricity, water etc. and the kitchen surrounding including venting.
Every deviation from the installation manual can cause dierent errors and/or issues.

Installation
50% of all units are installed by non-trained technicians. This makes the commissioning of the unit by the RSP
even more important.
Responsibilities
Designer / Architect
Make sure that during construction all dimensions needed are correct and sucient
(Doors, corridors, clearances etc)
Make sure that all services (energy, water, drain and exhaust air) are available in
immediate vicinity of the unit

Gas connection (type of gas, dimension of supply pipe)
Vent hood (possible interconnection with gas supply)
Exhaust air for gas units (exhaust hood, ventilation ceiling, chimney, spacing between top edge of unit to lower

For correct operation of water sensing

Electrical connection has to be done according to the local rules and regulations.
All electric units 61 – 202 are shipped without electrical cable. XS 60 are shipped with with cable and angled plug: 1ph
208 and 1ph 240: 6-50P, 3ph 208 and 3ph 240: 15-30P
All gas units 61 – 202 are equipped with a power supply cable (14AWG) 120v 61,101, 201 5-15P, 208v ALL 6-15P
Should you need to change this cable, an oil resistant, coated, exible cable must be used. The wire gauge must be
selected according to the the cable lenght and the power rating table below.

via 1/4" spade connectors to the integrated noise filter.

6.6 Voltage Conversion
208/240V units All electric units and 62/102/202 gas units are set to 208V from factory. They can be converted to 240V.
To convert from 208V to 240V proceed as follows: > Disconnect unit from mains
> Remove left side panel and open operator control panel.
> Set power switch S13 to desired voltage (208 or 240V)
> On Electric units the control transformer T1 change connection to the desired voltage input (208v or 240v)
> In the starter kit of the unit there is a sticker which has to be filled in after voltage conversion. After filling it in put
the sticker next to the name plate.

440/480 V units Units are set to 480V ex works, but can be converted to 440V.
To convert from 480V to 440V proceed as follows:
> Disconnect unit from mains
> Remove left side panel and open operator
> Remove adapter cable W22 from input transformer T3 and plug X72
> Connect plug X72 to transformer T3.
> Set power input switch S13 to 440 V

Drain - Installation done correctly
•Drain connection must be done using a 50mm
(2“) steam temperature (1 1/2" XS60)
resistant pipe.
•Reducing the diameter is not allowed.
•Flexible hoses shall not be used as they can
buckle and bend.
The average waste water temperature is
65°C(149°F).
Water / Drain connection kits (water hose and set of drain pipes etc. are available)
Direct Drain is typically not
allowed in NA building codes,
consult local authorities.
