Induction 30" and 36" Wide Cooktops

The first Viking range introduced professional
performance to the home. Now, after nearly 20 years
of innovation, Viking redefines the way we cook
again – with induction cooktops.
Instead of gas or traditional electric elements,
induction cooking utilizes magnetic energy. Induction
power generators create a magnetic field, which reacts
with the ferrous material in the base of the cookware –
instantly transforming the pot or pan into the heat source.
The energy transfer stops just as quickly when the
cookware is removed – leaving the cooktop surface
cool to the touch almost immediately.
But old habits die hard, especially in the kitchen. So
Viking induction cooktops are available in all-induction
models or as induction/radiant combination units
featuring high-performance MagneQuick™
induction
power generators, as well as QuickCook™
electric elements.
Professional performance. PhD power.
Viking MagneQuick induction power generators are
controlled with the same technology used in commercial
induction equipment – ensuring maximum efficiency,
performance, and reliability. The induction cooktop’s
high-tech performance allows for an infinite number
of settings between a 100-watt simmer and 3,300-
watt boil – and the power to back it up.
And all that power goes directly into your cooking.
Any energy generated by the cooking element that
doesn’t enter the pan is wasted. And with nowhere
else to go, this radiant energy heats up the kitchen.
But with induction cooking, almost all the energy is
transferred directly into the cookware. No cooking
time or energy is wasted. This earns induction a
90%+ efficiency rating – more efficient than typical
gas or electric elements.
Due to the nature of gas and electric cooking,
cookware should match the size of the burner or
element. Because of the efficiency of induction
cooking, size is not an issue. Only the area in contact
with the cookware generates heat.
Highly compatible with cookware.
And washcloths.
Although not all cookware will work on induction,
most of today’s high-end cookware is
compatible. And of course, all Viking cookware is
designed to perform with induction, electric, and gas
cooking units. Stainless steel, enamel, and cast iron are
usually induction-friendly, while copper, glass, and
aluminum are not. An easy way to test induction
compatibility is to place a magnet on the bottom of
your pan – if it sticks, you’re cooking.
Induction is the most efficient way
to cook. By instantly transferring
energy directly into the cookware,
virtually no radiant energy is wasted.
Viking induction cooktops not only keep your kitchen cool,
they keep it clean. The induction power generators are
located beneath a continuous ceramic glass surface. So
there are no nooks &crannies for food to spill into. And since
it’s the cookware instead of the cooktop generating
heat, spills don’t get baked onto the glass. You may
never need more than a damp cloth to clean up.
With Viking induction cooking, you’ll never have to
wonder if you left the cooktop on. Not only does
induction heat stop as soon as the pan is removed,
the “no contact” feature automatically turns the
power generators off if the pan is not replaced within
two minutes. Likewise, cookware resting on the cooktop
won’t heat up until you turn the power on.
