1. Warning
IMPORTANT
Read this instruction manual before switching the bread slicer on.
STARTING UP INSTRUCTIONS
This device must be earthed for protection against the hazard of electrical discharges and connected directly to
the earth terminal. Do not cut the earth cable or remove it from the equipment.
NOISE LEVEL
The sound pressure level emitted by the cutters is 75 dB.
In order to carry out any mechanical, electrical or cleaning intervention, disconnect the equipment from the
POWER SUPPLY GRID.
It is absolutely forbidden to introduce any OBJECT or TOOL in the machine whilst in operation.
Remove the packaging from the machine and check that it is in a perfect state. The packaging elements (wooden
frame, nails, staples and bubble wrap) are potentially hazardous and should not be left within the reach of
children.
Don’ dismantle, manipulate or block any safety element of the machine.
Keep this instruction manual in a safe and accessible place.
This machine has been designed for use by authorized adults. Please therefore ensure that children do not touch
it or use it as a toy.
It is dangerous to modify or attempt to modify the specifications of this machine.
The cleaning of the machine with any cleaning or abrasive product is forbidden.
After having installed this machine, please ensure that it is not standing on the power cable.
Use all blades with precaution to prevent deterioration and avoid risks to the operator. Never operate the
machine if the safety elements have been removed.
The manufacturer reserves the right to modify the measurements and characteristics without prior notice.
The manufacturer is not liable for defects resulting from:
•Improper, erroneous or irrational use of the machine.
•Use contrary to current national legislation.
•Incorrect installation of the machine.
•Absence of due maintenance.
•Unauthorized modification or intervention.
•Use of non-original or inappropriate spare parts or products for the model.
•Failure to follow the instructions.
•At the moment the machine is received, check the integrity of all the packaging and the perfect state of the
machine.
•If in doubt, check with qualified staff.

2. Preventive safety measures
External lighting
The level of lighting required for the type of work carried out on this machine is 250-300 lux. Glare towards the
operator must be avoided.
User Training
The user of the machine must receive a training session (minimum 1 hour) on the operation, risks, possible faults,
daily cleaning and maintenance, etc.
Ergonomics
The operator should avoid handling heavy loads due to risk of musculoskeletal disorders. The use of auxiliary
lifting equipment is recommended.
The power plug must be accessible and visible from any point from which there is access.
Water-tightness of the electrical panel. The electrical panel has a protection level that does not withstand liquid
jets or steam.
Safety devices
It is strictly forbidden to manipulate or override the machine’s safety devices.
GENERAL
• All transmission mechanisms are covered with screwed fixed guards.
Earthing: This appliance must be earthed for protection against electrical shock hazard. Under no circumstances
should the earth wires be cut or disconnected from the machine.
Mandatory maintenance: Strictly follow the maintenance tasks indicated in this manual. Spare parts must meet
the requirements defined by the manufacturer. Only use original spare parts
2.1 Personel Protective Equipment (PPE)
Directive 89/686/EEC establishes the requirements to be met by PPE.

2.2 Residual Risks
Risk of fire
It is recommended to have a CO2 extinguisher in the vicinity of the machine for use on incipient electrical fire.
Properly maintain electrical equipment, providing protection systems against overcurrent and overvoltage. Avoid
overloading sockets.
Risk of explosion
Do not place equipment close to heat or exceed the maximum operating temperature specified by the
manufacturer. The refrigeration equipment contains pressurized gas and there is a risk of explosion in the event
of overheating.
Risk of flour inhalation
Flour can be a hazard for those working with it. The source of danger is the fact that these people often breathe
in the flour dust suspended in the air, which can lead to the disease known as “baker’s asthma” as well as other
allergic illnesses. During the different operations, the production of flour dust should be avoided. In some cases
it may be necessary for the temporary use of personal protective breathing equipment. Also consult the product
safety sheet.
3. Handling and Transportation
•Your machine has been delivered to you in a way that is packaged on a pallet. The transport of the machine
must be done as shown in thepicture above, another way of transport can cause damages on your machine.
•While the goods are transported, it shouldn’t be left suspended (hang in the air) and transport should be
done with suitable equipment.
•Sizes and weights of the machines are given in the Technical Specifications section.
•Blanks, holes, arms and parts located on the machines should not be used for transport. Transport way
except for the schema can cause damages to machine.
•To prevent any work accidents while transporting the machine, strictly obey the rules of Occupational Health
and Safety. Do not move it without taking necessary security precautions.
•Responsible staff in transport has to use safety equipment such as hard hat (helmet), gloves, steel toe shoes.
•By considering weight of the machine, appropriate equipment must be used for the transport. Before
moving, the weight of the machine, external dimensions, lifting points and center of gravity must be carefully
checked.
•Before moving machinery, the dimensions of the door or partition should be checked whether it is
appropriate.
•Operations such as acceleration and braking while lifting and handling the machine must not be done in a
manner harmful to employees.
•Machine should not be lifted and moved except for the above schema.
•Check the packaging and the product if it is damaged during shipping. If there have been any damage during
transport, report to shipping company, insurance company and Combisteel BV.
•Certainly take photo from different angles of the damaged machine. It is necessary for the authority to define
problem.
•Take out by checking packaged machine and if there is related equipment. Check the bill of consignment if
the materials are sent full. Please inform Combisteel for any missing material.
•Packaging must be opened by authorized qualified personnel who knows the product.
•Never put a load on the machine.

4.2 Electrical Connection
This should be carried out by authorized professionals according to regulations in the country in question.
The appropriate circuit breaker for total amperage should be installed at the same time as the premises’ electrical
installation. The appliance should also have a plug fitted.
4.2.1 Single Phase Connection
Single phase bread slicer requires one phase + ground + neutral.
The sections of the cables according to the norm EN 60204-1 should be as follows:

4.2.2 Precautions
All operations which require access to parts with tension must be carried out by qualified staff, in keeping with
the following procedure.
Turn off the machine.
•Remove the current using the main switch.
•Remove the current supply plug.
•Carry out the maintenance or repair work.
•Reconnect the machine to the current.
•Always disconnect the mains supply before cleaning the machine inside/outside and when carrying out
maintenance.

5. Operating Functions
In order to operate the machine, follow these instructions:
1. Release the Emergency Stop Button
2. Push the Start Button.
3. Pull the lever. The blades will start to move.
4. Place the bread on the rear feeder, between the blades and the moving part.
5. Slowly release the lever.
6. The machine stops automatically when the bread is cut.
NOTE: Press the emergency stop button to stop the machine while in operation.
IMPORTANT NOTE: Leave the machine on during the day. At the end of the day, press the red STOP button to
switch the machine off.
6. Danger
If the user or the machine is in danger, you must use the main isolator switch to cut the power supply to the
machine.
Remove the plug from the power socket before any maintenance and/or servicing work.
Do not touch the blade, even if it is stationary.
To replace the blade, have the work done by your approved dealer.
Always wear cut-resistant gloves when replacing blades or when working in the vicinity of the blade.
Any maintenance work or replacement of parts must be carried out by a qualified individual.

7. Maintenance
FOR YOUR SAFETY: Disconnect the equipment from the power supply in order to carry out cleaning or repair
operations.
IMPORTANT: All repair work must be carried out by the Official Technical Service of Combisteel BV or by another
party duly authorized by the supplier.
In operations which require the removal of a fixed or mobile protection element, DO NOT START UP THE
MACHINE UNTIL ALL THE PROTECTION ELEMENTS HAVE BEEN PROPERLY REPOSITIONED.
DAILY MANTENANCE:
1.- Check whether the breadcrumb tray needs to be emptied.
2.- For external cleaning, use a damp cloth.
EVERY 20.000 TO 30.000 SLICES:
Brush away the crumbs present in the machine.
Have your bread slicer serviced by an approved agent:
1.- Replace the blades.
2.- Clean with a brush and vacuum inside the machine.
3.- Check the condition of the roller bearings, then lubricate them.
4.- Lubricate the sidebars.
5.- Lubricate the jack’s joints.
Additional maintenance for models with a lubrication system.
EVERY 1.000 SLICES OR EVERY 15 DAYS:
1.- Add the dose of cooking oil (150 ml) needed to soak the pusher felts
EVERY 20.000 TO 30.000 SLICES:
Have your bread slicer serviced by an approved agent:
1.- Replace the push rod felts.
7.1 Cleaning
7.1.1 Daily, by a trained operator
A. Check whether you need to empty the crumb tray.
B. Clean the tables using a brush.
C. Use a dry cloth to clean the inside.
D. Use a damp cloth to clean the outside.
7.1.2 Every 25.000 loaves and/or at least once a year, by an approved agent
A. Remove the plug from the socket.
B. Check the condition of the cutting blades.
C. If you notice a deterioration in cutting quality, the cutting blades must be replaced.
D. If the blades need to be replaced, do so in accordance with the blade replacement procedure.
NB: Do not overtighten the blades, as this risks distorting the frames.
E. Sweep and vacuum the inside of the machine.
F. Check bearing condition, then lubricate them.
G. Lubricate the actuator joints.

8. Solution Table for possible errors
BREAKDOWN REASON SOLUTION
Machine doesn’t work.
There is not energy in the machine. Check the supply voltage.

Blades are deformed. Change blades

Adjust pressing plate according to
height of the bread.
9. Caution
In the event of danger to the user or the machine, you must use the STOP button. Before any operation on the
machine, remove the plug from the socket or turn off the switch at the connection point.
There may be certain risks:
•The blades are very sharp and may cause serious cuts even if the machine is idle.
•The replacement of the blades must be done by an approved agent only.
•All the blades must be present to avoid fingers getting caught in the mechanism when removing bread.
•After a few days of operations, get a qualified professional to control the tension of the blades by a qualified
person.
•Earthing is imperative.
