The dough thickness is the result of the pizza dough
volume anf the pressure applied in the lever while
operang the machine.
Remove the Tray Nº 03 (Picture 04).
Spread a small quanty of our on the Tray.
Then, posion the pizza dough volume to the center of the
Tray.

Replace the Tray with the pizza dough on the Shaping Base.
Aer that, with a smooth and counnuous movement,
pull the Lever Nº 02 (Picture 04) down and to the front
part of the equipment, making the puzza dough volume be
conduted against the Cone Rolls.
Keep the Lever triggered and pressed down, making a
major presure to the Lever on the last seconds. It’s beer
to use both hands to perform the procedure unl the pizza
dough reaches the desired diameter anf thickness.
Aer reaching the desired diameter and thickness, turn the
Lever to inicial posion.
Remove the Tray Nº 03 (Picture 04) e rere a massa de
pizza.
Repeat the procedure above to connue using the
equipment.
Aer nishing the work, turn o the equipment pressing
and releasing the OFF Switch Buon Nº 04 (Picture 04).
5. CLEANING
The equipment must be completely clean and sanized:
- Before using it for the rst me;
- Aer the operaon of every day;
- When it hasn’t been used for a long me;
- Before using it aer a long period of inacvity.
Some parts of the equipment can me removed for the
cleaning:
- Tray N° 06 (Fig.01)
- Proteção Frontal N° 04 (Fig. 01)
Lave todas as partes com água e sabão neutro.
To clean the equipment follow the instrucons bellow:
- Unplug the machine from socket.
- Remova a Proteção Frontal.
- Remove the Tray Nº 06 (Fig. 01).
- Faça todo o procedimento de limpeza.
- Normally the place with more concentraon of residues is
the Tray and the Shaping Base.
- The Tray can be removed and washed individually, using
a cloth or sponge with a lile of water and neutral soap.
- It is not possible to remove the Shaping Base for cleaning.
Clean the top of the Shaping Base with a wet cloth and a
small amount of neutral detergent and dry it. To facilitate
the access to this component, use the Lever to li it and
beer access the lower part of the Shaping Base.
- Puxe a Alavanca Nº1 (Fig. 01) para frente do equipamento,
essa ação manterá a Base Modeladora afastada da estru-
tura do equipamento, facilitando o acesso para a limpeza.
Para acessar os Rôlos Cônicos, deixe a Base Modeladora
totalmente abaixada.
- Nesta posição você poderá acessar os Rolos Cônicos locali-
zados no interior do equipamento, através do mesmo locall
de passagem, onde a massa de pizza é conduzida para ser
processada, ou através da abertura exposta pela remoção
da Proteção Frontal.
- Caso ocorra o ressecamento de resíduo de massa nos Ro-
los Cônicos ou em qualquer outro componente do equipa-
mento, proceda conforme a sugestão de limpeza abaixo:
- Umedeça um pano macio ou esponja com água e deter-
gente neutro e passe sobre a área com resíduo de massa
ressecada.
- Aguarde por alguns segundos e em seguida com o auxílio
de uma espátula de material plásco remova o resíduo de
massa.
- Em seguida repita o procedimento de limpeza ulizando
um pano macio ou esponja levemente umedecida com
água e detergente neutro para eliminar toda a sujeira exis-
tente.
- Finalize o procedimento de limpeza ulizando um pano

6. MAINTENANCE
Maintenance must be considered a set of procedures
with the purpose to keep the equipment best operang
condions, therefore increasing the equipment life and
safety.
* Cleaning – Check the item 5 CLEANING.
* Wiring - Check all wires regarding deteriorate condions
as well as all electric contacts (terminals) regarding
ghtening and corrosion.
* Contacts – ON/OFF switch, emergency buon, reset
buon, electronic circuits etc, check the equipment in
order to assure that all components are correctly working
and the equipment operaon is normal.
* Installaon – make sure the installaon followed item 2.1
instrucons.
1 - Each month check:
- Check the electrical installaon
- Measure the voltage at the socket
- Measure the working current and match it with the
nominal current
- Check the ghtening of all electric terminals to avoid bad
contacts
- Check electric motor sha clearance
- Check the wiring for overeang, insulaon failures and
